    Eating Our Dinner at Champs Restaurant, Indianapolis

    My husband and I decided to eat in “Champs Restaurant,” I suppose to eat in P.F Chang’s but my husband insisted that we will eat in “Champs.” And before we went there, we did walk in Canal Walk 1st as it nice outside as it’s sunny. We walked for about 30 minutes and decided to eat our dinner in “Champs Restaurant.” I did order sautéed mushrooms and spinach au gratin and my husband did order their veggie patty melt. I am glad my husband did decide to order healthier food. The restaurant is very popular as almost full tonight when we were there.

No one noticed, but I definitely felt it. For those few moments between bites of food, even as others were conversing, the entire psycho-physical world "jumped" to a higher state of being, feeling less dense, as if gravity had decreased it's pull on materiality, and "brighter", as if the fabric of all spacetime was crisper, clearer and without obstruction. Even my physical body felt as if it had the strength and lightness of a small child, full of easy vigor.My consciousness settled back after the initial "grand" jump into a higher energy level than before the jump had happened - sort of like a few steps forward and one step back, with a net gain.     A confluence of events led to not only a weekend spent with some LAMBs (virtually and in reality), but also to the usage of the word "confluence," which isn't one that I get to use very often.     Those of you who are regular readers will be aware that I love menu recipe books – especially the sort that give you a menu for every single day of the year, with the recipes for each dish. Takes the work out of planning the dinner. Doesn’t take the work out of actually cooking the dinner of course – and in the early nineteenth century, that could represent quite some work. John Simpson was cook to the Marquis of Buckingham, and he wrote a comprehensive cookbook in 1816, called A Complete System of Cookery, on a plan entirely new, consisting of an extensive and original collection of receipts ….. (it is hard to know when the title stops and the front matter begins in some of these old books). It is not certain whether the Bills of Fare for Every Day in the Year in his book are those such as he would cook for the Marquis, or are for ‘economical dishes to suit the most private families’. When he comes back in the hotel I was ready but the movie in HBO was keep wanted me to continue to watch it as the movie was good and my husband was ready to go and he changed his mind that we will just eat some food in our refrigerator and I agreed as I was not that really hungry :).     So here's a little something for my foodie homies. Tonight is "Asian Night" around my place so I whipped up a favorite of the wife's. Here's my recipe for "Uptown Eggrolls"1/2 cup dried mushrooms4 oz. Firm Tofu/Chicken1 clove garlic, minced1 tablespoon oil16 oz. bean sprouts, washed and drained2 cup small spinach leaves1/2 cup green onion, thin sliced1/2 cup bamboo shoots, thin sliced2 tablespoons reduced sodium soy sauce2 teaspoons cornstarch1 teaspoon grated ginger root1 teaspoon sugar1/4 teaspoon salt12 egg roll wrappersVegetable oil for deep fryingSoak mushrooms in warm water for 30 minutes; drain and chop, discarding stems.Chop tofu/chicken for filling. Stir-fry tofu/chicken and garlic quickly in 1 T hot oil about 2 minutes.Add vegetables, stir-fry about 3 minutes more.Blend soy sauce with cornstarch; stir in ginger root, sugar and salt.Stir corn starch mixture into tofu/chicken mixture; cook and stir until thickened.     Tuesday 19th February 2008 Attended We Care Charity Dinner @ Aljunied GRC (Eunos), Bliss Garden Restaurant, Singapore Expo at 7.30pm. The event was organised by Eunos Citizens' Consultative Committee. Of all the Chinese New Year Dinners, this one would rank the best in terms of food. The emcee for the event was an actress. "Alamak" Hui Ge also humoured the crowd with his impromptu Malay translation of the Chinese song "Xiao Wei". Mayor Zainul took almost the whole night to finish toasting everyone by stopping at every single table (more than 100). The finale was a group singing by the VIPs of the song "赢爱拼才会", a song which Mayor just sang one night ago at the Eunos Zone 3 RC Chinese New Year function.

    My husband and I went to “Sleuth Mystery Dinner Shows” it is situated in 8267 International Drive, Orlando. The price for admission including food and drinks is $49.95 per person. My husband and I arrived earlier and there are some people are there already and as I was starting hungry that time and what I like they have appetizers served by the bar or by the store and that was free and I loved it. The show was starting at 7:30. That was exciting for me, as it was my first experience having a dinner with a show. The show was hilarious, the actors are great, and I was impressed.     January 23 Our old friend Parson James Woodforde has given us much wonderful information about the dining habits of the middle class in the second half of the eighteenth century. He was clearly a man who enjoyed his food, and frequently made quite detailed report of his dinners.     2 packages active dry yeast2 cup milk, scalded, cooled to lukewarm, divided1/4 cup granulated sugar2 teaspoons salt2 eggs, beatenScant 1/4 cup vegetable shortening or margarineAbout 5 cups all-purpose flourMelted butterDissolve yeast in 1/2 cup milk. Stir in remaining milk, the sugar, salt, eggs, shortening and 5 cups flour. Beat until smooth, adding more flour as needed to make the dough easy to handle.Turn dough onto lightly floured board and knead until smooth and elastic, about 5 minutes.     January 14 ... Over a thousand people, including Queen Christina of Sweden attended a banquet give for Pope Innocent XI in Rome on this day in 1687. Mine host was His Excellency the Earl of Castelmaine, English Ambassador to Rome, and he put on a fine spread indeed – so fine that the feast remained set out “for two whole days, (according to the Roman way) that everyone's curiosity might have some share in the Entertainment”. The event was recorded by the Ambassador’s steward, John Michael Wright, and he left some details about the food. “This large table, having (as is said) these adornments in the middle, had between them, and the napkins, (which were also most artificially folded) two rows of Assiets, or Intermesses, on either side, fill'd with all sorts of relishing bits, whether salt, sweet or soure; as Pickles, Butter, slices of delicate Bacon, Bologna-Sausiges, Taratufoli, Composts, &c., all which, stood in the abovesaid order, for two whole days, (according to the Roman way) that everyone's curiosity might have some share in the Entertainment." The art of napkin-folding had impressed Samuel Pepys a few decades earlier, so it seems that it was a relatively new fashion in England. The ‘adornments’ were the incredibly elaborate food ‘sculptures’ – like the medieval subtelties or illusion foods that were not necessarily eaten but served as messages of propaganda or symbols of religious devotion, or simply – as in this case – to impress the guests with the wealth and status of the host. These ‘adornments’ were given to eminent ladies to take home – so no doubt they did second duty in eminent homes as symbols of rank and influence. Mr. Wright’s inclusion of ‘composts’ in his list seems a little old-fashioned for the time. It was already an old word to describe a ‘composition’ or combination of ingredients – as in the modern use of the word to describe a mix of garden refuse in the process

    One-Pan Chicken Dinner FOUR SERVINGSPrep Time: 10 minCook Time: 50 min One 3 1/2 - to 4-pound chicken—quartered, rinsed and patted dry 2 1/2 tablespoons extra-virgin olive oil Salt and pepper 5 yellow-fleshed potatoes, such as yukon gold, each cut into 4 wedges 4 thin carrots, peeled and cut into 2-inch lengths 4 thin parsnips, peeled and cut into 2-inch lengths 10 thyme sprigs 1. Position a rack in the upper third of the oven and preheat to 425°. Place the chicken in a large roasting pan, rub with 1/2 tablespoon olive oil and season with salt and pepper. Roast for 10 minutes.2. Meanwhile, in a large bowl, toss the potatoes, carrots and parsnips with the remaining 2 tablespoons olive oil and season with salt and pepper.3. Place the vegetables around the chicken and scatter 8 thyme sprigs on top. Roast until the vegetables are tender and the chicken juices run clear when a leg is pricked, about 40 minutes. Have to wrap and tag them the night before .....Phil bought these for the dinner though I heard June will be bringing some along as well.Turkey and honey baked ham (without the honey taste) from Canadian Pizza... Arrived on time though we have to cut it ourselves and its cold. Though it looks nice on the pic, the taste is not very nice though.Vege by little ol' me~ as you can see all the rest of the dishes are "heavy" food.Having some fun putting on the glow-bracelets Phil brought. Things You'll Need Holiday Baking Books Holiday Cookbooks Low-fat Cookbooks Candleholders Dinner Candles Holiday Decorations Cake Pans Cookie Sheets Napkin Rings Napkins Peelers Roasting Pans Table Centerpieces Tablecloths Decide how many guests you'll have at least two weeks beforehand, and assess how much space you have, both at the table and in your home. Compose your menu at least two weeks ahead of time as well. Plan for each person to eat between one and two pounds of food. ThreeOrganize the menu into to-do lists, including all preparation steps. Clean out as much of the refrigerator as possible one week ahead. Be ruthless in your decisions about what to toss. The more free space in the fridge, the better. Make the big trip to the grocery store a week ahead as well. Most items, with the exception of salad greensand some fruit, will keep for a week. If you're baking cookies for the party, prepare the cookie dough in advance and freeze it. If you're ordering a fresh turkey, do it now; if you're buying a frozen turkey, you still have time, but don't wait until the last minute. Remember: It's best to allow four to five days for it to thaw. (For advice on buying, defrosting, and cooking your turkey, see How Big a Bird, and Other Turkey Tips.) Floral centerpieces finish off a well-set table. Florists are busy this time of year, so order flowers now. Four Days Before Thanksgiving Start defrosting the frozen turkey in the back of the refrigerator, where it is coldest. Compose a shopping list, and purchase all non-perishables. Wait until the day before Thanksgiving to buy salad greens, fresh bread, or seafood. If you're baking pies for dessert, make the dough for the crust, roll it out, lay it into pie plates, and freeze. Two Days Before Thanksgiving Prepare the serving pieces, plates, flatware, glasses, etc. If you're using cloth napkins or tablecloths, iron them now. Make the cranberry sauce (try our Cranberry Orange Relish); a couple of days in the refrigerator will give the flavors time to develop.     With the guest list materializing, Thanksgiving Dinner 2007 is on many of our minds. I'm somewhat of a Thanksgiving novice, usually being an invited guest instead of the hostess but reality must be faced. I'm going to have to make my first Thanksgiving dinner someday. I thought everyone could share one or two of their favorite Thanksgiving recipes here so that we have a quick guide to the best of the dinner table on Thanksgiving day and add the menu to your recipe cards.     October 31 … It is hard to believe, but The Old Foodie is two years old today. The actual body is considerably older of course, but what is a paltry few decades between life forms? I want to thank you all for accompanying me on this cyber-journey. I had no idea when I started that I would accumulate so many friends along the way, and that it would be so much fun. I do hope you continue to keep reading . Birthdays mean birthday dinners, so I looked around for a virtual celebrity chef to cook for me today. In spite of the fact that she was neither a celebrity (merely married to one) nor a cook (one had staff to do that sort of job in her day), and her style of food is not to my taste (being very BV – or British Victorian), I settled on Lady Maria Clutterbuck.     We saw The Game Plan, a movie about a dad falling in love with the daughter he never knew he had. It was a great demonstration of how you can fall in love with a child very quickly. We then had dinner out and now the boys are happily playing video games in the hotel room while Bart and I catch up on some online stuff we need to do.Tomorrow we're hoping it doesn't rain.     Today is going to be a long run for my friends and I at Team in Training so I decided to make a nice, carbohydrate-heavy dinner for us last night. Hilary, Nicole, and Tracy and I have been running together for months now and I promised them a fabulous dinner. The first three dishes were:Spicy BBQ Chicken: I used only chicken legs since I'm a big fan of dark meat and I started them off on the grill but finished them in the oven. I also grilled some pineapple to serve with it.Purple Apple Slaw: One of my favorite recipes to serve to guests. It's just a gorgeous color and always a hit!Absolute Mexican Cornbread: This time, I only used Cheddar since I didn't have Monterey Jack but I prefer the recipe as is.Then, for the last two, I didn't use a recipe (sorry...) so I'll give a description.Curried Potatoes: Potatoes are boiled till tender and cut into large dice. They are sauteed with some minced onion, cumin, tumeric, and curry powder. Season, then top with fresh cilantro.Asian Broccoli Pasta Salad: This pasta salad is basically pasta, blanched broccoli, and shredded cucumber sprinkled with sesame seeds, chopped cilantro, and chopped scallions. The dressing is soy sauce, sugar, rice vinegar, olive oil, sesame oil and ground ginger.It was a really enjoyable meal. And to drink we enjoyed cocktails of Looza and Seltzer (soda water) -- no alcohol before a run.For more great pictures, check out the Flickr set.

    A perfect way to end your Easter meal is by enjoying these little yummies which are about as fun to make as they are to eat. Enjoy! Ingredients: 2 egg whites1/2 cup white sugar2 cups coconut1/2 teaspoon red food coloring1/2 teaspoon blue food coloring1/4 teaspoon yellow food coloring1/4 teaspoon blue food coloring What’s next: Using a fork, lightly beat the egg whites. The egg white is beaten enough when there are not stringy bits of egg white hanging off the fork.Mix in the sugar and coconut. Divide the mixture into three even portions and place each portion in a bowl. Add red food coloring to one bowl and mix to combine. Add blue food coloring to the second bowl and mix to combine. Add yellow and blue food coloring to the third bowl and mix to combine.Place 1/4 of a cup of mixture onto a baking paper covered oven tray. Using the back of a tablespoon, press the spoon into the mixture to form a hollow nest area. Bake at 375 C, or 175 C for 8 to 10 minutes. Fill with small Easter eggs as pictured. Eat well & Laugh often

    Get ready for Easter dinner with this wonderful leg of lamb recipe straight from Williams-Sonoma. Roasted Leg of Lamb Ask your butcher to bone and butterfly the lamb, which involves cutting the meat almost all the way through so it can be opened up to lie relatively flat, like a book. 3 garlic cloves, finely minced3 Tbs. chopped fresh mint3 Tbs. chopped fresh oregano2 Tbs. olive oil, plus more as needed1 tsp. kosher salt, plus more, to tasteFreshly ground pepper, to taste1 boneless leg of lamb, about 4 lb., butterflied2 Tbs. wild game demi-glace or white wine1/2 cup chicken stock2 Tbs. unsalted butter Preheat an oven to 350°F. In a small bowl, combine the garlic, mint, oregano, the 2 Tbs. olive oil, the 1 tsp. salt and pepper. Place the lamb on a work surface and spread the herb paste evenly on the meat. Roll up the lamb and tie with kitchen string at 2- to 3-inch intervals. In a roasting pan over medium-high heat, warm enough oil to coat the bottom of the pan. Add the lamb and brown on all sides, 4 to 5 minutes per side. Transfer the pan to the oven and roast, turning the lamb every 20 minutes, until an instant-read thermometer inserted into the thickest part of the meat registers 130°F for medium-rare, about 1 hour. Transfer the lamb to a carving board, cover loosely with aluminum foil and let rest for 15 minutes. Skim the fat from the pan and set over medium heat. Add the demi-glace and stock and cook, stirring to scrape up the browned bits from the pan bottom. Strain the sauce into a saucepan, set over medium heat and cook until thickened, about 5 minutes. Whisk in the butter 1 Tbs. at a time, and season with salt and pepper. Snip the strings and thinly slice the lamb across the grain. Arrange on a warmed platter and pass the sauce alongside. Serves 8 to 10. Eat well & Laugh often

    Mom's Birthday Dinner

    We wanted to take my mom out to a fancy restaurant for her birthday, but she asked us to cook instead. My mom is my biggest fan as a chef, which of course makes it even more fun for me. Lon and I decided on a Latin-inspired menu.The menu:Picadillo Phyllo TrianglesBaja Fish Taco CupsJicama and Orange Salad with Cumin DressingPaellaTriple Layer Devil's Food Cake with Cream Cheese FrostingFor the Picadillo Phyllo Triangles, Lon made the Picadillo. First he sauteed a large yellow onion (diced) and five diced garlic cloves in a third cup of olive oil plus plenty of kosher salt and black pepper. Once soft, he added the ground beef and six bay leaves, breaking up the meat as it cooked. Once the meat was almost cooked, he carmelized half a can of tomato paste, then deglazed with red wine vinegar. To finish he cooked it down (for about 30 minuites) with chopped capers (and brine), diced tomatoes, plenty of chili powder and cayenne powder.I had some left over maduros and store-bought phyllo dough. To assemble, cut the phyllo into approximately 2-inch strips. Lay one strip down and brush with melted butter. Lay another strip on top and brush with butter. Lay the 3rd strip on top and then place a little piece of maduros and a little picadillo at one end. Fold over to make a triangle shape and roll triangle over triangle till you reach the end. Brush a little melted butter at the end to stick it to the triangle. I made the triangles the day before and froze them. To serve, bake at 375 degrees F for 15 minutes.The Baja Fish Tacos is one of my favorite ideas ever. The presentation is adorable and all the ingredients can be prepared the day before and assembled before serving. Lon marinated swordfish (for about 90 minutes) in a dressing made of freshly-squeezed grapefruit juice, olive oil, diced garlic, ground onion, salt, pepper, cayenne powder, and ancho chili powder. The fish is grilled, cooled, and cut into small dice. I made a Spicy Mango Salsa (1/2 the recipe) with only half the amount of ginger. We bought Tostitos Baked Scoops. To assemble, put a little fish in each cup and top with salsa, serve immediately.The Jicama and Orange Salad was inspired by a recipe I saw in Rick Bayless's cookbook, Mexican Kitchen. He makes a Jicama appetizer that sounds great but uses lime juice. My mom is allergic to lemon and lime so I decided to make a salad with most of the ingredients and make my own cumin dressing. The salad base was baby spinach, topped with jicama, mineola oranges, radishes, and cucumbers. My dressing (sorry I didn't measure quantities) is made with white balsamic, minced garlic, whole grain mustard, cumin, and olive oil. The salad was very refreshing and almost a palate cleanser.The paella, is loosely based on a recipe, but each time Lon makes it, it's a bit different. We've written extensively about the recipe, and even provided tips. This time, we used a new chorizo brand, that we picked up from Murray's Cheese Shop, it was from Rioja and was a bit smokier than most American-made chorizo. We also limited the seafood to clams and shrimp, and used more chicken and chorizo, to round out the balance of proteins.The Triple Devil's Food Cake recipe can be found in The Cake Bible, by Rose Levy Beranbaum. I used a recipe for the cream cheese frosting but reduced the sugar by almost 25%. The cake itself had a light, bouncy texture, which melted in our mouths. I pressed sliced almonds on to the side to decorate the cake -- everyone loved it.For more pictures of our fiesta, check our the Flickr set.
