My Best Summer Vacation

While it may seem a bit out of season, my best summer vacation was a trip I took to Turks & Caicos in the summer of 2005 with my husband Tony. The minute the plane landed in Providenciales I was already relieved and relaxed to be away, and the beautiful turquoise water surrounding the island helped. I have met many Jewish guests this week and our biggest discussion is about being Jewish and living on a small resort island in a small Caribbean Christian country. It is a very strange idea if you really think about it.Anyway, this year the JCTC (Jewish Community of Turks and Caicos) held a community seder at Beaches resort. $100 per person, no clean up or cooking necessary, servers and drinks included. On Monday mornings at 8am I have the privilege of teaching a Beach Pilates class right on the main resort beach. Mind you, I tried to sell the idea of a Grace bay beach Pilates class to every resort on Provo and NOT ONE went for it! In fact, I received a call the other day from the concierge at Grace Bay Club asking if I could teach Pilates to one of their guests. I don't know about you, but I LOVE oysters. My husband, who grew up in the Gulf (as a Navy brat he moved around a lot--Florida, Mississippi, Louisiana), introduced me to new ways to eat them and I love them all.
