    happy 50th birthday, chicken ramen!

    Chikin Ramen (and yes, that is the correct “Japanese” spelling) went on sale today, 50 years ago, in 1958. Chikin Ramen was the brainchild of Momofuku Ando, inventor of instant ramen and founder of Nissin Foods (maker of Cup Noodles). A moment of inspiration struck when Ando-san watched people lining up to buy black-market ramen during food shortages after World War II and he set out to create a food that would be easily accessible to everyone. After months of development, he sucessfully created and marketed Chikin Ramen, the world’s first “instant ramen.” Momofuku Ando, who passed away at the ripe old age of 96 last year in January, believed that “Peace will come to the world when the people have enough to eat.” Mr. Ando claimed to have eaten Chikin Ramen almost every day.     Inside the Despana Basket: Pimientos in Olive Oil and Quick Chicken Chorizo Rice

    I didn't realize until I opened this jar of Pimientos, from our Despana Basket, that it was packed in olive oil. I normally buy the ones jarred with brine. The olive oil does add a bit of flavor and the fat coats your tongue nicely if eaten alone. I'm not sure it makes a big difference when cooked in a rice dish. It certainly doesn't hurt though.I wanted to make a quick one-pot meal tonight, having stood all day, and just not in the mood for experimenting. Lon just came in from the pouring rain, completely soaked, and I wanted something comforting, guaranteed to warm him up. Well, this dish worked, a cheaper and easier version of Paella, because these are the ingredients I had.     My friend, Lily, brought some rather interesting treats back from China for me: packaged meats? They were all individually vacuum sealed, making me wonder if people in China brought these with them as snacks. You could easily toss one in your purse. It could even fit in your pocket.Lon was only willing to try the chicken drummette, which was jerky-like and mostly skin with just a bit of meat. It tasted very artificial, only mildly chicken flavored, and a little like candy.Lon left the feet to me, all skin, no meat. The chicken feet came with some spicy stuff and was again, only mildly chicken flavored. The texture was pretty gelatinous. The duck feet was a little better but still gelatinous and still not good enough to eat. I really only nibbled a few bits off each one and I'd never eat any again but it was definitely an interesting experience.

    Chicken Baked Lemon / Bistik Ayam

    INGREDIENTS: 4, Spring chicken 1, Spring onions, chopped 2, Red chilies, chopped 2 cloves, Garlic, crushed 2, Medium chopped onions 1/4 cup, Peanut oil 1/4 cup, Lemon juice PREPARATION: Cut the chicken in half along the breast and backbone. Press down on each half to flatten it slightly. Combine the onion, spring onion, chili, garlic, oil and lemon juice in a food processor and process until smooth. Spoon the mixture over the chickens; cover and marinade for 1 hour or overnight in the refrigerator. Preheat the oven to a moderate 180oC. Using tongs, remove the chickens from the marinade, reserving the marinade. Place the chicken in a baking dish in a single layer. Bake for 40 minutes, or until cooked and browned, brushing occasionally with the marinade. Serve with rice or noodles, and a vegetable dish.

    Pineapple Sesame Chicken

    650 g boneless, skinless chicken, cut to bite-sized pieces 250 g pineapple, cubed 40 g sesame seeds 1 egg polenta 1 large yellow pepper 1 Tbsp brown sugar 350 ml lite soy sauce 1 Tbsp corn starch 1 large clove garlic, finely chopped On a very little oil, fry sesame seeds. Reserve for later. Beat egg, soak chicken in it and then, coat the chicken with polenta. Heat some oil in wok, fry garlic until lite brown, then add chicken. Stir fry until chicken is almost done. Take out on a plate, and use wok to fry pineapple until it's soft. Toss back chicken, sesame, soy sauce, pepper and stir fry some more. Thicken the sauce with corn starch dissolved in 1 Tbsp water.     Weekend Wokking - Chicken & Potato

    850 g potato 650 g boneless, skinless chicken breasts 100 ml soy sauce + 2 Tbsp for marinating 1 tsp brown sugar 1/4 tsp ground ginger 1/4 tsp curry powder a few drops of vinegar oil for frying 2 large cloves garlic, cut Marinate cut chicken in 2 Tbsp soy sauce for at least one hour. Cut potato into small cubes. Deep fry in oil like French fries in a flat-bottomed wok (or a regular frying pan, cause if you decide to fry it in a regular round-bottomed wok it will take forever). Place fried potato cubes onto paper towel to soak oil. Throw away leftover oil. Heat some oil in wok. Brown garlic for a few seconds and then toss in chicken. When the meat is almost done, pour in soy sauce and spices and stir fry some more. Thicken the sauce with 1 Tbsp of corn starch dissolved in some cold water.     Avid readers already know that Jessica and I avoid most fast food like the plague. Just like the plague, sometimes one can't help but catch it. So when a coupon for a free McDonald's Southern-Style Biscuit made it into my hands, I was lured in. So this morning I went an extra block out of the way to pick up the gift from America's kitchen away from home.Mickey D's was damn fast. My hot sandwich was in my hands in about 45 seconds, just enough time to pull it from the deep frier, wrap it in wax paper to hold the oil in, and hand it over. The sandwich's flavor was pretty good. It is exactly what the picture above looks like: aggressively deep-fried chicken on a biscuit. While it tasted like fried chicken, it was somehow dry. And while the biscuit was decent, although salty, it was also dry and kept sticking to the top of my mouth.The sandwich already has 420 calories, 1200mg of sodium, and 20g of fat, but it needs a sauce.
