    1 cup Oatmeal flour (put some oatmeal in a blender and ground it up until its a flour base)2/3 cup wheat or white flour1/3 cup flaxseed flour1 lb. carrots (puree)1 cup carrot juice1/3 cup oil3 egg whites1/2 cup sugar1 teaspoon vanillaPut all dry ingredients in a bowel and mix. In another bowel, put in your wet ingredients and mix. For the carrot, you can do it two ways. 1: if you have a Juicer (I have this one which I never had a problem with it and mom has this one which is the same one except its not chrome look), juice the carrots 1 lb. and use the 1 cup of juice and all the pulp and put into the wet ingredients. 2: You can puree (hand fine shredder tool that shred cheese) the carrots with a hand grinder which will take some time but exercise in your arms. Put the puree into the wet ingredient with some fat-free milk for the substitute for juice. When the carrots are done, mix all the ingredients into one bowel and mix until a batter is form.     My friend Lily is moving away so I had to send her off with a treat. I love mini cupcakes and I love giving mini cupcakes. So, I decided on an apple/carrot spice flavor but you can't taste the apple so I'm calling them Carrot Spice Cupcakes. I am so impressed with this recipe, as a first try. I would only change one thing, remove the nuts. The texture of the cupcakes is so light and tender that the crunch of nuts seems not to fit in.     Happy Easter! In honor of bunnies, lets talk about carrots. We were watching Alton Brown the other night and he mentioned that carrots and cumin were cousins. Wow, never would've thought, but I looked it up, and apparently carrots are in the Umbelliferae family along with dill, caraway, parsnips, parsley, anise, and cumin. Parsnips do look like white carrots, and I guess the tops of carrots do look like parsley, but the rest is quite surprising.Carrots and cumin go really well together so here's a easy carrot salad that's meant to be served as an accompaniment to grilled meats. However, in recent years this traditional advice has been questioned by some researchers who suggest that moderate amounts of sugar can be safely consumed as part of the diet of patients with diabetes. Now a new study has been published that is consistent with this revised approach. It showed that patients who increased their daily sugar intake (in the form of carrot cake) but maintained a stable body weight, showed no adverse changes in their blood glucose.The study was conducted by the Department of Nutrition and Dietetics at London’s Hammersmith Hospital. Three slices of carrot cake were added to the daily diets of nine, overweight type 2 diabetes patients over 24 days (bringing their daily total to 88g or 18 teaspoons of sugar). Consumption of the carrot cake slices was evenly distributed across the day. Several measurements were recorded at the beginning and end of the study, including the patients’ weight, blood sugar (glucose) levels, cholesterol levels, and insulin sensitivity (which is a measure of how well the body responds to the hormone insulin).Professor Gary Frost, who led the study, explained ‘In this study, the energy intake of these patients was balanced to their body weight, and their sucrose intake was spread evenly over a day.     My very favourit-ist carrot cake of all time. Made again, yesterday.Johanna: you have to follow this to the tee. I've made slight variations - all to detrimental effect. In fact, the picture of the cake above didn't work out because I used all white flour and no nuts. Didn't turn out at all.Carrot Cake175g brown sugar150mL sunflower oil2 eggs100g white flour100g wholemeal/barley/rye flour (whichever you have on hand)1 teaspoon baking powder1 teaspoon mixed spice3 medium sized carrots - peeled and grated (no doubt using your Thermomix *jealous*)50g chopped nuts1 orange, zested and juicedAdditional 75g brown sugarPreheat oven to 180° Celsius. Beat together the brown sugar and oil. Add in the zest of the orange and the eggs, beating between each additional. Beat until lighter in colour and slightly foamy. Tip in the flours, baking powder and spice and mix until well combined. Fold through the carrot and mixed nuts. Transfer into two prepared sandwhich tins and bake for about 30-45 minutes until cooked (you know when ;).While it is baking prepare an orange syrup by slowly heating the orange juice and additional brown sugar over a low heat. When the cakes are removed from the tins (after cooling slightly) poke holes all over them and pour over the syrup.Orange Cream Cheese Frosting50g softened butter3 cups icing sugar (I know I'm terribly inconsistant with my measurements - try 500mL)175g cream cheeseJuice from half an orangeWhip together all of the ingredients until light and fluffy.
