Chicken Italian Style
Ingredients for Sauce
Butter 50 gm
Mozzarella cheese 1 packet
Spaghetti ½ packet
Milk 300 ml
Oregano ½ tsp
Thyme ½ tsp
Flour 2 – 3 tbsp
Ingredients for Cooking
Broccoli 1 flower
Onion chopped 1
Chicken breast (sliced) 2
Parsley ¼ bunch
Cream cheese ½ cup
Garlic chopped 2 – 3 cloves
Black pepper powder ½ tsp
Oil 2 tbsp
Salt to taste
Method
Preheat the oven to 190 degrees.Heat 2 tbsp oil in a pan, add 2 – 3 cloves of chopped garlic and 1 chopped onion. Fry well till onion is tender.Add in sliced chicken and fry for 3 – 4 minutes, when the chicken is
tender add ½ cup cream cheese, ¼ bunch of chopped parsley, salt to
taste and ½ tsp black pepper powder.
Boil 1 flower of broccoli for 1 – 2 minutes. Now remove from boiling water and add to the cold water. Keep aside.Heat 50 gm butter in a pan, add 2 – 3 tbsp flour and fry for 1 – 2 minutes.Remove from fire, keep aside to cool for few minutes, then add 300 ml mil...

Fish Penne Pasta with Cheese
Ingredients
Penne pasta ½ packet
Fish fillet 300 gm
Capsicum 1
Mozzarella cheese 1 packet
Garlic chopped 3 cloves
Parsley chopped ¼ bunch
Fresh cream ¼ cup
Black pepper powder ½ tsp
Oil 3 tbsp
Salt to taste
Method
Cut 300 gm fish fillets into small cubes, boil ½ packet of penne pasta and keep aside.Heat 3 tbsp oil in a wok, add 3 cloves of chopped garlic and fry well till golden brown.Now add fish cubes and fry till its color is changed.Add ¼ bunch of chopped parsley, 1 chopped capsicum, salt to taste, ½
tsp black pepper powder and boiled penne pasta. Mix well.
Lastly add 1 packet of grated mozzarella cheese. Mix well for 1 – 2 minutes. Remove in a serving dish and serve hot.

Sesame almond biscuit
Ingredients
White butter 90 gm
Egg 1
Crushed almonds 60 gm
Flour 110 g
Sugar 150 g
Tahina sauce 1 tbsp
Orange skin ½ tsp
Oil 2 tbsp
Method
Mix together 90 gm white butter and ½ tsp orange rind. Also add 1 tsp tahina sauce and 1 egg.Now add 110 gm flour and 60 gm round almonds. Mix well and knead to soft dough.Now put the dough in a bowl. Cover with a plastic and refrigerate for 10 – 15 minutes.
Remove from refrigerator. Make small balls. Put each ball in a greased
oven proof tray. Sprinkle a little sesame seeds on each biscuit. Press
each biscuit with your thumb.
Bake in a preheated oven of 180 degrees for 10 – 12 minutes till golden brown.Remove from oven, keep aside to cool. Put in a serving plate and serve.

Malaysian fried fish
Ingredients
Fish fillet ½ kg
Finely chopped onions 1
Fresh red chilies 1
Water ½ cup
Oil ¼ cup
Finely chopped garlic 2-3 cloves
Finely chopped ginger 1
Brown sugar 1tsp
Lemon juice 1tbsp
Black pepper powder ¼ tsp
Red chili powder ½ tsp
Flour 2 tbsp
Soya sauce 2 tbsp
Salt as required
Method
Cut ½ kg fish fillets into cubes, marinate with ¼ tsp black pepper
powder and a little salt. Now coat in 2 tbsp flour and shallow fry with a
little oil till golden brown.
Heat the remaining oil in a wok, add 1
medium piece of chopped ginger, 2 – 3 cloves of chopped garlic, 1
chopped onion and 1 fresh red chilies. Fry well till onion tender.
Now add ½ tsp chili powder, 1 tsp brown sugar, 2 tbsp soya sauce, 1 tbsp
lemon juice, salt to taste and ½ cup of water. Fry well on high flame
till sauce thickens.
Now pour the sauce on fried fish and serve.

Chicken wonton soup
Ingredients
Mince chicken 150 gm
Spring onions 1
Egg white 1
Eggs 2
Chinese cabbage half
Chicken stock 2glasses
Flour 1 cup
Soya sauce 1tbsp
Lemon juice 1tbsp
Finely chopped coriander 1tbsp
Crushed white pepper 1/4tsp
Crushed black pepper 1/4tsp
Sesame oil 1/2tsp
Water as required
Salt as required
Method
In a bowl beat 2 eggs, add 1 cup flour, salt to taste and water as required to knead hard.Now roll the dough thinly. Cut into 4 inches squares and keep aside.In chopper put together 150 gm chicken mince, 1 spring onion, a little
salt, ½ tsp black pepper powder, ½ tsp sesame oil and 1 tbsp lemon
juice. Chopperize well.
Put a spoonful of mixture in each dough piece, fold from top to make into a top sealed bag. Seal the wontons using egg white.In a pan put 2 glasses of chicken stock and let cook till comes to a boil.

Boiled and finely chopped tomatoes 1
Fresh red chilies 2
Water 1 cup
Finely chopped garlic 3-4 cloves
Crushed red chilies 1tsp

1Black pepper powder ½ tsp
Soya sauce 2 tbsp
Oil 3-4 tbsp
Salt as required
Method
Heat 3 – 4 tbsp oil in a pan, add 1 sliced onion and fry well till golden brown.Now add ½ kg chicken and fry well till golden brown. Add 3 – 4 cloves of chopped garlic. Fry a little.Now add 2 boiled chopped tomatoes, 2 tbsp soya sauce, 1 tsp crushed
black pepper, salt to taste and 1 cup water. Cover and cook for 10 – 15
minutes.
Remove the lid, add ½ tsp black pepper powder, 2 fresh red chilies and 1 tbsp butter. Fry well for 2 – 3 minutes.Dish it out and serve hot.

Method
Dissolve jelly and gelatin in 1 cup water. Mix in it mayonnaise, cream,
salt, pepper, sugar, all vegetables, fruit cocktail, mix all well. Pour
mixture in a jelly mould. Set for 4 hours till firm. Over turn serve

Ingredients for dough
Self raising flour ½ cup
Salt ½ tsp
Instant yeast 1 tsp
Oil 4 tbsp
Caster sugar 1 tsp

Pizza sauce 4 tbsp
Onion sliced 2 tbsp
Chicken tikka shredded ½ cup
Tomato diced 1
Capsicum diced 2 tbsp
Mushroom 3 sliced
Oregano leaves ½ tsp
Cheese grated ½ cup
Oil 4 tbsp
Method
In a bowl mix together ½ cup self raising flour, ½ tsp salt,1 tsp yeast, 4tbsp oil,1 tsp caster sugar.Knead with Luke warm water until a medium dough is formed. Leave aside and cover for 30 minutes. Now roll the dough into a 9 inch pizza .
Heat 2 tbsp oil in a frying
pan On a low flame heat the dough on one side for 3 minutes , turn
and cook the other side using 2 tbsp oil till it turns light golden in
colour.
Spread the pizza sauce on top of the crust.Top the sauce

Method
Mix all the ingredients Flour 2 cups, Oil 4 tbsp, Instant yeast 1
tsp, Milk powder 1tbsp, Caster sugar 1 tsp, Egg 1, Salt ½ tsp in a bowl.Knead with Luke warm water into a smooth soft dough, leave to rise covered in a greased bowl for 1 hour.

Ingredients for hunter beef
Under cut beef ½ kg
Garlic 6 cloves
Ginger 1 inch piece
Green chili(chopped) 15
Salt 1 ½ tsp
Onion (chopped) 1 small

Black pepper whole 12

Cinnamon 2 sticks
Method for beef
Cut undercut beef into small fillets.In a pan boil the beef, with 2 cups of water, 6 cloves of garlic,
one inch piece ginger, 1 1/2tsp salt, chopped onions , 1 tsp white
cumin, 2 black cardamoms, 12 whole black pepper, 6 cloves and 2 sticks
of cinnamon, till the meat is tender.
Cool, discard all the spices and shred the beef. Heat 3 tbsp oil on a flat pan , add 1 tsp chili powder and ¼ tsp
salt .Add the shredded beef and fry for 3 minutes, remove and cool.
