One of the easiest and most satisfying way of eating seasonal fruits is by making coulis, compote or preserves out of them, without giving up their nutritional value. Raspberry Coulis is one of the preferred toppings for many desserts. Coulis, traditionally a french recipe, is a form of thick sauce made from puréed and strained vegetables or fruits, and used as a base for other sauces or as toppings...

| | Waffles are Really an Excuse to Eat Dessert as a Meal | | 2008-02-24 10:36:00 | | We had Caroline and Eddie over yesterday to break in our new waffle maker, the Villa Ware 2010 Uno Pro Belgian Gravity Waffler. It heats up quickly and makes good waffles even if you don't follow instructions, Lon! It's also easy to clean, mostly because not much sticks too it. I did spray it with PAM before heating it.We made a standard flavored waffle so that we could go all out on the toppings. We had pure maple syrup, caramel sauce, a powdered sugar shaker, and sweet cream butter on hand. I made a raspberry sauce out of frozen raspberries that I thawed, sweetened, pureed, and strained. Next a Apricot Apple Compote:10 dried tart apricots4 medium apples, peeled and sliced1 tablespoon light brown sugar1/2 teaspoon lemon zest1/8 teaspoon ground cinnamon1. Soak the apricots in 1/2 cup of water for 30 minutes.2. Reserve 3 tablespoons of the soaking water and chop the apricots.3. | | First Taste of the Dessert Truck | | 2008-02-09 08:40:00 | | I know very little about the Dessert Truck since my first taste happened last night. My sweet friend Caroline, who also loves trying new foods, brought me Chocolate Bread Pudding. The description on their menu reads, "our take on a classic chocolate custard dessert". I enjoyed their interpretation, more of a custard/pudding on the bottom and bread pudding on top. I am very much a texture person and love getting more than one. Although the Chocolate Bread Pudding hasn't made my favorites list, it was good enough that it intrigued my interest. At $5 per dessert (tax already included), it was a generous portion so I wanted to know more. It seems that they have started offering specials and will take suggestions as well. I am very excited that they serve several items warm and the Bomboloni sounds like something I have to try! | | By: FoodMayhem | | |
| | A dessert revered as tiramisu | | 2008-02-06 18:37:35 | | Working in the kitchen, has a different edge to itself. The previledge of working in the kitchen is that you get to know the history of the food, the ingredients, chemical compositons and also the combinations that makes sure the recipe goes the extra mile. As the title for this post goes "A dessert revered as tiramisu" is because i have worked with this dessert for quite sometime now. Tiramisu has a unique taste of kalua which gives it a coffee liquourish flavor and has pieces of sponge cake which are again soaked in kalua that just melts in your mouth. There are other coffee liquors in the maket but it is advicable to use the kahlua because it reatains the sponge cake pieces together, in case of other coffee liquor it soaks the sponge cakes and does not retain the shape. I would not recommend this dessert for kids under the age of eighteen.Ingredients:Whipping cream 1 PintMascarpone cheese 1 PintFor the sabayon sauceEgg Yolks 6 ozSugar 6 ozMarsala wine 5 ozLemon rind (optional)For th | | By: THE KITCHEN OPTIMIST | | |

| | Finish your fatback, or no dessert | | 2008-01-13 13:05:16 | | If you were to ask me about my greatest failing as a parent, I would ... lie, because I don't want you to have to go to the trouble of calling the Department of Social Services, "Nanny 911" or a priest old-fashioned enough to do exorcisms. But if you were to ask me about, say, my 104th most grievous failing as a parent, I would have to tell you about teaching Quinn to eat right.I mean, she knows how to chew and swallow. Her problem is that she's having a tough time assimiliating all the fine wisdom I provide about eating a moderate, varied and balanced diet."I just want you to try it" is my favorite plea, and it's a big, fat lie. As soon as she tries it, I demand she have "at least three bites." And unless you're Wolfgang Puck, by the time they're 6 years old, they've pretty much sampled your repertoire. She gives me a look that says, "Try it? It's grilled chicken and green beans. We have this twice a week. Why don't you try cooking something new, then I'll try eating it.""I don't care whether you eat or not. It's your business. My job is to merely provide the food." This is how I want to feel, how I think I should feel, but not, alas, how I feel. When I say this, Quinn immediately puts down her fork and guzzles beverage (the kid loves beverage, as long as it's not water) until she breaks my will and I bellow, "Eat some darn dinner or no dessert for you."And there it is, the craziest and unhealthiest threat of all (except for the one about gluing her eyeslids shut. Look at what it really means: "If you eat a full plate of food, I'll get you, as a reward, another plate of much sweeter, fattier, carbier food. If you won't eat what's in front of you, though, you must starve. It's 4,000 calories or nothing."It's especially nutty when the entree in question is something horribly fattening, so the voice in my head says, "Are you encouraging her to eat more fried chicken? Are you mad?"About food, yes. One of Quinn's earliest phrases was, "Daddy's on a die | | By: Ask Mr. Smartypants | | |

| | Dessert Recipes : Macadamia Nut Brittle | | 2008-01-04 10:32:00 | | Makes about 1 3/4 pounds (875 g)Ingredients :2 cups (500 ml) unsalted shelled macadamia nuts1 1/4 cups (310 ml) granulated sugar1/3 cup (80 ml) light corn syrup1/3 cup (80 ml) water1/2 pound (250 g) unsalted butter, cut into small pieces1 teaspoon salt1/2 teaspoon baking sodaPreheat the oven to 350 degrees. (180 C).Spread the nuts on a baking tray and toast them in the oven until light golden, 8 to 10 minutes, turning the nuts after 5 minutes so they toast evenly. Remove them from the oven and let them cool to room temperature. Put the cooled nuts in a food processor fitted with the stainless-steel blade and pulse the machine a few times to chop them coarsely. Set aside.Put the sugar in a deep, medium saucepan. Add the corn syrup and water and, over medium heat, bring to a boil. Continue boiling, undisturbed, until a layer of bubbles forms on top, 3 to 4 minutes. Cover the pan with aluminum foil and continue to boil undisturbed for 5 minutes longer.Remove the foil, add the butter, and stir with a wooden spoon until the butter has melted and combined with the sugar mixture. Continue cooking over medium heat, stirring occasionally, until a candy thermometer inserted into the mixture registers 300 degrees (150 C), about 30 minutes. Meanwhile, coat a 12-by-17-inch (30-by-43-cm) sheet pan with vegetable oil or spray it with nonstick cooking spray. As soon as the sugar mixture reaches the desired temperature, immediately but carefully stir in the salt, baking soda and chopped macadamia nuts. Using a long metal spatula, spread the nut mixture as thinly and evenly as possible over the prepared pan. Leave the brittle to cool to room temperature.Tips : When the brittle is completely cooled and hardened, run a clean, dry towel over the brittle's surface to absorb some of the oil. Carefully cut or tap the brittle with a mallet to break it into irregular pieces. Store in one or more airtight containers at cool room temperature. | | By: Cooking is Easy | | |

Cream them with your mixer or by hand. Make SURE the butter is soft--but not melted--or your mixture will be too gummy. Add vanilla. Mix. Add the flour and mix. That forms your crust. In a small sauce pan mix the condensed milk, syrup, butter and vanilla. Heat on medium just until it melts. You can do this in your microwave too if you prefer. Pour this warm mixture over the crust.Take the remaining pastry mix and crumble it up. Sprinkle the crumbles on top. Bake in a 350 degree oven for 30 minutes. | | Breakfast and Dessert | | 2007-11-27 08:00:00 | | Well, it's hard to believe Thanksgiving and all the foodiness that goes with it is over for another year! Turns out I will be also hosting Christmas this year, so only a few weeks until another turkey. I will post about my turkey later, but allow me to say that I feel my turkey has always been great, but this year I brined her and WOW! What a difference. To think how many years I've wasted thinking it was unnecessary. Unbelievable and worth every bit of effort! But look for the turkey post next week. As it stands, the mother-in-law is still here, so this will be a quickie!I used to love traditional Irish breakfast. Plump sausages, luscious slices of back bacon, black and white pudding, sauteed mushrooms, grilled tomatoes and of course baked beans - delicious - and a great hangover cure! But I have gotten completely sick of it since coming back to Ireland. I would love to be able to go out for breakfast and have an option or seven other than the full Irish or Scrambled Eggs and toast. So allow me to propose the alternative Irish breakfast! No recipe really, more composition!Creamy Scrambled Eggs with Irish Smoked Salmon and Brown BreadTo assemble:Creamy Scrambled Eggs (allow 2 per person)Toasted and Buttered Brown Soda BreadOrganic Smoked Irish Salmon (Forget that Norwegian and Scottish stuff! ;-))Chopped Fresh herbs to garnishArrange the bread on a plate and top with the eggs, a slice of salmon and garnish with herbs. Easy and delicious!Now... onto dessert. I am two days late, but did try one of the Murphy Brother's Ice-cream recipes. I finally managed to find oreos in this country so had to make the Cookies and Cream. This recipe is to die for. The ice cream itself is incredibly rich and creamy. I will use this base recipe over and over as both ice-cream and creme anglaise. Truly excellent. I think it must be folding in the whipped cream that does it. I would not change one thing and give it ten out of five stars! I just can't wait for th | | By: The Humble Housewife | | |

| | Caramelized Almond Strawberry and Cream Dessert | | 2007-09-21 21:01:31 | | I love almonds and pecans, and one day at a mall in Dallas, when I first tasted caramelised pecan crunch snacks, I was ecstatic. It was so simple, and yet so perfectly tasty. And then recently I tried the almonds as a topping on my ice cream sundae. Again tasted amazing! So naturally, I thought it'd be great to combine the 2 things and make a dessert, right? This inspiration led to the birth of my Caramelized Almond Strawberry and Cream dessert. I added the strawberries as they blend very well with cream and almonds, and the experiment turned out to be a rich, creamy and nutty dessert in a glass!!Ingredients1 cup castor sugar (regular sugar coarsely grounded)1/2 cup almonds - chopped and toasted1 small tin whipping Cream (you can also use Nestle Cream)2 cups fresh cream1 tspn vanilla essence1 cup sweet biscuits (almond or nut flavored work best) - crushed1 cup fresh strawberries - washed and cutMethod Dissolve 1/2 cup sugar in 1/4th cup water and add to a medium saucepan. Even today, if you visit a traditional gujarati household, 8 times out of 10 you will find their pantry stuffed with tins full of "spicy naastas" and sweet delights like matthri, shakkarpara, sukhdi, mohanthaal and more! My mom used to make them so well, and I still remember coming back from school or classes and hogging down 2-3 pieces at a time. "Sukhdi" is an easy recipe, and what makes it more inviting is the fact that it can be stored for a fortnight or so without any problems. It is not too sweet, and combines the goodness of wheat, jaggery and ghee. So here's my mom's recipe straight out of my kitchen!Ingrdients2 cups whole wheat flour31/2 cups ghee1 1/2 cup jaggery - sliced thinly4 tbsp milkMethodTake a pan, add half of the ghee to it and add the wheat flour. saute the flour on medium heat while constantly stirring.
