    Black Bean Chili recipe

    Erin and I have decided that Wednesday will be our recipe day. We hope you guys will enjoy this addition to the site. I am looking forward to hearing everyone enjoy some of my favorites that I plan to post. So ....here ya go. Black Bean Chili Prep Time: 30 minutes Cook Time: 6 - 8 hours Ingredients: 1 medium onion chopped 1 medium yellow pepper - diced 1 medium red bell pepper - diced 1-1/2 cups + 1 TBS vegetable broth 6 medium cloves garlic, chopped 3 cans black beans, drained 1 can (8oz) tomato sauce 3 medium sized tomatoes - diced 2 TBS ground cumin 2 TBS red chili powder 2 TBS dried oregano 1 cup corn kernels, fresh or frozen ΒΌ cup fresh chopped cilantro salt & black pepper to taste Toss all ingredients into a slow cooker and cook on low for 6 - 8 hours. (Can also be made on the stove top in a large stew pot by simply pouring in all ingredients and simmering for 3- 4 hours.) I actually found this recipe during my quest to make a healthy version of chili for a party we were having. (yes, we do have Chili parties) It is simple and completely yummy. One thing I did notice: If you tell people that it’s vegetarian, they will turn their noses up at it. If you call it Black Bean Chili, they will devour it. I served mine with corn bread muffins.     Main Course Recipes : Smoky Corn & Black Bean Pizza

    Ingredients :Yield: 6 servings1 plum tomato, diced1 cup canned black beans, rinsed1 cup fresh corn kernels (about 2 ears)2 tablespoons cornmeal1 pound prepared whole-wheat pizza dough1/3 cup barbecue sauce1 cup shredded mozzarella, preferably smoked mozzarella1. Preheat grill to medium.2. Combine tomato, beans and corn in a medium bowl. Sprinkle cornmeal onto a large baking sheet. Stretch the dough into about a 12-inch circle and lay it on top of the cornmeal, coating the entire underside of the dough.3. Transfer the crust from the baking sheet to the grill. Close the lid and cook until the crust is puffed and lightly browned on the bottom, 4 to 5 minutes.4. Using a large spatula, flip the crust. Spread barbecue sauce on it and quickly sprinkle with the tomato mixture and cheese. Thus, making some really great Black Bean burritos. I'd like to share my recipe, its a real treat. :DLynda's Black Bean Burritos2 flour tortillas2 tablespoons olive oil1 small onion, chopped1/2 red bell pepper, chopped2 tablespoons chopped cilantro1 teaspoon minced jalapeno pepper1 teaspoon garlic salt1/2 teaspoon salt (or other spices)1 (15 oz.) can Bush's Best black beans1 ( 14.5 oz) can Del Monte diced tomatoes and green chilies3 oz. sour cream1/2 cup cheddar cheese, shreddedTapatio hot sauce1) Warm tortillas in the microwave for 30 sec.
