Well, it has been a while hasn't it. The thing with juggling so many balls - family, work, study, exercise - is that something somewhere at sometime has to give. For a while there it has been cooking! Cooking good food is something that I take a lot of pride in. I see no sense in pulling a box of something far removed from its original life form out of the freezer and heating it until the lard melts enough for it to become palatable. What's the point of that? We should eat to live, not live to eat, and if it's not going to be good, healthy, nutritious REAL food, why would we want that in our bodies?So, I've struggled a bit with time and to be honest, I've been cooking food that has been hardly photogenic or worth reporting. I made this a few nights ago and *slaps wrists* didn't get back to blog about it. What can I say? It was soooo yum!BEEF STEAK ROLLSServes 42 large topside steakEnglish Spinach leavesFetta CheeseSalt, Pepper, Herbs - whatever you've got handy.Bash the life out of the steak to make it nice and thin.Lay it out and cover with the spinach leaves. Sprinkle over the seasoning - as much or as little as you like. I also toasted some pine nuts and sprinkled them over. I'm blogging it because I think its an awesome idea - even though I haven't even tried it myself yet. Was a bit of a bust to be honest. Why? Well, I wasn't very well prepared, and I think that's the key. #1 had a friend over to play the last couple of days, and #2's friend arrived early this morning and will be here until tomorrow night. Food supplies were seriously lacking - I haven't done my weekly shop, so I made a rushed trip to the supermarket this morning. While the girls were excited to be in each others company again - it had been a week since they last saw each other - their excitement was a bit too much for the general public. Consequently, my shopping trip was a bit of a smash and grap and I escaped with chocolate, finger buns, fruit, a BBQ chicken, potatoes, shampoo and a bag of rocket that was reduced to clear. Just reflecting on my day today and I'm realising more and more that I have some WONDERFUL friends in my life. The kids are on school holidays at the moment and for the last week and a half, as you may have noticed, we've had a house full of THEIR friends. Mon/Tues last week #1 had friend "B" over, Wed was friend-free, Thurs/Fri #2 had friend "J" over, then Fri/Sat/Sun #2 had friend "L" over. Yes, that was a long visit! Then, Mon/Tues/Wed this week, #1 had friend "J" over (another "J"), then Wed/Thur #2 went to "J's" place. Phew. Now, Thurs/Fri, #2 has her friend "J" over again. Follow me?So, where do my friends fit in? My 2 closest, most lovely friends are the mothers of friend "L" and friend "J". Friend "L" also has a brother who has been close friends with #1 for the last 3 years...

Ah the joys of blogging. I thought I might experiment with a few different layouts and things. Uh-Oh. I've made a right mess of things, and have lost so much of my hard work! Obviously I'm still a bit of a newbie at this and will have to work out what I've done wrong. I did save the template, but when I reverted back to it, I've lost all my links.Here we go again.I'd rather be in the kitchen :)...

You know the ones you buy from the bakery that are gooey and sweet and go peeerrrfectly with a hot drink on a cold day. THESE hit the spot! Our local bakery charges about $4 each for these. Ouch. This whole batch wouldn't have cost more than that. I made these on the weekend for something to do. Kids were outside playing with friends, DH was working - yup, on the weekend - and I should have been cleaning the house. Anyhoo...If I'd rather be doing anything, it's cooking, so that's where I found myself.What I love about this recipe is that it looks and tastes so heavenly, yet it's made completely out of staples that you would have handy. This morning started with a healthy breakfast and an attempt at going for a jog. #2 had yet another friend spend the night with us last night (no wonder I have no social life!!) and they decided they wanted to tag along on their scooters. So, my jog ended up being a walk. Which was ok, because it gave me a chance to chat with the girls and enjoy the beautiful morning sun.My usual breakfast: Diet Yoghurt, Banana and a teaspoon of psyllium husks for extra fibre.We made our way down to a large park nearby and decided the weather was perfect for a picnic. So, we headed straight back home to get ourselves organised. I'm excited about tonight. These are the types of meals I REALLY enjoy. I was on the phone this morning to a friend who was trying to tee something up with our #1's for them to do today. We both had a few things on today that clashed with timing, so she said she'd come over here at about 4 to pick up #1 and he could have a sleep over at their place tonight. As I said in my last post, #2 has a friend here today and her mum, a mutual friend of my other friend, is due about that time to pick her up. Did that even make sense? Hmm...to clarify; we're all friends, and we're all going to be here at 4pm on a Friday afternoon. You do the math.Drinks at my place at 4pm today!!! Last week I was walking through the meat section of our supermarket and noticed pork and veal mince on sale. I immediately thought Asian wontons! Knowing I was too busy to do anything with it then, I put the mince in the freezer until I had some time to come back to it.Yesterday, I was ready to get into it, but couldn't find a recipe that worked for me. They were either deep fried, or cooked in a soup. After having such a decadent week, frying wasn't an option, and I really didn't have enough complimentary ingredients to make the soup. So, I improvised and made the wontons into tortellini shaped dumplings and boiled them in chicken stock. Served with a vegie stir fry and a drizzle of soy sauce, they were DIVINE.
