    An important flavour.
    2008-05-05 14:30:00
May 4 Nineteenth century scientist became intrigued by a substance that they referred to as ‘osmazome’. Osmazome was a substance - or perhaps it was a concept - that had been recogniseable to gourmets everywhere for ever, but was difficult to pin down. Was it a taste? A smell? A single substance? A combination of substances? It was first given its name by a French scientist, M. Thénard, in first few years of the nineteenth century, and was finally defined by the Oxford English Dictionary as “A name formerly given to that substance or mixture of substances soluble in water and alcohol which gives meat its flavour and smell; (more generally) meat juice or extract.” Brillat-Savarin, in his Physiology of Taste, described it thus: “Osmazome is the most meritorious ingredient of all good soups. This portion of the animal forms the red portion of flesh, and the solid parts of roasts. It gives game and venison its peculiar flavor. … Osmazome, discovered aft

    What flavour scones?
    2008-03-23 16:02:00
March 24 ... I know exactly what made me decide to feature ‘scones’ today. Sheer astonishment at the degree to which the human cook will go to adapt, modify, and ‘improve’ a perfectly good recipe, that’s what. I was quietly browsing an Australian cookbook (undated, but probably late 1930’s), not seeking to be shocked, disgusted, or even intrigued when I came across a chapter of recipes for ‘scones’. We have tackled the subject in a previous post, but just to remind you, a scone is ‘generally, a soft cake of barley- or oatmeal, or wheat-flour, baked in single portions on a griddle or in an oven. Also with defining words, denoting varieties of this cake, as butter, potato, soda, treacle scone; brown scone, one made of whole meal; drop-, dropped scone, one made of a small portion of batter dropped on the griddle or on a tin and baked.’ It is better known to some of you ‘over there’ is essentially the same thing as a ‘biscuit’. Herbs are the leafy greens of herbal plants, shrubs or tree (bay leaves) and come from temperate climates. There are many types of herbs such as the culinary herb which is used to impart a distinct flavour of foods, enhancing or accenting them. Then there are the medical herbs which can be used either as an infusion be consumed (as a tea), place over a wound as an antiseptic, for healing and for skin cleansing or treatment. Lastly there are the aromatherapies herbs which help soothe, calm and relax us. Usually only a small amount of herbs is needed to add flavour (a tablespoon or two) and is normally chopped or torn up to release the flavour and would not be eaten by itself. Below I present to you some of the herbs which maybe just spice up and add more flavour to your life.Common Culinary Herbs- BASILOcimum basilicumThe chopped Basil leaves fresh or dried, have a clove-like flavor and taste which is excellent for seasoning vegetables and meat- CHIVESAllium schoenoprasumBesides decorat

Did you get your BlogRush flavour yet?
    2007-09-28 07:08:47
As you can see, I’ve been promoting BlogRush a fair bit recently. I do think they have something good going on which might be successful. Just like in my previous post, only time will tell whether they succeed or not! One thing is for sure, if they succeed, it should help bloggers get more targeted traffic to their site. A few days back BlogRush had released what they called “Flavours“. This allows you to customize the “skin” of the widget without having to change any code on your site. Just a configuration change at your BlogRush Dashboard will do the trick. This should help you blend in the widget into your blog theme. Share This © 2007 Anuj Seth
