    One of my first exposures to cheese and tomatoes, besides in a sandwich, was the Vegetarian Lasagna, a scrumptous, rich dish with a thick gravy and cheese flavored heavily with Italian herbs and layered with veggies and noodles. This was such a lovely way to enjoy the noodles that I instantly became a fan. So this thanksgiving, I thought I'd share with you this vegetarian main course that you and your guests would absolutely enjoy! Plus, it's so easy to tweak the basic recipe to add your choice of vegetables or meat and turn this into one of your favorites!     Ingredients :2 pounds lean ground beef1 large sweet onion, chopped2 garlic cloves, minced1 tsp. cuminOne half tsp. red pepperOne half tsp. cayenne pepper1 14-oz. can diced tomatoes, drained12 corn tortillas1 16-oz. container cottage or ricotta cheese1 cup Monterey Jack cheese, shredded2 cup lettuce shredded2 fresh tomatoes, diced1 cup black olives, sliced1 cup Cheddar cheese, shreddedBrown ground beef in a large skillet with onion and garlic. Add cumin, red pepper, cayenne pepper and diced tomatoes and cook over low-medium heat for several minutes. Remove from heat. Place 6 of the corn tortillas and the bottom of a lightly greased 13 x 9-inch baking dish and spread meat mixture evenly over tortillas. Top with remaining tortillas. Combine ricotta and Monterey Jack cheeses and mix well. Spread cheeses over tortillas and bake at 350 degrees for 30 minutes. Remove from oven and top with lettuce, tomatoes, black olives and cheddar cheese. Slice and serve.Tips : Use fat free tortillas. ...

    Tomato lasagna with pesto and Serrano ham

    Preparation: 30 minutesCooking time: 45 minutesRecipe for 4 people if part of meal - but suffcient for 2 as only dishIngredients:100g Serrano or Ganda ham (slices)400g mozzarella60g ground parseman6 fleshy tomatoes3 spring onions3 garlic cloves30g pine nuts1 bouquet of fresh parsley1 bouquet of fresh basil1 dl of tomato juice100g tomato puree/paste9-10 lasagna leaves8 tablespoons of olive oilpepper and saltChop the garlic. Peel the tomatoes (put them shortly into boiling water and youc an peel them easily), take out the seeds and cut in cubes. This is a bit time-consuming and messy, but nothing beats fresh tomatoes.Take a cooking pot and start frying the garlic golden in 4 tablespoons of olive oil. Add the tomatoes, the tomato puree and the tomato juice. Cook for 15 minutes on medium heat and let cool off.To make the pesto: put the parmesan, the parsley, the basil, the pine nuts and the rest of the olive oil (4 table spoons) in the blender and season with salt and pepper. If the mix is too dry, add a bit of olive oil.Cut the spring onions in rings and the mozzarella in cubes or slices. Mix in the pan with the cooled down tomato sauce. Check seasoning and add pepper/salt.Take one rectangular baking pan - size approx. 20x25cm (or 4 individual small pans) and start layering* the tomato sauce and the lasagna leaves (starting with a layer of tomatoes). End with a layer of lasagna leaves. Spread the pesto on top (over entire surface) and ad the ham slices.Put the dish 30 minutes in a pre-heated oven on 180°C (350°Fahrenheit/gas mark 4).MY COMMENTS:Quite an easy and yummie lasagna recipe which you can make vegetarian buy taking out the ham (and adding any other vegetable instead).*You can also make this lasagna more meaty by already adding a few slices of ham inbetween the layers. NB: Adding more Italian ham, makes the whole dish more salty, so go easy on the seasoning of the tomato sauce.You can of course buy the pesto instead of making it yourself....

    Today is overcast and rainy which makes it the perfect weather for cuddle-up comfort food, a good book and nuzzling with your pet. Enjoy this delicious recipe for a comfort-the-soul slow cooker / crock pot lasagna. Ingredients: 1 lb. ground beef1 onion, chopped3 cloves garlic, minced1 large jar spaghetti sauce8 oz no-boil lasagna noodles16 ounces mozzarella cheese, shredded1 lb. ricotta cheese1/4 cup milk1 egg1/4 cup Parmesan cheese, shredded1/4 cup Romano cheese, shreddedS & P, to taste In a large skillet- brown beef, onion & garlic. Drain. Add spaghetti sauce into meat mixture & mix together. In a medium bowl- mix together ricotta cheese, milk & egg. Beat until smooth & mix in the mozzarella, Parmesan & Romano cheeses. Get out your slow cooker or crock pot & spray down bottom & sides with non-stick spray. Place 1/4 of the meat & sauce mix at bottom of crock pot. Put a layer of noodles on top. Put 1/3 of cheese mixture on top, then repeat with sauce, noodles & cheese for another 2 layers. Top with meat sauce. Cook on low for 4-6 hours or until noodles are tender or until you’re tummy can’t take waiting any longer. Look out for ‘I Can Never Say No to Chocolate Pudding Recipe’ post coming soon.
