| | Corn Prices Hit All-Time High; How About a Windfall Profits Tax on Farmers? | | 2008-06-10 23:00:00 | | As oil prices have hit record highs along with oil company profits (and thereby the returns to shareholders), many in Congress are calling for a windfall profits tax on oil companies. They argue that those profits are somehow unjustified. But what about another industry where producers are currently reaping windfalls from previous investments due to skyrocketing commodity prices: agriculture? Should we impose a windfall profits tax on farmers? According to some in Congress, a windfall profits tax on oil companies would lower the price of gasoline (which is ludicrous). Then by that logic, wouldn't a windfall profits tax on farmers also lower the price of food? But of course there is no way Congress would impose a special tax on agriculture. In fact, it constantly does the exact opposite. It gives what is in effect a negative tax to farmers (subsidies), or in laymen's terms, billions of dollars in welfare to farmers. Some of the politicians on Capitol Hill are so simple-minded th | | By: Tax Policy Blog | | |

| | The Dangers of High Fructose Corn Syrup | | 2008-05-21 06:39:57 | | High Fructose Corn SyrupBefore we get to high fructose corn syrup (HFCS), we will take a look at two other frequently used sweeteners, dextrose and maltodextrin.DextroseDextrose is more or less an industry term for glucose. Glucose isthe most prevalent sugar in the human and the only molecule that the brain can metabolize. Dextrose is refined from corn starch. It has a very high glycemic index (no surprise since it is glucose) and while it contains no fructose, it is still a simple sugar that is very readily absorbed. It is not as dangerous as sucrose but it still is a highly processed product that should be avoided.MaltodextrinMaltodextrin is also a refined product usually made from either corn or potatoes. It is multiple glucose units somewhat loosely hooked together (a polymer). Because the bonds between the glucose units are very weak, it is also very readily absorbed and has a very high glycemic index. Like dextrose it should be avoided as much as possible. | | Orphans Of The Corn: Stop The Massacre | | 2008-04-29 12:54:00 | | Just a few days ago I gave my rant about biofuels, and included an article by Arnaud de Borchgrave. As it looks, neither Arnaud's or my article were far off track. Actually, they were pretty dead on. That Biofuels were of particular fault in the economic and humanitarian crisis being felt around the world. As it looks, the failed mandate by Congress to eventually replace fossil fuels with biofuels such as ethanol, are causing problems the world over. It's hit such a point that the World Bank has called on the G7 to increase emergency food assistance as 33 countries around the world are facing civil unrest due to high food prices and shortages. And the way it's coming out, the proponents of biofuels are to blame. | | Food - Picking Fresh Corn | | 2008-04-28 08:59:00 | | Let's be honest. There is nothing in the summer time like a good hot dog, hamburger and some fresh corn on the cob. Unfortunately, with the large number of farms going out of business because of rising costs, it's hard to find a farm close by to get your fresh picked corn. Fortunately, supermarkets are aware of this and are all competing with each other to get the freshest corn possible. The question is, how can you tell if an ear of corn is fresh and how do you keep it fresh? The answers may surprise you unless you're experienced with this sort of thing. Hopefully though, by the time you're done reading this article, you'll know exactly how to pick a fresh ear of corn and how to keep it fresh once you get it home. For starters, the first thing you have to know is that corn does not stay fresh very long. So the first thing you want to do is make sure you don't buy your corn until the day you plan on cooking it. That way you are sure to have the freshest corn possible. Of course, that do | | By: Health Articles - Information on Health, Health Ca | | |
| | News: When Green Goes Commercial: Bio-Corn Fuels Gulf of Mexico's "Dead Zone" | | 2008-04-26 06:00:41 | | "Dead zones" are areas in the world's oceans where marine life can not be supported due to depleted oxygen levels. Fish can flee potential suffocation by migrating to other areas, but they are often quickly rendered unconscious and die. Even if they survive studies show a decrease in size of reproductive organs causing low egg counts and lack of spawning. Slow moving bottom-dwelling creatures like clams, lobsters and oysters are unable to escape. All colonial animals are extinguished. (More)In other words: a "dead zone" is a vicious circle turning an ocean into a desert, incapable of supporting any marine life. The most notorious dead zone is a 22,126 square kilometer (8,543 square mile) region in the Gulf of Mexico, the size of the State of New Jersey. The area has about doubled in size since scientists began studying it in 1985, a good enough reason to be alarmed. One of the main causes of the Gulf's dead zone is the Mississippi River's dumping of high-nutrient runoff from the heart of | | By: The Road to the Horizon | | |

| | Quick Chinese Chicken Corn Soup | | 2008-04-01 19:35:00 | | This is one of my favorite childhood soups. I asked my mom to make it all the time, and after dinner (traditionally, Chinese drink soup after the meal) I would drink 3 bowls. My mom makes a home-made chicken broth, which of course yields a better result, but here's a quick version that still satisfies me when I want a taste of home.Quick Chinese Chicken Corn Soup1 can (14oz-15 oz) cream style corn4 cups chicken broth ( I use Pacific Free Range Chicken Broth.)2 large eggs, beaten2 teaspoons cornstarch2 tablespoons watersalt and pepper to taste1. Heat cream style corn and chicken broth in a 3 1/2 quart pot over high heat until boiling.2. Turn down to a simmer and stir in beaten eggs. | | Palak(Spinach) and Corn Pulao | | 2008-01-01 21:15:13 | | Christmas and New Year have been heavy for me, and I mean "literally heavy", as I feel having gained a pound or two, so it's time to shift gears and turn towards some veggies and grains, giving a hiatus to the loaded desserts that I have so enjoyed making and consuming:) But with the sweet tooth that I have, there's not much time before I get back to my baking, so while I still have the enthusiasm and dedication to eat "a bit healthier and low-calorie diet", I'm going to grab on the opportunity! And when I think healthy, spinach is always at the top of my list. So, rather than the traditional Palak Paneer, I thought I'd use spinach puree in my Rice to make this delcious and pretty-looking Palak and Corn Pulao. It's basically similar to Fried rice, but just with indian flavors instead of asian spices. And to get that balance of crunch with a bit of sweetness, I added the corn kernels. It was very wholesome, and you could add a whole lot of other veggies like brocolli or potatoes, carrots or beet to this pulao. The color is very inviting and fresh-looking, and decked up with tomatoes and fresh coriander, you'll actually feel like you are "eating green"!!Ingredients3 cups long grain Basmati rice1 packet of spinach leaves1/2 medium sized onion - chopped finely2 green chillies - diced1 cup kernel corns - frozen or fresh3 bay leaves2 tsp cumin seedssalt - to taste2 tbsp lemon juice3 tbsp ghee3 tsp garam masala or biryani masala2 tsp turmeric powderchopped coriander - for garnishthin tomato wedges - for garnishMethodWash the basmati rice under running water for a couple of times to remove the starchy content. Take a rice cooker and cook the rice as you normally would. Just make sure you keep stirring them occasionally. | | | Green Rava Dhokla with Corn (Baked Dish) | | 2007-09-29 01:07:14 | | Idlis and Dhoklas have been hot favourites for weekend breakfasts or snacks. And with Instant mixes available in the grocery stores, this is a perfect way to spend less time cooking and more with friends and family. Dhoklas originated in Gujarat, India, and the traditional dhokla flour is a combination of several different flours like cracked wheat, rice, besan and other. But as we intend to keep our recipes simple, I'm going to share with you the Rava Dhokla recipe. Inspired by the Rava Idlis that I've had at my friends' places for a lot of times, I tried making a variation of the same concept by adding some new ingredients. What's more is that it is baked, hence it's very low on fat and carbs, and with corn, coconut and coriander adding to the taste, it's crunchy, healthy and delicious!Ingredients3 cups Rava (semolina) OR Gits Instant Rava Dhokla mix12-15 cashewnuts - roasted and split in halves1 cup sour curd or buttermilk (omit this if you are using the instant mix)1 cup chopped coriander3 tbsp corn kernels1 tsp soda bicarb2 tbsp oil2 tsp mustard seeds2 tsp chana dal (split-pea yellow dal)2 tbsp shredded coconut (optional)3-4 green chillies - chopped2 tsp black pepper powdersalt - to taste2 cups water (use only 1 1/2 cup if you have used buttermilk instead of curd)MethodMake the batter with the instant dhokla mix using instructions on the packet. For making using Rawa, blend it well with the curd or buttermilk and soda bicarb and keeep covered for at least 4-5 hours to allow fermentation. Meanwhile, blend half of the chopped coriander in a blender to form a puree. Now add this to the rava batter alongwith the salt, oil and water. Keep aside so the batter takes the green color of the coriander.Take a small pan, add 1 tsp oil to it, and add the mustard seeds, green chillies and the chana dal. Saute for a minute or two then add in the chopped curry leaves, chopped coriander, corn and shredded coconut. Fry together for a few seconds, then remove from flame and add this to the rava batter.Grease the plates if you are using a steamer cooker. I baked them in the oven, preheated to 275 degrees, then pour the batter in the greased trays, sprinkle black pepper powder on the top and bake for about 12-15 mins until a toothpick inserted in the center comes out clean and the edges separate from the pan/tray. Allow to cool a little, then slice into diamond-shaped pieces using a blunt knife or cutter.Serve hot with Green Ghutney! Apparantly, the Iowa Hawkeyes annualy prepare for their instate rivals, the Iowa State Cyclones, by hosting a corn-on-the-cob eating contest.Despite the yearly tradition, Iowa Vice President for Student Services Philip Jones canceled the infamous eating contest scheduled for today, because it "encourages gluttony," he said. But Iowa fans are still in luck for the Alumni Association will provide free corn on the cob prior to the start of the game. While many people, including Fan Blogs, feel that the contest is a stupid way to prepare for the Cyclones, what is really the harm? | | the sweet(corn) little lie, part one: oil | | 2007-06-17 23:01:00 | | MP3: The Last Poets - White Man's Got A God ComplexEver since September of 2001, the North American mediasphere has been continually repeating a mantra about reducing our collective dependence on oil imported from the Middle East. There are a variety of reasons for this desire. First and foremost, there is a security concern regarding Persian Gulf oil. Due to a complex web of colonialism, resource exploitation, and areligious/cultural reaction to modernity, the Middle East is a violent and dangerous place to do business. Furthermore, there is the issue of sustainability. Logic dictates three courses of action: either North Americans get used to consuming about 70% of the oil that they currently enjoy using, or instead find new local sources of combustible fuel. The third option is that which the Bush White House refers to as apocalyptic, namely the termination of the American way of life. The first option is perhaps more logically sound. Do people care enough about the irrefutable negative environmental consequences? With regards to the first question, the National Corn Growers Association (NCGA) would have us presume and accept that seeking a way to produce ethanol with a sufficient net positive energy as a replacement for gasoline is a futile academic undertaking with little or no value for public policy debate. However, this premise defeats the goal of "think outside the box" academic exercises carried out by academicians and researchers searching for answers. And a number of ramifications surround the second concern, e.g., sustainability. Is the technology sustainable? What other factors do we need to consider here? Soil erosion? Soil depletion? Where do we go from here then?Ethanol has been heavily touted as a magical elixir to solve every conceivable economic, environmental, and foreign policy question. They differ from the larger Iris by being generally bulbous and not rhizomatous. However, I. bucharica is an exception, it uses a corm-like structure with fleshy roots. It is cute yet refined Iris that also has distinctive foliage that really does look like corn. When I planted these I had read that they like a rocky hillside in their native Central Asia. I planted them in a rocky, sandy fairly inhospitable place. I knew I was taking a chance with an expensive plant (about $2 per corm) but it worked out fine. They really haven’t spread much actually I think I have lost some of the original but they are always there in the early spring, with enough flowers to make it worthwhile. The long-lived flowers are wonderfully fragrant and a cheery color. This Iris grows well in the rock garden and can be used in containers. They are Hardy to USDA Zone 4 and possibly 3. Buen Provencho!Corn Casserole1 c. dry elbow macaroni1 can whole corn1 can creamed corn1/2 c. butter1/2 c. chopped onion1 can RoTel (diced tomatoes and chilies)salt and pepper to taste1/2 c. velveeta We have lived in very warm climates, so there is nothing I try to avoid more than to use the stove. Heats the house up way too much. What I usually do is throw it all in a crock pot on high for a couple of hours and give it a stir every once in a while. You can also pour it into a casserole dish, then bake uncovered at 350 degrees for for 30 minutes, give it a good stir, then bake covered for another 30 minutes. | | By: Que Pasa? | | |
| | How Corn Ethanol is Bad | | 2007-02-03 01:15:00 | | Cross posted on Thoughts on Global Warming:President Bush has been touting ethanol as one of the best, if not the best alternative to gasoline. It doesn’t produce as much carbon dioxide. It can be made in America, using American madegrown resources like corn. That quality is not a bonus, it’s a weakness. For ethanol to be productive as a fuel, it MUST be made with agricultural waste. By using good corn, you’re being counterproductive. Using corn for ethanol misuses perfectly good food that could be used to feed people. Second, it increases the price of corn. Third, it ravages the soil where it is grown. Fourth, last but definitely not least, it’s not nearly as efficient as politicians would have you think. Corn is grown on farms. Farms don’t pick themselves. Gasoline powered machines fertilize, water and pick the corn plants. The gasoline used drastically lessens the effectiveness of corn ethanol.
