| Black Bean Chili recipe | | 2008-01-16 07:03:00 | | Erin and I have decided that Wednesday will be our recipe day. We hope you guys will enjoy this addition to the site. I am looking forward to hearing everyone enjoy some of my favorites that I plan to post. So ....here ya go.
Black Bean Chili
Prep Time: 30 minutes
Cook Time: 6 - 8 hours
Ingredients:
1 medium onion chopped
1 medium yellow pepper - diced
1 medium red bell pepper - diced
1-1/2 cups + 1 TBS vegetable broth
6 medium cloves garlic, chopped
3 cans black beans, drained
1 can (8oz) tomato sauce
3 medium sized tomatoes - diced
2 TBS ground cumin
2 TBS red chili powder
2 TBS dried oregano
1 cup corn kernels, fresh or frozen
ΒΌ cup fresh chopped cilantro
salt & black pepper to taste
Toss all ingredients into a slow cooker and cook on low for 6 - 8 hours. (Can also be made on the stove top in a large stew pot by simply pouring in all ingredients and simmering for 3- 4 hours.)
I actually found this recipe during my quest to make a healthy version of chili for a party we were having. (yes, we do have Chili parties) It is simple and completely yummy. One thing I did notice: If you tell people that it’s vegetarian, they will turn their noses up at it. If you call it Black Bean Chili, they will devour it. I served mine with corn bread muffins.

Thus, making some really great Black Bean burritos.
