Strawberry Phirni

Sorry all for my absence from blogging for 2 weeks as I was busy with some personal work.I am back now with a very popular North Indian dessert called Phirni. Phirni is also known as rice pudding. Phirni can be made according to one’s taste. I have made so many dishes out of strawberries, so when my friend bought some, I thought of making phirni out of it.I usually make phirni, as it is easy to make. I thought of adding some strawberries for a unique taste. The red luscious pieces of strawberries is a feast to the eyes. My mom used to make this, refrigerated and used to serve this when we came back from school. So when I am here for vacations I thought of making this by adding some strawberries and my mom loved this new twist. This is a very popular evening snack. My Mom used to make this often when I was a kid as this is so delicious and healthy. This won’t take much time to make. This can be done within minutes and is very nutritious for kids. These spring rolls can also be made with non veg. I have this whenever I go to a chinese restaurant, but nothing tastes better that what we make at home. This is a perfect starter to serve in parties. The filling inside can be made to our taste. We can add any vegetable as per the availability. After stuffing it with the filling, roll tightly and fry in a medium heat so that it frys well inside. I love prawns in any form, like in pickle, prawns masala, prawns roast and in umpteen other preparations. Prawns biryani is the latest addition to the endless list of my prawns recipes. If you are a seafood lover, I bet you will love this. I had never made prawns biryani before till my SIL told me that she makes this often and is simple yet tasty. I thought of giving it a try and made this with the help of my SIL and other online tips. This is a super yummy and delicious one pot meal which can be made on all occasions. This biryani actually takes less time to cook than other biryanis. I made this in a pressure cooker as I had some guests at home and time was less. The temperature is soaring in Bangalore and in this hot and dry weather, I thought a juice recipe would be an ideal post. This is a perfect thirst quencher which flushes out the toxins from our body. I have been thinking of buying a watermelon since quite a few days since I like eating it at leisure and I also like the juice. After a long wait, I finally  bought a watermelon and ate almost half of it within 2 days :-) Then I thought of making juice with whatever was remaining. While making the juice, I added mint leaves to the watermelon pieces to get a mint flavor in the juice. Juices in one way keeps your body hydrated and they provide fluids as well as all the nutrients of the fruits. Here I have added mint. We can also add ginger, lime and so on. I have removed the seeds from watermelon, so there is no need of straining. Spring is at its best and even though the weather is hot, I am loving this climate as every morning you feel some new energy within. The streets are covered with carpet of flowers which is a feast to the eyes. I wake up to the pink, white, lavender and many more different colourful flowers which can be seen through my bedroom window. In this mood I wanted to make something fresh and in the morning I baked some cupcakes with blueberries and they tasted amazing that I again made another batch because I know that these will get finished within seconds. If you remember, I had used the pureed blueberries in my blueberry cheesecake and half of the bottle was lying idle in my fridge and whenever I see that I used to have a spoonful :) So instead of finishing all those blueberries, I decided to use those in cupcakes and these cute little cupcakes happened one day. My dear friend once told me about an easy dish, which can be made within minutes and which is very tasty and delicious. It is a daily struggle in my house about what to cook for lunch and dinner. I ask my Husband and he is like what ever you make I will eat. Some days i even call my mom and my MIL to suggest some dishes. . :) It is very difficult for me to decide, so one day when my friend called me she told me about this simple yet tasty dish. But as brinjal is a big NO to my Husband (he is a bit choosy about veggies) it was not there in my house. The next time I remembered to buy eggplant when I bought veggies, so that I could try this amazing dish and you can see the result. Strawberry Ice Cream

Strawberries are delicious, low in calories and very high in vitamin C. These are also a good source of folate and potassium. These are low in calories and high in fibre. Most of us love strawberries and in my house this is a regular fruit which we buy often. My kid loves this. A handful of strawberries were lying down in my refrigerator hidden from my little one.:). I had made everything out of it like the milk shake, smoothie and so on. So at last I thought of trying out my hand in making ice cream as this is one of my favorite flavors. As I have already made custard apple ice cream before, I was confident of making this too. So I started  with mixing cream , milk and so on. Chocolate Cheesecake ... just for chocoholics...

It gives us immense pleasure and excitement to bake a cake for our dear ones on special occasions. Yesterday was my Husband's birthday and I baked this chocolaty cheese cake the day before and made him to cut the cake at midnight. This cake was a total surprise for him as he didn't expect this cake from me, as I was really busy on that day (or I made him believe that :)). He didn't get any smell of the baked cake and luckily he never opened our fridge that day, so I was really lucky to maintain the surprise. This, I tasted when I went to my bro's house and the taste was to die for. Then when I asked for the recipe, he sent me the link. In the original recipe the measurements are too high, I reduced them to my level and made this cake. Soya chunks Pulao

Soya chunks or “meal maker” is my latest fascination. I love them in all my curries, cutlets, rice and the list will go on. As soya chunks are a great source of protiens and vitamin B12, I make it a point to buy these and store, so that I can use any time I want and I mostly include this in my little one’s food. She loves them a lot. I made this Pulao for lunch on a weekend so that I dont have to spend much time in kitchen :) and also a pulao can also make a complete meal by itself. I make this often with different combinations of veggies. Soya is very healthy and low in fat and has a high protein content, which promotes growth. This can be made easily without any effort. I made this in a pressure cooker as this will take less time to prepare. Only thing to note with cooking rice in a cooker is that we should know the  correct time limit and measurement for the rice to become fluffy and still not stick to each other. From childhood, I loved to eat corn in any form. Even now when ever I see a road side corn wallah, I will make sure I buy the roasted corn and eat it all on my own without sharing even with my daughter :-) Now there are so many sweet corn stalls in every corner and there are so many varieties of corn dishes we get. Also, the use of sweet corn has been on the rise in the various cuisines.  This chat is one such recipe, which we ate when we went to a restaurant called Jarokha. This was served as a starter and as soon as I saw the corn I just couldn't stop myself. Even my husband, who is not a big fan of corn, loved this and asked me to try this at home.
