| Cranberry Jelly | | 2008-07-05 22:10:00 | | Ingredients :2 cups Cranberries3 ounces Liquid pectin (regular)1 cup Concentrated apple juice5 tablespoons Glycerine1/4 cup Lemon juice1 tablespoon Unfl.gelatin or 2 tb.freezer Directions :Wash and pick over cranberries, discarding any that are soft. Place in adeep saucepan and add fruit juices. Cover and simmer for about 20 minutes,until fruit is soft. Mash to break up any berries left whole. Strain in food mill to remove seeds. Return to saucepan and heat toboiling. Add pectin, glycerine and gelatin, stirring well. Boil for 1minute. Remove from heat. Skim and pour into hot, sterile pint jars,leaving 1/2 inch at top. Cap with hot sterile lids. Process in boilingwater bath for 5 minutes after water returns to boiling.If any jars fail to seal, refrigerate and use within 10 days or freeze forlater use. | Cranberry-Soy Milk and Green Tea Smoothie | | 2008-01-05 15:40:39 | | It is a well-known fact that breakfast is by far, the most important meal of the day. Consume a healthy and filling breakfast and it'll keep you on your toes for a significant part of the day. It not only kickstarts your body processes, but also fuels your nerve cells to prepare you for an action-packed morning! So it's imperative to include as many nutrients as you can in your early morning meal. The importance of cranberries for its anti-oxidant properties is known to most of us. Same is the case with green tea, but some of us find it hard to take in the herb tea by itself. So I decided to combine it in a smoothie. I love my smoothies to be milk-based or creamy, and given a choice I would happily add a scoop of vanilla ice cream to my concoctions:) but as we are trying to target a healthy meal, I opted for the soy-milk, which is way more easier to digest, is full of calcium and protein, and less in calorie content. Add a bit of honey and banana and you are all set for a hale and hearty breakfast smoothie!Ingredients1/2 cup frozen cranberries1 ripe banana1/2 cup brewed green tea1/4 cup plain soy milk2 tbsp light brown sugar or honeyMethodBrew the green tea using fresh leaves or tea-bags. Let it cool down a bit. Then blend all ingredients together until smooth. They are always craving for something tasty, be it sweet, spicy or savoury, and often it becomes a challenge to cook food that is healthy and tasty. That is one of the reasons I love the HotM Blog, a perfect place to share healthy recipes. Their latest endeavour is "Baking for a healthy Heart", and I think my Cranberry-Pistachio Biscottis are a perfect way to enjoy some sweet with your tea or coffee, without putting more pressure on your heart!Ingredients1 roll of parchment paper (or butter paper)2 egg whites only(not the yolk as that is what contains all the fat)1/2 cup sugar (or sweeteners if you are diabetic)1/2 cup all-purpose flour1/2 cup wheat flour2 tsp baking powder1 tbsp olive oil4 tbsp milk1/3 cup shelled pistachios - sliceda fistful of dried cranberries1/2 tspn vanilla essenceNote: This is a healthy version of the recipe, so you might have to compromise on the softness a bit. If you are looking for a cake-like richness in the biscottis, use whole eggs(with the yolk) and instead of olive oil, add 1/4th cup butterMethodPreheat oven to 350°F and line a baking tray with parchment paper.In a large bowl beat egg whites with a pinch of salt until they just hold stiff peaks. Gradually beat in the sugar while constantly mixing it.Sift both the flours and baking powder. Add this to the egg white mixture and whisk. Blend in the olive oil, milk, nuts and cranberries and beat till stiff peaks are formed and mixture holds its shape. Finally fold in the vanilla gently. Transfer the mixture into loaf pan baking sheet forming a log-shaped bar with the dough. Smooth the top with hands and a flat butcher's knife and bake in middle rack of the oven until golden, about 25 to 30 minutes.Now allow the baked loaf to cool down for 10 mins. Then slice it into biscotti-sized thick bars. Reduce temperature to 300°F.Place the biscotti, cut side down, on the baking sheet. Bake 10 minutes, then turn the slices over, and bake for another 10 minutes or until golden brown. Remove from oven and let cool. Store in an airtightcontainer.These biscottis are low in fats, and even the fat it contains is good for the heart, coming from olive oil. This recipe does not use any butter or margarine, and also eliminates the high-fat content found in egg yolks. The egg whites provide necessary protein, milk and olive oil impart softness, while nuts and cranberries provide healthy anti-oxidants, proteins and omega-3 fatty acids which all aid in keeping your heart healthy.
