| House Cleaning, Repairs and Inventory |

Now that I seem to have more time on my hands I've started working on my Inventory system again. I've just added information and reviews of Luxardo Maraschino and El Dorado 5 Year Old Rum to the database. Hopefully I can add a few bottles each week and finish off that project. I've also fixed the Comment issue, so it now only takes a couple of seconds to post a comment instead of 30 seconds. It was a problem with the spam filter, seeing as how the Art of Drink is seriously swamped with spam (a couple hundred a day). Boo. I'm also testing an upgrade to the new Movable Type 4.0 software, so things may go wonky at times, but hopefully not. Other than that thing are running smoothly.

| Frozen Blueberry Daiquiri |

by Caroline O'Neil While Darcy was away at Tales of the Cocktail, I usurped his website and posted a couple of articles. Well, I am back by popular demand since many people suggested that I continue to do a guest blog posting. I figured that some people wanted a bit of a girly flare to Darcy's fine cocktails. Now before you click away into cyberspace, I want to reassure you that this is not going to be all sweet and pink. I know that Darcy has an image to maintain. I have opted to create the Blueberry Daiquiri, which is not too sweet and is very refreshing. This is a bit of a twist on the classic Strawberry Daiquiri that Darcy highlighted. Now I know that my guest blogging privileges will probably be revoked once he realizes that I pulled out the blender and made a slushy Daiquiri. According to him this is an abomination of the Daiquiri but frankly I just didn't care because I needed something to cool down.

| Egg Whites and Cocktails |

Raw eggs are not all the rage these days, unless of course you are a chicken farmer, or an avid fan of cocktails. In many classic cocktails, eggs were an important part of the recipe, providing unmatched texture and mouth feel. Some of the best know cocktails that use eggs are flips, sours and egg nog. Without the egg, these drinks are a mere shell of the original recipe. But bringing back the raw egg, by convincing a bar or restaurant owner that the risk of illness is very small, can be a daunting task. Management will alway state that the risk of someone getting food poisoning, or salmonella, is too high and it is not worth it, simply to make a better cocktail.

| Douce Amere Bitters Recipe |

The night before I departed for New Orleans I was at my parent's place hanging out. I just happened to be sitting beside a bookshelf and when I glanced over I noticed an old book called Recipes and Reminiscences of New Orleans (1971). Well it seemed to be a sign so I open the book and started browsing the recipes inside. One section of the book was dedicated to drinks of New Orleans and within the pages I came across the Douce Amere (Bitter Sweet) bitters recipe. I did a quick search on the Internet and only found references to a perfume, but nothing on this drink. It seemed like something that should be shared.

The idea of breakfast cocktails isn’t particularly popular in modern times, except in certain locals. Where I live, no alcoholic beverage may be served before 11AM, except in a private residence. That pretty much makes it a lunch cocktail, or on weekends, a brunch cocktail. In the past, many drinks were considered early morning eye openers, hell the term “cocktail” was originally described as a drink enjoyed first thing in the morning. Some cocktails are still considered best served with breakfast, such as the Ramos Gin Fizz, Caesar (Bloody Mary), Mimosa and the Brandy Milk Punch.

Well, about Tales of the Cocktail anyway. You can only beat a dead horse for so long before you need to move on. This post will summarize all of the other great things and events that happened while I was in New Orleans. There is a lot to cover, including the Spirited Dinner at the Delachaise, the Rum Tasting, Jeff “Beachbum” Berry’s “Best of Show” presentation on all things Tiki, and the Absinthe session which has peaked my interest in this otherwise forgotten spirit. There were some other things in there as well, such as the VIP dinner, breakfast and the Cocktail Hour. I’ll touch on those briefly, but all the other cocktail bloggers have written about the same thing so I’ll try not to bore you. After this we will return to our regularly scheduled programming.

While at Tales of the Cocktail I participated in the Cocktails and the Blogosphere session. Paul did a great job of rounding things up and doing all the prep work, while the rest of us just blathered on about our blogs. Being bloggers, we are naturally long-winded, and love when people listen to us. Really, blogging is a cry for attention, well that’s what my wife says anyway. I believe that information should be free and opinions matter, so I share what little I know and give you my opinion on all things drink related. But when four people share a stage and only have 75 minutes to divulge everything they know about cocktail blogs, we inevitably ran out of time. So here is a summary of some things we discussed and some things I would have liked to discuss.

Usually it’s my computer that crashes, not me, but yesterday my body ordered me to sleep more. It seems my body can’t do the living on four hours of sleep a night, for a week, anymore. But the resting was good and I did go to work so it wasn’t a complete crash. As I promised, here’s what happened on the Friday in New Orleans. I have returned from New Orleans with so much to write about that it will probably take a few days to cover everything. Also, I’ve used up every energy reserve I have, so I’m sleepy and my mind seems to be having a hard time recalling everything I’ve done in the past five days. That’s what happens when you only get four to five hours of sleep per night and then spend 14+ hours getting home. I think I’ll tackle this in reverse chronological order since the most recent memories are the easiest to remember.

After taking inventory of Darcy’s liquor collection, I decided to award my favourites. I will openly admit that my taste buds are not as refined as Darcy’s and that I have not even come close to sampling everything in his bar. Some of the awards are simply based on experience. I have included a couple of additional categories for extra credit towards my homework. I’m sure that Darcy has already reviewed most of my selections so I will post a link to what the expert thinks.

Day 1 of Tales of the Cocktail has been great. I've met almost everyone in the first 12 hours og being here. New Orleans is a very interesting city, and I definately like it. Lots of character in the old buildings and many historical sites to see. But, my agenda is quiet busy so we'll see how much I can do outside of that. | Perspective of a Cocktail Widow |

Many of you may wonder what it is like to live with a real bartender. It certainly has its advantages. Personally I could not make a decent cocktail to save my life. Sure I can make the foolproof drink that only has two ingredients, such as a screwdriver. Anything more complicated than this and it is a complete train wreck. Over the years, I have learned a lot from Darcy but I certainly prefer him behind the bar. I think back to our waffle making competitions we held every week early in our relationship. We came up with the perfect waffle recipe that we still enjoy every weekend. Now Darcy is pretty crafty because he let me win the waffle competition. Guess what? Seven years later and I’m still making the waffles. Therefore, I have no intention of entering the cocktail competition with him. I’ve learned my lesson; I will sit back and simply enjoy his wonderful creations.

I would like to take this opportunity to introduce myself as Darcy’s secretary/wife. For the next few days I will become the Cocktail Widow. I have been a part of the Art of Drink in spirit. However, I am now in the vicarious position of maintaining Darcy’s website in his absence. Some of you are fortunate to be attending Tales of the Cocktail with Darcy but most of us are stuck at home. Now I would have been very disappointed if I was left at home in a Canadian snowstorm while he basked in the sun. However, it is still summer here so I plan on catching a few rays myself. First of all, I would like to submit a disclaimer that if his website goes up in flames during his absence I am not responsible. So what are my credentials? The week is finally here and I’ll be flying out early tomorrow morning to New Orleans. I think tomorrow may very well be a 20+ hour day. Up at 4AM to get to the airport and the VIP dinner is tomorrow night, which may lead to a long, but fun, evening. Anyway, my agenda is pretty full so I’m not sure how many posts I’ll get to do while I’m in New Orleans, plus I lost my PDA which I was going to use to post (yay, my wife found it, so expect more posts!). This weekend was the 4th annual Drinks Show held at the Brick Works in Toronto. This event was created by Laura and Michelle of the Martini Club as a way of celebrating modern cocktail culture. The show is a cocktails only, no beer, no wine, which is a nice touch because focus is good. It runs from 5PM to 11PM Friday and Saturday and parking is effectively no existant, but they do provide free bus service to, and from, the show to select locations in Toronto. This was my first year attending the Drinks Show, so I wasn’t sure what to expect. Here’s how it turned out.

Carbonated beverages play a significant role in the word of mixology. Coke, Pepsi, 7–Up, Sprite and the list goes on and on have all helped make a better cocktail. The Cuba Libra wouldn’t exist without it, nor would the Pimms Cup or the 7&7. They all require some sort of sugar laden, carbonated beverage to make them shine. But people are changing their drinking habits, they are starting to look at how many calories are in a drink. Say good bye Colorado Bulldog with your Coke and cream combination. With the temperature getting hotter and hotter every day this summer, the efforts to find something cool and refreshing gets easier and easier. Basically, anything cold will work, but beers from Belgium tend to have a knack for summer thirst quenching. Belgium lambics are spontaneous fermented beers with a characteristic sour finish. Many lambics incorporate fruit into the aging process. This results is a great, refreshing beer for those hot summer days. Depending on where you live, the hard part may actually be finding one of these great beers.

During an interview she called Rick, from Martini Groove, a “mixologist” and his response was that the term should be banned from the English lexicon. I found that to be an odd response. But a little discussion started about which term is used where and why people would choose one over the other. The Internet is awash with videos of how to make cocktails, but as we have seen, many of them are very, very bad. But thankfully the Small Screen Network has taken production values, and mixology, seriously and created The Cocktail Spirit, which is hosted by Robert “Drinkboy” Hess. Each week Robert talks about something mixology related, be it a classic cocktail, how to setup a bar or interviews with industry people. As many of you know Robert is a dedicated advocate for the classic cocktail. He also takes his drinking seriously, so when you’re watching each episode take note of the excruciating detail of every drink being made. On hot summer days we have to thank Cuban bartenders for creating such thirst quenching cocktails, like the Mojito and the Daiquiri. Both of these are lightly sweetened, rum based drinks that incorporate lime and sometimes other fruit flavours. The key to these drinks is that they are not sickly sweet, well at least they shouldn’t be. Unfortunately the classic lime Daiquiri is very hard to find, and many times if you order just a “Daiquiri” at a bar you’ll get a bright red, horribly sweet, strawberry slushy. This is because most bartenders assume that the Strawberry Daiquiri is the only Daiquiri. If you want to do a person a favour make them try a Strawberry Daiquiri based on the classic recipe.

What do you do after almost two years of blogging about cocktails and spirits? Some people let their blogs decay into irrelevance, others continue with the status quo and others decide to move to the next level. What’s the next level you ask? Well hopefully bringing more content to the site, such as videos (which I’m really interested in doing, but only if they are done professionally), mixology research and increased posting frequency. But to achieve that, without dropping my standard of living, which would make my wife very unhappy, requires some form of income. | Good Ice Makes Great Cocktails |

Ice can be a pretty boring topic, unless you are talking to a cocktail enthusiast, then you just need to sit back, listen, and enjoy the cocktail they served you demonstrating the potential of ice. Besides filling the glass and chilling the drink, what’s so important about ice? Well, there are a couple of things, including how the ice chills a drink and what it contributes in the way of flavour. Yes, certain ice cubes contribute flavours, and not good ones, usually malevolent ones. Other factors, such as the size of the ice cube, can also affect your drink. Isn’t this splitting hairs? Not really and I shall explain in greater detail why using good ice is a good thing.

| Mixology Monday: Cream |

As a bartender I’ve noticed that cream based cocktails are very popular, especially with the fairer sex. There must be something sinfully delicious about drinking a cocktail that has 400 calories. Add to that the almost complete absence of any alcohol “flavour”, which is covered up by an impervious layer of heavy cream coating your tongue. Then add some sugar and you have a pretty good dessert. Now, cream based cocktails definitely have their place in the mixology world, but there are appropriate times and not so appropriate times.

The dog days of summer will soon be upon us and we’ll need plenty of refreshing drinks to take the edge off the heat. Cocktails like Mojito’s and Mint Julep’s are obvious choices, but a nice cold glass of beer isn’t a bad choice either. Now the choice of beer style is very important. You can choose a bland, pale, artificially carbonated, adjunct loaded, rice beer like Bud Lite. Blah! Or you can go with the ubiquitous Mexican Cerveza, like Corona, with its ever popular lime. Boring, and lime does not belong in beer people! Or you can choose a good weisse beer (Witbier, Biere Blanche, White Beer or Wheat Beer) like Blanche de Chambly from the Unibroue brewery in Quebec.

If you want to blame one particular drink for the rapid growth of vodka, in North America, look no further than the Moscow Mule. It’s true that the Vodka Martini became the most popular vodka drink initially and spurred the premium vodka category, but it was the Moscow Mule that began the introduction of North Americans to vodka. Whether vodka is the greatest spirit ever, or the bane of bartenders, that’s for you to decide, but the Moscow Mule may be the drink that trumps the Vodka Martini when it comes to flavour.

When I seek inspiration for new cocktails I’ll browse through books, website, marketing material and any other source of material to get an idea. When I found Trader Vic’s Rum Fizz I thought it was a very interesting drink, partially because it contained an ingredient you’d be hard pressed to find at any modern bar. That ingredient was Cream Soda, which you can find at most grocery stores. So, when I went looking for a bottle of cream soda, I ended up with a mixed pack of Jones Soda. Since Jones Soda makes a unique range of products, I thought I should take a look at them and see if they are valuable to the mixology world.

When you work behind a bar you’ll get the occasional odd request. Sometimes it for some bizarre drink, other times it for an odd ingredient and then there is the request for items that usually are not stocked in a typical bar, like root beer. Most bars have a limited supply of non-alcoholic carbonated beverages and those are typically Coke, Diet Coke, Sprite, Ginger Ale, Tonic Water, Club Soda or their equivalent Pepsico products. So what’s a bartender to do when someone wants vodka and root beer? Well you have three options, say you don’t stock that, chastize them for drinking kiddie drinks or make a Bartenders Root Beer.

Most drinks classified as fizzes are pretty straight forward. They usually contain a spirit, club soda, some citrus juice and sugar. They are served in a highball glass with lots of ice and garnished with a lemon or lime wedge. They are a simple classic summer refresher. But once you introduce Trader Vic into the equation, all sorts of things can happen to a basic fizz. In this case, a Trader Vic Rum Fizz is kind of like a Ramos Gin Fizz and a Royal Fizz. But in this case Trader Vic uses rum and a splash of cream soda. Yes, cream soda, the clear sugary sweet vanilla hinted soda pop you drank as a kid, and every once in a while indulge in as an adult. So here is a way to enjoy cream soda, without felling like you are 12 years old again.

Now here is a beer that sounds interesting. Enough with the million different pilsners and light beers, we need more experimental beers. We need things that will test our palates and make us go “wow, I never thought that would taste so good!”. I am the type of person that will seek out interesting spirits and beers just to see what they taste like. I rarely ever have the same beer in my fridge from week to week. Life is too short to drink one brand of beer, only rum and coke and eat your steak the same way every time. So, I’m lucky that I live about 90 minutes from Toronto, North America’s fourth largest city, because there are a number of great micro brewers, including Black Oak, making some interesting beers. Double Chocolate Cherry Stout is one of them.

A few weeks ago I wrote about the classic Gin & Tonic and looked at one of its key ingredients, gin. At the time my choices for tonic water were limited to Schwepps and Canada Dry. Now both of those are pretty standard tonic water but, with the cocktail revolution in full swing, it would make sense that a number of boutique makers of tonic water would join the market. Luckily, I am happy to announce that Q Tonic has just released a batch of their Q Tonic tonic water. Currently it will only be available at select location in New York until the end of the summer, at which point it should be more widely available.

Hpnotiq is one of those modern liqueurs that graces the shelves of trendy bars around the world. It has an alluring, mystical blue color, and a sleek and sexy bottle. It has a unique brand name, and spelling, that hits the mark with younger drinkers. It also has the price tag to match. It is often enjoyed by those who like to be “seen”, it is hard to miss the person drinking this fluorescent blue liqueur in a bar. So the question is: Is Hpnotiq more style than substance? Or is there something flavorful underneath all of the marketing. Did a good product get lost in the marketing hype machine?

| Browsing the Access Log |

When I get bored, I sometimes like to browse through the weblog my website generates and see where people are coming from and what they are searching for. Most of the access log is pretty boring, and repetitive, but scattered throughout the log are some interesting questions, that people type into their favorite search engine, and I get to see. Some are good questions, some are odd, and others…., well I’ll leave it at that. So, I’ve decided to answer a few of the questions here.
