    OK, so I'm in a bad mood. Usually when I drive to work, when there are sparrows or crows or whatever in the road pecking at some crumbs, I say, "Watch out, little birds." Today I found myself saying, "Watch out, you stupid birds." At least I didn't try to run them down, although I'm feeling a bit "run over" myself.I write a lot about poverty but I do not, generally, get into the messy details of my own life. To some degree I'm used to being broke. However recent events make a great illustration of how thin the margin for error is getting for so many people these days.Mostly I do OK except when there are unexpected expenses such as a car suddenly needing repair. May and June's version of the unexpected was the sickness of my thirteen year old dog. Some $1,200 later, when it was clear he was suffering and wasn't going to get better, I made an appointment for a Monday to have him put to sleep. I'd used up nearly every penny left over from my previous two paychecks on his illness,

    Ingredients :500 gr. tepung terigu (protein tinggi)1/2 bungkus ragi instan25 gr. susu bubuk1/2 sdt. garam2 kuning telur1 putih telur50 gr. gula pasir250 ml air50 gr. mentegaDirections :1. Campur tepung terigu, ragi, susu bubuk, dan garam.2. Dalam wadah lain, campur putih dan kuning telur dan gula pasir. Aduk hingga gula larut.3. Tuang campuran telur ke campuran terigu. Masukkan air sedikit demi sedikit sambil adonan diuleni hingga kalis.4. Setelah kalis tambahkan mentega. Uleni kembali sambil sesekali dibanting. Tutup wadah dengan lap basah, diamkan selama 30 menit.5. Kempiskan adonan dengan cara ditinju-tinju. Giling hingga setebal 1 cm. Lalu digulung.6.     As I sit here eating my bagel I have to contemplate my love of bread.  I do indeed love bread - no question about it.  Rye, pumpernickel, Italian, heck I even love Texas Toast.  The only kind of bread I don’t love is Whole Grain - exactly the type I should be eating.  So I went on a search to see what I can find out about the other types of breads I eat, how healthy they are and what specifically I should be looking for when I grab a loaf off the shelf.  There are so many types that it would literally take me hours to list them all, so instead I’ll go with the important varieties.  White and Whole Grain Bread Whole grain is a basic form but by grinding the grains, adding water and heating it up you get whole grain flatbread.  Whole grain bread is similar to flatbread except you add yeast to make it rise.  White bread starts out the same way but instead of adding “whole” grain the grain is processed.  The hard out

    1 slice bread1 cup milk1 egg1/4 teaspoon cinnamon1/2 teaspoon vanilla extract1/4 teaspoon nutmegDiabetic sugar to your tasteYou may double or triple the amounts for a larger portion.Heat oven to 350 degrees F. Butter a small oven-safe dish.Cut and dice bread into small cubes and toast in oven until brown and crisp.Beat egg and add to milk. Pour the mixture over the bread in the dish. Sprinkle the nutmeg and cinnamon over the top. Place the dish in a pan of warm water. Bake until custard is set. Insert a knife into custard. If it comes out clean, remove from oven. Serve warm with a lemon or orange sauce.Yields 1 serving.

    Passover Mandel BreadMy mother-in-law always makes a great meal for the Jewish Passover holiday. She makes a wonderful Mandel Bread (similar to Biscotti for those of you unfamiliar with Mandel Bread). Here is her recipe:Ingredients- 1 cup sugar- 1/2 cup oil- 3 eggs- 1 cup mazoh cake meal- 1 cup potato starch- 2 teaspoons orange juice- 1/2 cup chopped nuts- 1 teaspoon cinnamon- 1 teaspoon vanillaPreparationMix sugar, oil, eggs and add nuts.Add orange juice and dry ingredients.Chill 3 strips in regrigerator 2 hours and then make 3 rolls (about 2" thick).Sprinkle with sugar and cinnamon.Cook and slice and return to oven to brown (3-5 minutes).Cook in greased pan in oven at 350 degrees Fahrenheit for 40-50 minutes.

    Cranberry BreadThis is another family favorite from my mother-in-law's recipe files. She has what seems to be an endless collection of recipes--all perfect for parties. She loves to entertain and have parties. This recipe though is good for any time and is wonderful.Ingredients- 2 cups sifted flour- 1 cup sugar- 1-1/2 teaspoons baking powder- 1 teaspoon salt- 1/2 teaspoon baking soda- 1/4 cup butter (use stick)- 1 egg beaten- 1 teaspoon grated orange peel- 3/4 cup orange juice- 1-1/2 cups light raisins (not dark)- 1-1/2 cups cranberries (not canned)PreparationSift flour, sugar, baking powder, salt and baking soda into a large bowl.Cut in butter until mixture is crumbly.Add egg, orange peel and orange juice all at once.Stir until mixture is evenly moist.Fold in raisins and cranberries.Spoon into greased 9x5x3 pan.Bake at 350 degrees Fahrenheit for 1 hour and 10 minutes or until toothpick comes out clean in center.Remove from pan and cool on rack.

    Ultimate Amazing Bread--Updated

    Today I'm reviewing Candy's Ultimate Amazing Bread, but it's not ready to eat yet so check back later for pictures and my review.  On this page, she gives directions for the sourdough starter, the homemade buttermilk, and the recipe for the bread.  It was a long process, but it wasn't hard at all.  It was really a lot of fun.UPDATE--Well, Isaiah ruined my bread.  At some point early on, he turned the oven to "broil".  When I discovered it, I tried to do the best I could to finish baking it, but it just didn't turn out right.  The crust was very hard and tough.  The inside is ok towards the top, but the bottom is hard.  I can't believe this!  I can't remember any time in the past where anyone has bothered the oven knobs, but he had to pick today to do it!So much for Tuesday Review today.  Sorry!

    Finally! I am a Daring Baker! And for my first challenge - it's Julia Child's French Bread. Fifteen pages of recipe and I've only baked bread once before. I even went to our country house, cause that's where the good oven is. I calculated that if I started at 2 am the bread would probably finished at around noon and I'll have good light for taking pictures. But, alas, the outside temperature was -7°C, and maintaining proper room temperature using stove was extremely difficult. So, naturally, I had problems with the rises.     This month's Bread Baking Day is hosted by Eva from Sweet Sins, and for this edition, she chose shaped breads theme. After some thinking I decided to make a turtle shaped bread I've seen on the net and wanted to make for some time and this was a good opportunity to do it. The recipe I used was plain sweet bread with added pieces of dark chocolate.150 ml milk30 g sugar1/4 tsp salt60 g butter10 g fresh yeast2 Tbsp lukewarm water450 g flour1 egg100 g dark chocolate, cut to little pieces Boil milk with sugar, salt and butter. Let cool. Dissolve yeast in water. Sift flour on your working surface and make a hole in the middle. Pour milk, yeast and slightly beaten egg and knead the dough. Make a desired shape and leave dough to rise in a warm place for about half an hour. Bake in a preheated oven for 20-25 minutes on 200°C.     Cranberry Bread Pudding

    Last week, we had some guests over for dinner and Lon bought three baguettes, when we only needed one. This is common Lon behavior but of course, I had to figure out what to do with it. I decided to throw together a simple bread pudding and everyone seemed to love it (4 people finished about 75% of a 9X13 pan) so I'm posting the recipe, which was basically made based on what I had at home at the time.5 eggs1 1/2 cups white sugar2 cups milk2 cup heavy cream1 tablespoon vanilla extract1/2 tablespoon ground cinnamon2 (6-8 oz) baguettes, cut into 1 inch cubes1/2 cup dried cranberries1. Whisk eggs, sugar, milk, heavy cream, vanilla extract, and cinnamon together until smooth. Set aside.2. Spray a 9x13 pan with non-stick spray and spread baguette cubes evenly in the pan. Sprinkle the dried cranberries on top.3. Pour the egg/milk mixture on top and press the bread down lightly.4. Cover and refrigerate for at least 3 hours. (You can leave it overnight.)5. When you're ready to bake it, preheat the oven to 300 degrees F and take the bread pudding out of the refrigerator while the oven heats up.6. Bake at 300 degrees F for 45 minutes.We served it with caramel sauce and chocolate sauce since we had it left-over from the banana cream pie.

    One of the most important things that I had to do when I made the leap into vegetarianism (Is that even a word?) was to find a way to supplement my protein. You know, find it without all the animal products. It sounds like a daunting task but in reality, it was simple. 2 words - whole grains. I added in whole grains in every way possible to my diet. Yes, ladies still eating bread. Just eating the good for your bod kind. Here is what the lovely people that put together our beautiful food pyramid have to say about grains: What foods are in the grain group? Any food made from wheat, rice, oats, cornmeal, barley or another cereal grain is a grain product. Bread, pasta, oatmeal, breakfast cereals, tortillas, and grits are examples of grain products. Grains are divided into 2 subgroups, whole grains and refined grains. (Repeat after me: Whole grains - good, refined grains - bad. ) Whole grains contain the entire grain kernel—the bran, germ, and endosperm. Examples include: whole-wheat flour bulgur (cracked wheat) oatmeal whole cornmeal brown rice Refined grains have been milled, a process that removes the bran and germ. This is done to give grains a finer texture and improve their shelf life, but it also removes dietary fiber, iron, and many B vitamins. Did everyone catch that? Continuing: Things on the list of refined grain products are: white flour degermed cornmeal white bread white rice Most refined grains are enriched. This means certain B vitamins (thiamin, riboflavin, niacin, folic acid) and iron are added back after processing. Don’t be fooled ladies. Fiber is not added back to refined grains. Check the ingredient list before you make the decision to consume it. Make sure that what you put in your bod is actually going to do you some good. Grains do not always mean that your tushy is going to expand at the site of it. Whole grains are our friend. Protein in the good form. Yep. You can feel free to not loathe the loaf any longer. And our local supermarket – the Twelve Days of Christmas barely over and some folk still tardy with removing the tinsel from the house – has Hot Cross Buns already! What is the traditional food world coming to? Food Things Fall Apart, and I am not happy about it. As for the personal celebrations and milestones, even the white iced wedding cake can no longer be assumed, it has been usurped by chocolate mud cake and pyramids of vegan cupcakes and the like. And does anyone offer Groaning Cake and Groaning Cheese anymore, when the lady of the house has just been safely confined? And at the other end of life, where is the funeral bread? The son of George Browne of England made a fine funeral feast for his father on this day in 1702. The expenses were not insignificant; amongst other costs there was five shillings to the preacher (only one for the doctor), two shillings to the two women “for winding him” (and a whopping nine shillings and fivepence for the 5 ½ yard winding sheet), but only 6 pence for the coffin.     Hope everyone had a great Christmas, and enjoyed it with their friends and family. But the holidays are still on in full swing, and so is the cooking and baking spree. After taking a 3-day well-deserved skiing break, I got back to my oven to make this Mixed Berry and White Chocolate Bread pudding. Lots of desserts and delicacies fall under the "Pudding" umbrella, like gellos, panna cotta, mousse, gooey cakes and more. But the most widely-known form of pudding is the bread pudding. As the name suggests, you make layers of milk or cream-soaked bread and top it with fruits, nuts, chocolate or anything that your heart desires:) freeze it for some hours, then toss it in the oven to make it warm and gooey, and reslish it with your favorite toppings. An exquisite dessert that can range from simple to elaborate and classic. There are tonnes of ways to experiment with this, but here's my version full of berries, raisins, chocolate and bread!I'm not a huge fan of white chocolate, and don't generally use it in my cooking, with white chocolate mocha and white chocolate-macadamia nut cookies being exceptions. Somehow, it feels just right in this pudding recipe. It does help bring out the color and flavor of the mixed berries. But if you want, you can use regular chocolate too.Ingredients1 packet of frozen mixed berries (or strawberries, raspberries, blueberries)1/2 cup golden raisins1 cup granulated sugar1 tbsp lemon juice1 tsp salt1/2 cup shredded white chocolate (you can use regular too)6-7 slices of thick white bread (sweeter kind preferred, don't use sour bread)1 cup whole milkMethodSpray an 8-inch loaf pan with nonstick spray.     Hey, it's Thanksgiving and I love pumpkin cakes, breads, and rolls. I don't like pumpkin pie though. For me, it's the texture. Pumpkin pie is like a wet custard and it's usually ultra sweet as well. For a nice and easy quickbread recipe, try this Pumpkin Cranberry Bread. I didn't have two 9x5 loaf pans so I used one 9x5 loaf pan and one 8x8 square glass baking dish. I removed the 8x8 baking dish from the oven at 40 minutes and the loaf pan at 50 minutes. Both came out the same. Yum.Also, the dough looks strong enough to bake free form to make scones. If you try that, let me know how it comes out!

    Bruschetta is a traditional Italian appetizer or antipasti, as you see it listed in a menu in an Italian restaurant, and definitely my favorite! I love bruschetta, especially the one that they serve over at the CheeseCake factory. They bake a special bread which is more fluffy, like a pizza base; but the traditional bruschetta is supposed to have a hard italian crusty bread for a base, and is topped with tomatoes, garlic, and basil, in the least. I like my own version though, which also includes onions and parmesan cheese:) So here's my recipe for this tasty snack which is very simple and easy to make, and healthy too! Ooh!     Appetizer Recipe : Rosemary Tomato Focaccia Bread

    Ingredients :1 10-oz. tube refrigerated pizza crust1/4 cup olive oil2 garlic cloves, mincedSalt and pepper to taste2 Tbsp. fresh rosemary, crushed2 fresh tomatoes, sliced1/4 cup Parmesan cheese, grated1/4 cup minced fresh parsleyRoll out pizza crust and place on a greased baking sheet. Combine olive oil, garlic, salt and pepper and 1 Tbsp. of rosemary and spread over pizza crust. Top with remaining rosemary, tomatoes, Parmesan cheese and parsley and bake for 10 - 15 minutes at 425 degrees.Tips : Use low fat cheese.

    Italian Tomato-Herb Bread with Parmesan Cheese - And An Award!

    We usually try eating the whole-wheat bread everyday at breakfast, but from the time we've tried the Orowheat Buttermilk bread, it has really left an indelible impression on our taste buds!! The soft and creamy texture combined with the subtle buttermilk flavor has found a place in our eharts. So it was a matter of days before I started scouting the web for a similar recipe. Also, I'm a big fan of italian herbs like rosemary and thyme, and they taste great in a loaf of bread. So I couldn't have been luckier to have found a perfect recipe for Buttermilk-Herb bread (original recipe here). I modified it to add some whole-wheat flour, parmesan cheese and sun-dried tomatoes! Yup, and I'm glad I used these additons for they added a beautiful flavor to the bread. It tasted so good you could eat it just like that!!Ingredients2 envelopes active dry yeast1/2 cup warm water1 1/2 cups warm buttermilk1 egg (optional)2 tablespoons vegetable oil1/2 cup parmesan cheese1/2 cup rosemary leaves/flakes2 tbsp red pepper flakes5 tbsp sun-dried tomatoes (optional)3 cups all-purpose flour2 cups whole-wheat flour1 teaspoon saltMethodIn a large bowl, sprinkle the yeast over the warm water. Let stand for about 10 minutes, until foamy. Stir the buttermilk, parmesan cheese, egg, oil, rosemary, red pepper, tomatoes and salt into the yeast mixture. Stir in 2 cups of the flour using a wooden spoon. Add remaining flour 1/2 cup at a time until the dough can be picked up out of the bowl.Knead on a floured surface for 6 to 8 minutes, until smooth and elastic. Try not to add much more flour. Place in a greased bowl, and turn to coat. Cover with a cloth, and let it rise in a warm place until doubled in size. Now divide the dough into two pieces. Form into tight loaves, and place each one into a greased 8x4 inch loaf pan or a deep dish pan. Let it rise until a finger leaves a mark when lightly pressed into the dough. Remember, this is the part which is inducing softness to the bread, so don't try to rush itPreheat the oven to 350 degrees F (175 degrees C). Bake loaves for about 20 minutes in the preheated oven, until golden brown. When finished, the loaves should sound hollow when tapped on the bottom. The dough will easily leave the sides of the pan and form a hard crust on the top and bottom of the loaf. Also pass a knife through the loaf to ensure it's been cooked through and through.Cut into thin slices and store in air-tight container. This tastes like heaven when you warm the bread for 6-8 seconds in the microwave and put a dollop of butter or cheese on it!! of course, it serves as excellent bread for your sandwiches too!This bread is on its way to Kochtop to make its mark in the World Bread Day Event!Tip: You can add your choice of herbs to make this bread.     Bread and Butter - Part 2

    The company I spoke of in my last post is still in business. They have lost many of their employees along with the bread and butter customers. I was one of those employees.Last I heard, that formerly $14,000,000/yr company is now worth only about $6,000,000/yr, and still sinking. All of my old co-workers who I'd built friendships with are no longer there, so I will not know for sure how that company is doing from now on. I only have one small clue... I visit their website about twice a year to see if there have been any changes. So far, there are 3 pages that come up with a 404 error, the starting flash page has some glitches, and there has been nothing added or updated in about 3 years. It's only a small clue, but it's a revealing one.My current company will stop working on large jobs to take care of the little guys. The little guys are the easiest to take care of and negotiate with (not to mention they're fun, the big dogs seem to have lost their sense of humor somewhere along the way). They are usually honest about when they need their work done and whether we really need to stop working on our current job. They are aware of our scheduling issues and aren't terribly demanding of our time unless it's a true emergency.Our big customers came to us because of the referrals from the little guys. We have never gotten a new customer from a big dog.Who do you concentrate on in your business? Who are you more willing to bend over backwards for? Be very careful who you choose to romance in business. Those $50/month customers may be giving you enough referrals to amount to $50,000/mo. That $50,000/mo single customer will go to the cheaper guy in a heartbeat, leaving you hanging and twisting in the wind.

    Bread and Butter - Part 1

    I used to work for a small/mid-sized manufacturing company that made an incredible mistake. The owner bought it when it was only worth $250,000/yr. He built it to a $14,000,000/yr company in only 9 years. It was exciting to work for a company in growth. The atmosphere was one of friendship and fun. All the employees knew each other, we liked each other, we worked as a team, we spent time with each other after work, we were proud to work for this company. And all of us liked and respected the owner, my direct boss (note: past tense). He was the first boss I'd ever had who I truly liked.This atmosphere of friendship and respect extended to our customers as well. We knew our customers by first name. Many of us built friendships with our customers. We invited our customers to barbeques, pot lucks, and weekend sports bar hopping.We suddenly started seeing big pretty carrots placed in front of our faces. We had three very large companies make wild claims about how much product they were going to buy from us.The first of these big dog companies started to buy products. They bought no more than $10,000 a month and only averaged about $7,000. This only lasted 8 months before they disappeared completely. Their promise of $8,000,000/yr never materialized.The second and third of these big dogs never bought even one unit. They spent months on prototypes (nonchargeable), retooling, branding and tweaking everything in sight. But not even one finished product went out the door to be delivered to them.While these diamond encrusted carrots were being dangled in the face of the owner, he decided to put a minimum limit on all orders. Our friendly customers who only bought a few units a months were essentially told they weren't good enough for us. Even the customers who bought a fairly substantial amount of units were told it wasn't good enough.After all, we were tooling up for mass quantities.
