| | Chasseur Cast Iron Casserole | | 2008-02-07 07:01:00 | | For me a cast iron casserole/cocotte has to be one of the most useful and best loved items in my kitchen. Made in France from premium quality cast iron, it is extremely durable and will conduct heat evenly and retain it well. It is particularly good for long, slow cooking but you’ll be surprised at some of its other uses.- you can use it to make a lovely moist fruit cake for instance. | | Tater Tot Casserole | | 2008-01-09 14:34:19 | | Tonight we had the Duggar's famous tater tot casserole. I was a little hesitant about making it because the only other recipe for it I had tried no one liked. But it was really good! A kid pleaser for sure. (recipe from their website)TATER TOT CASSEROLE
2 lb ground turkey cooked, seasoned, drained
3 2lb bags tater tots
2 cans cream of mushroom
2 cans evaporated milk
2 cans cream of chicken
Brown meat & place in large cass. dish.
Cover with tater tots. Mix soup & milk together.
Pour over top. Bake at 350 for 1 Hour.
(One of Daddy’s Favorites!) Makes 2- 9”X13” pansI of course halved the recipe. I used ground beef and seasoned it with salt, pepper, and garlic powder. Before I put the casserole in the oven I sprinkled on some additional salt and pepper.Next time I will add chopped onion as I am browning the ground beef. I think next time I will also only use 2 pounds of tater tots instead of 3 because I think that would be plenty and will make it just a bit moister. One last change I will make next time is I think I will let it bake an extra 10 minutes or so. I didn't think it was quite hot enough and I would have like the tater tots to be a tad crispier.I give the original recipe four stars and I'm pretty sure I'll try it again. | | By: Homekeeping Heart

| | Sweet Potato Casserole | | 2007-11-04 14:05:03 | | I changed your sweet potato casserole recipe, Mom.

| | French Potato Casserole | | 2007-10-20 07:25:00 | | Serves 8Ingredients :4 pounds of Russet potatoesone cup of melted butter (use real butter)one half cup of grated onion (white, yellow or shallots)salt and pepperpaprikaThis is an amazingly simple dish and even without any kind of cheese these potatoes taste incredibly rich. Must be all that butter!Peel the potatoes. Put them in a deep bowl with water so they don't brown while you prepare them. You'll need a 9 X 13" oven proof casserole. (The size can vary a bit but you'll find out soon that everyone wants some of the "crust" so keep it larger).Slice the potatoes paper thin. I use my mandolin for this project. On level 2, I get potato slices that are a sixteenth of an inch. Uniform --and you can cut them really fast. Use your guard so you don't slip and cut yourself. If you don't have a mandolin use a very sharp knife and be careful. After the first potato is cut put a layer of slices in the bottom of the casserole. Sprinkle on a Tbl of grated onion and salt and pepper. Now put on the next layer. After this layer drizzle on some of the butter. You're going to continue like this until all of the potatoes are gone. Don't use salt and pepper on every layer. That might be a bit much. Keep an eye on how much onion you put on between layers so it can last until the last of the potatoes. Same with the butter. You want one last drizzle on top. Then top it off with a light dusting of paprika for color and even a crack of black pepper so you have those specks on top too.Cover the potato casserole with aluminum foil. Pop this in your 400 degree oven for 30 minutes. After 30 minutes take off the foil and let it bake 30 minutes more. You should form a nice medium browned crust on the top. The crust is going to be a major hit. Believe me.. Cut with a serving spoon or sharp knife and use a spatula to take it out of the casserole. It will be steaming hot. This makes great leftovers to go with breakfast or perfect for a brunch table.Enjoy! | | By: Cooking is Easy | | |

Cut the chicken escalopes in thick strips. To marinate, put them in a dish together with the lime juice, the paprika, the tarragon, the pressed garlic and mix. Cover with plastic foil and let marinate for 20 min in the fridge.Chop (coarsely) the sundried tomatoes. Heat the olive oil in the casserole and cook the chicken strips golden for about 10 minutes (at medium heat) while stirring often.Whip the yogurt with salt, pepper and the chopped sundried tomatoes and pour into casserole. Mix. Finish cooking for about 5 minutes at medium heat.Wash, dry and chop the cherry tomatoes into thin slices. Wash, dry and 'clean out' (cut stems or roots) the leaves of rocket and purslane. Cover plates with the salad and put chicken mix on top. Decorate with cherry tomatoe slices and serve immediately.Wine suggestion: Château Haut Bernicot 2000 Bordeaux A.C.Bread suggestion: FocacciaMY COMMENTS:This is an easy recipe and on top of the fresh rocket salad it makes a perfect (light) dish for the summer. You can of course serve it on a bed of rice (long grain, basmati) to make it more of a meal. The yogurt mix gives it a fresh, holiday taste (Greek/Morroccan food). | | By: Send me a recipe

| | The Creole Lady´s Sunday Casserole | | 2007-04-13 13:32:00 | | This recipe was once upon a time (in the mid -70s) obtained from a friend. Still very popular. The origin is unknown. Descendants of European settlers in the New World colonized by Spain, Portugal, France, and in some cases England, are Creole. In spite of the name, maybe this casserole has a European origin after all.INGREDIENTS:Serves 6* 1 fillet of pork (900 g), sliced* 2 big or 4 small hot sausages, Chorizo, Kabanoss, or the like, sliced* 1 ½ teaspoon salt* ½ teaspoon pepper* 1 teaspoon marjoram* 1 tablespoon wheat flour* 1 jar (195 g) sweet pickled pearl onions* 1 jar (225 g) black olives, pitted, divided into halves* 1 red bell paprika, deseeded, cut into pieces of ½ cm* 1 dl pickled cucumber (or cornichons), finely diced* 4-5 dl creamMETHOD:1. Heats the house up way too much. What I usually do is throw it all in a crock pot on high for a couple of hours and give it a stir every once in a while. You can also pour it into a casserole dish, then bake uncovered at 350 degrees for for 30 minutes, give it a good stir, then bake covered for another 30 minutes. | | By: Que Pasa? | | |
