    Appetizer Recipes : Barbeque Bacon and Cheese Dip

    Ingredients :2 8-oz. packages cream cheeseOne half cup barbeque sauce3 oz. real bacon bitsOne half cup tomato sauceOne quarter cup sweet onion, chopped1 cup sharp cheddar cheese, shreddedSpread cream cheese along the bottom of a 13 x 9 inch dish. Spread barbeque sauce over the cream cheese. Top with bacon bits, tomato, onion and cheese.     Main Course Recipes : Cornell Barbeque Chicken

    Ingredients :2 cups vinegar1 cup vegetable oil1 egg3 tablespoons salt1 tablespoon poultry seasoningPepper to taste6 to 8 Chicken Breasts (not boneless)Put all ingredients into a blender and blend until smooth. Marinade chicken in sauce for at least 1 - 2 hours (we allowed the chicken to marinate overnight). Cook chicken over charcoal grill until done. Baste often while cooking. Chef's Note: I basted the chicken almost continuously during the cooking process. The recipe makes plenty of marinade so be generous with your basting. I would cook the chicken for a few minutes after the last dose of basting, however, since there is raw egg in the marinade. By the way, the Cornell Chicken was wonderful!!Tips : Even though you can cut out some fat and calories by removing the skin from the chicken before cooking, this marinade causes the skin to become nice and crunchy and very tasty.     Nam Jim Kiga (Chili Sauce or Dip for Barbeque-style Foods)

    The dip in the picture above is a Nam Jim, but it isn't ground into a paste in the mortar. I had it served with fried pla nin (tilpia). Aroy-mak-mak! (very delicious!). INGREDIENTS :6 tablespoons prik ki nu (green birdshit chili), sliced thinly6 tablespoons prik ki nu daeng (red birdshit chili), sliced thinly4 tablespoons hom daeng (shallots), sliced thinly3 tablespoons phak chi (coriander plant including root), chopped2 tablespoons kratiem (garlic), sliced thinly1 tablespoon nam manao (lime juice)1 tablespoon nam pla (fish sauce)DIRECTIONS :Sauté the chilis, shallots and garlic in a little hot oil. After cooling puree the mixture in a food processor of mortar and pestle. If the coriander and shallots are added at the last minute the mixture will keep for several weeks in a refrigerator....

    No barbeque for us...

    We are not having our barbeque today, because my husband is not feeling well. So, we'll have to do our barbeque much later, some other time, perhaps. Anyway, I am busy, but I always try to find time to do my sideline job here. Because, as you know, I need extra money. So, I am doing what I can to make some, it will help us live a little. Okay, time for another 50 words...LOL....

    Almost barbeque time again...

    I am so glad that tomorrow Tiana will have no school, so a day off for all us then. Also, on Memorial Day she is off school, too, of course, so that will be another easy day for me especially. I can't wait to have a cook out for Memorial Day. We always have a barbeque on the grill. Anyway, I have my hands full; our baby girl just had 3 shots yesterday, and so she occupies most of my time at the moment. She is always crying in pain. In fact, it seems like she is having a fever; She gets too warm. I gave her a tylenol medicine but, it only made her vomit. Poor little one, why did she have to get so many shots all at once, that was awful. I couldn't understand it, as it should be one at a time. A good thing, that she is a good baby. I'll have to give a bath now to cool her off and make her feel better. Okay till here....
