    We picked up these Pitsinia Bacon Chips while we were in Greece. Of course, Lon buys anything bacon, but when we opened the bag last night, everyone got a whiff and thought - dog food. Yea, that's what it smelled like.They look kinda cool, striped like cartoon pictures of bacon. They're a little bit puffy, we think made from corn, and lined with bacon flavoring. Lon whipped up a pseudo ranch dip and that got my cousin Christina to eat a lot more of these but still, three of us did not finish the 132 grams (4.66 ounces) bag.

    Lollyphile Maple-Bacon Lollipops

    As a sort-of joke gift, Kasi and Stephen got me some maple-bacon lollipops from Lollyphile. As a concept I totally approve of this type of gift. First, it's food. Second, it's got bacon. Third, it's something I haven't seen or tasted before!Darren, Nikola and most of the other folks at the dim sum table (where the gift was given) were pretty impressed at the unique gift. Now, several weeks later, I cracked into the box and started licking away.Interesting? Maybe. Unique? Definitely. Good? Um, no. Can you tell from the image above that there are little bits of bacon in the lollipop? Well as the subtle, maple-flavored candy melts away (unusually quickly, actually), the tips of those bacon bits begin to say "hello" to your tongue by scraping at it. It's a bit like licking a tongue scraper over and over.So, while I do love maple bacon, it just doesn't go over as a lollipop.     Hot Bacon Dressing recipe

    2 ounces bacon grease1/4 pound red onion, finely diced2 cups water1/2 cup honey1/2 cup red wine vinegar2 tablespoons Dijon mustard1/2 tablespoon cornstarch Using the insides of the red onion, finely dice. Place the bacon grease in a saucepan over medium-high heat. Add the onions and sauté until the onions start to blacken. While the onions are caramelizing, place the water, honey and red wine vinegar in a mixing bowl. Using a wire whisk, mix the ingredients well. Add the cornstarch and whisk well. After the onions have caramelized, add the Dijon mustard to the onions and stir together with a rubber spatula. Add the water mix to the mustard mix. Continue stirring until mix thickens and comes to a boil. Remove from heat and store in refrigerator until needed. NOTE: To reheat use a double boiler. Servings: 1

Here are two recipes that we all enjoyed this week.The beef recipe is a simple recipe for steak with a red wine sauce served with bacon and onion infused mashed potatoes and asparagus. Very easy, but quite classy too. A good dish for visitors! The mashed potatoes are really special tying in some of the sauce flavouring without being too intense, this is a really simple idea for mash that keep s a flavour of the meal going throughout. For years and years I've had a sweet tooth and although I'm not about to denounce all sweet food, I must admit that its savoury ally has been ambushing me in an attempt to beat me down and win me over. And on the breakfast front it has worked. Our lazy (or not so lazy) weekends usually begin with a large main meal size brunch and like today, we ended the day with a simple soup - fennel. Apart from a little light snacking during the day this pretty much does for us until the morrow. When Dan flipped over the calendar to display April's offer, I yummed at first sight. I had to make this bacon & egg with thyme & potato rosti. A right fancy fry up.Bacon & Egg with Thyme & Potato Rosti6 good sized potatoes, like desiree1/2 of a white onion2 or 3 sprigs of thymeBaconEggsBoil the unpeeled potatoes for 8 minutes. Remove from heat and allow to cool until comfortable to handle. Peel the potatoes then grate into a large bowl. Chop the onion and the thyme finely. Mix into the potato and season well. Melt some butter with some olive oil in a 23 centimetre frying pan. Place the potato in the fry pan and pat down. Cook on medium for 15 minutes. Flip and cook on the other side for another 15 minutes or until golden brown. While the second side is cooking, grill the bacon. In the last few minutes poach the eggs. Serve with fresh leaves of thyme and a grind of pepper.

    Beer & Cheddar Cheese Soup with Bacon

    “He was a wise man who invented beer,” Plato correctly noted, but it was an even wiser person that coupled it with aged cheddar to make soup. Come to think of it, it was probably a couple of people, the same ones that first mixed chocolate with peanut butter. I rooted around the lumber room of the internet looking for the history and found nothing. The origin of cheese predates recorded history and beer is one of the oldest human-produced beverages, so I’m assuming the recipe is likely as old. Beer (due to the brewing process) was safer to drink than the water and milk (which was usually preserved as cheese) so I’m sure the nomadic Turkic peoples sat around the yurt campfire eating this wonderful silky soup while listening to a Manaschi reciting some beautiful epic poem as the sun slowly nodded below the horizon and the stars began glistening wetly over the dry evening, they relined in the silent embrace of nature and nibbled peanut butter cups for dessert. Don’t quote me on this I never did well in history.This curiousity for Cheddar Cheese & Beer soup started about a month ago while watching Master Class at Johnson & Wales on PBS. It was the episode #318, “Cooking with Beer”. I remember the beer-marinated skirt steak looked good, couldn’t really remember what the chicken saltimbocca was all about, but the cheddar cheese soup stuck in my head. Over the next couple of weeks I would search the net trying to track down the simple recipe that was produced on the show. But to no avail. The people at the College of Culinary Arts at Johnson & Wales should post the recipes from the show as a public service. Anyway. I found an abundance of other recipes and finally decided on one from Gourmet magazine. The only changes I made to the recipe was using a lager beer (Taps Premium Lager, I prefer cooking with it than drinking it) and the bacon was organic and nitrate-free (I won’t make that mistake again, I read an essay in one of Holly Hughes’ always enj
