crispy chocolate toffee oatmeal cookiesi feel fortunate to be a food blogger. there are so many great food bloggers and because of social media i have gotten the opportunity to get to know many of them. one of my favorite people i have gotten to know is Maria from Two Peas and their Pod. she incredibly sweet and always fun to chat with on twitter AND that girl knows how to create an awesome cookie recipe. a while back she posted crispy chocolate oatmeal cookies. i had to make them immediately.i love the idea of using rice krispies in a cookie. i have adapted the recipe a bit by adding toffee and cinnamon but i think the rice krispies are what make them special. the cookie itself is crisp but the middle is still chewy. the toffee melts the perfect amount to be chewy but still hold that toff...

the baked brownie with cream cheese swirlchocolate desserts tend to take a back seat in my kitchen. i like chocolate but it is not the kind of dessert i crave. i crave baked fruit desserts like apple pear and raspberry crumble or spicy pumpkin desserts like pumpkin oatmeal cookies or citrus desserts like grapefruit yogurt cake.i have made my fair share of chocolate desserts ...caramel peanut topped brownie cakebrownie roll-out cookiesmolten chocolate cakes with raspberry coulischocolate raspberry layer cake with chocolate ganache frostingmalted guinness milk chocolate ice cream with whopperssweet & salty cake... and i am always impressed with how delicious they are but i forget to give that chocolate section of my recipe binder a look.but every now and then a chocolate craving hits me ...

my life - more specifically my online life - feels like it has been "offline" since the beginning of may. my main computer decided to take a hiatus on me and it has been at the repair shop since the first week of may. is it just me or are you crazy dependent on your computer? i mean my entire life exists on it - my work - my hobbies - everything. yea i have another computer but it is not the one i use on a regular basis. it is not set up correctly to easily allow me to get my work done, access my files and edit photos. i could go on and on about all the things it is not. i just want my darn computer back. a couple things i have learned from this experience -1. if you do have two computers, make sure that the secondary one really is a carbon copy of your main computer. it might be more work...

there are not many things that alex loves more than ice cream. another thing on his favorites list is guinness. when i saw david's recipe for the guinness milk chocolate ice cream i thought he would love it. when i told him about it he scrunched up his face and said "chocolate? i don't know about that." i told him he was going to have to deal with it.alex is not a chocolate guy but over the years he has come to enjoy it when i add something to it, like espresso. so in order to make the whole chocolate issue more palatable for him, i added espresso & malt powder to trick him into liking it. he also likes "stuff" in his ice cream so i thought to add whoppers into the mix.i am sure this recipe is fantastic without my additions but if you are a fan of malts, guinness, chocolate & whopp...

it has felt like my life is out of control busy the last couple weeks. who am i kidding - it has felt like that for awhile. there are many projects for work to complete, battling computer meltdown, staying on top of project 365 for picky photo, posting recipes and housework. what is it with laundry? as soon as i feel like i am caught up it seems to have multiplied. i just want a vacation - or at least a day or two off. oh - i almost forgot - i also launched an etsy store last week for my photography after getting a couple requests to buy some of my photos. if you get a minute, i would love you to check it out and let me know what you think. i used to think of myself as one of the most organized and planned people i knew. i don't know if it is going to business ...

this last week has been a roller coaster ride....last weekend, we got some amazing news that a project we had been working on getting (for our company Loud Click) decided to go with us. i cannot tell you how wonderful that news was to receive. we will be inking the deal in early april (fingers crossed).(this was my project 365 photo for the day after getting the good news)literally minutes after getting that wonderful news, i went to boot up my computer and all hell broke loose. it wouldn't load any programs and it felt as though i was running a 10 year old computer. i frantically began backing up all my data on to an external hard drive. because the computer was basically non-responsive, that backup took about 4 days. i am not exaggerating. i finally got all the data and took the computer...

soft polenta with grilled vegetablesi love simple summer dinners. it is the best part of the summer - fire up the grill and throw some vegetables on and voila you have dinner.i also love adding a simple grain or pasta to the dish to make it feel complete. i often serve some grilled vegetables with a spaghettini tossed with lemon juice and herbs but polenta my favorite.these grilled vegetables are flavored by a few simple ingredients - grill seasoning, lemon juice and olive oil. i also grill some lemon wedges to squeeze over the top of the dish. if you have never grilled a lemon - do so right now. the juices develop & the smoky flavor from the grill is amazing. the polenta is soft & creamy and flavored with garlic and shallots. i add a bit of cream and butter to the end to give it a...

the last couple weeks have been so busy i can't believe it has been almost a week and a half since i last posted. is there someone out there that can get me at least 8 more hours in a day? anyone? yea that is what i figured.owning your own business is great - you can go to work in your pajamas, you don't have to pack a lunch and countless other things i love. the only hard part for me is being done with my day. there just doesn't seem to be a finite end to the day. there is always more work to do. by the time i have a moment to think about posting - all i want to do is go to bed. enough complaining ... these cookies were a highlight of the last couple weeks. i made them twice this month. yes - twice - and i am not ashamed to admit that. they are amazing - quite possibly the greatest and mo...
