Masa pan: 400 gr de harina integral, 100 gr de harina de fuerza, 20 gr de levadura fresca, una cucharadita de sal, 400 gr de líquidos (20 agua y 20 leche).Preparación : Preparar la masa madre juntando todos los ingredientes, y dejar reposar toda la noche tapado con papel de film. Al día siguiente, mezclar los líquidos con la levadura fresca y la sal y diluir bien. Reservar. En un bol mezclar la harina integral y la harina de fuerza. Hacer un hueco en el centro y añadir la mezcla de líquidos. Remover y añadir la masa madre preparada el día anterior. Amasar, añadir más harina si la masa lo pide. Amasar durante 10 minutos y dejar reposar más o menos 1 hora hasta que doble su volumen.Volver a amasar y dar la forma deseada al pan. | Masa para pizza integral | | 2008-07-05 20:18:00 | | Ingredientes : 300 gr de harina integral, 200 cl de agua templada, 2 cucharadas de aceite de oliva virgen, 20 gr de levadura, una cucharadita de sal. Preparación : En primer lugar, debemos mezclar la sal con la harina integral, y por otra parte disolver la levadura en el agua templada con las dos cucharadas de aceite de oliva virgen.A continuación, en un recipiente tipo ensaladera o bol grande, añadimos la harina integral y poco a poco el agua templada hasta formar una masa consistente y elástica que no se pegue. Una vez formada la masa, le damos forma de bola dejándola reposar tapada con un trapo húmedo hasta que duplique su tamaño. Amasamos de nuevo la bola y la vamos extendiendo poco a poco dándole forma de plato grande de un centímetro de grosor.
