    Mango is one of my favorite fruit as it is tasty especially in making mango shake or eating it by itself. Mango can be grown everywhere in any tropical countries. I would like to share to my readers what I have read about mango. It contains Vit. B and C aside from important minerals salts. It is nutritious and curative and it can be considered as special fruit since it is better than lemon for scurvy, diseases of the gums, suppuration in the mouth, tooth ache and loose of teeth. Whoever eats mango often purifies the blood, prevents the accumulations of the mucous of the throat and respiratory tract, cough, diseases of bronchial tubes, intestinal laziness, fevers and others. Since I read about mango, I am going to eat more as it purifies my blood (lol). Whoever out there can read, you may eat now frequent mango.     Mangos are showing up at the markets, this is a great way to eat some;Mango Pudding Ingredients:2 envelopes (1 tablespoon) unflavored gelatin3/4 cup (175 mL) sugar1 cup (250 mL) hot water3 cups (750 mL) pureed fresh mangoes1 cup (250 mL) 2 percent evaporated milk8 ice cubeslime wedges, fresh mango slices for garnish Preparation:Add gelatin and sugar to hot water and mix until dissolved and smooth.In large bowl, mix mango puree, evaporated milk and ice cubes. Pour gelatin mixture into mango mixture and stir until ice cubes are melted. Pour mixture into jelly mould and chill until set, at least 3 hours. To serve, dip jelly mould briefly in hot water then turn pudding out onto platter. Squeeze on some lime juice, garnish with mango slices if desired and serve. (Best eaten within a day). Serves 8.

    Lon's friend Justin gave us some lamb shoulder chops the other day and I thought hmm, interesting. I had never had lamb shoulder chops before. I made them for lunch today and I'm hooked. It's a great cut of meat!!I needed to make a quick lunch with the 1/2 inch thick lamb shoulder chops so I decided to rub them with a Moroccan Spice Blend. Use a generous amount and then throw them on a the grill for 4 minutes per side (for medium rare).I served it with an amazingly refreshing Mango Raita which was perfect with the strongly spiced lamb. While I can't take credit for the recipes, I can take credit for the pairing. It was a such a great meal, you won't believe you made it in less than 2o minutes!

    woke up around 3pm. didn't feel up to going out. so, I just laid there in bed for like 2 hours just staring at the ceiling. while laying there doing nothing, I thought about that tv series - heroes. and remembered david letterman's offer of lending me 5 episodes of season 2. this single thought was what got me to get up. after a quick phone call to david letterman to confirm the offer was still good, I got up and showered. the time was around 5pm. we agreed to meet at 10pm so that I could pick up the cds. 10pm was still about 5 hours away. so, guess what I did?played universe at war for a few hours. had a bowl of cereal, a banana, and a cup of coffee for my "late" breakfast.at 9pm, I took off to meet up with david. got there early. checked out his place. NICE. we traded notes about some things while he got me the cds for season 2 of heroes. and then that was it. we said our goodbyes. and I went over to the big T for a look see. the place was packed. no seats. so,

    Mango and Mascarpone Cheese Tart

    Pies and Tarts have been a pride of bakers and dessert restaurants since quite some time now, and though I've baked a lot of cakes and cookies, Tarts were one thing I had never tried. So after visiting a lot of dessert cafes and seeing their beautiful and delicious line-up of delicacies, I was tempted to try one myself too. The obvious choice would have been a Fruit Tart, but then I realized that there's just one favourite fruit for me in the whole world, and that would undoubtedly be "The Mango". And thanks to Food Network and my husband's love for cheese, I was also introduced to another famous dessert ingredient which makes it creamier and tastier without adding much of anything else, and that is "The Mascarpone Cheese". So when I read about the "Hay Hay Its Donna Day Event" featuring Tarts this time, I got a reason that I was looking for to try my skills with this dessert. So here's presenting the Mango and Mascarpone Cheese Tart that is sure to take your breath away!!IngredientsCrust2 cups all-purpose flour1/4 tsp salt3/4 cup unsalted butter at room temp3/4 cup white sugar1 egg1 tsp vanilla essenceFilling1 package mascarpone cheese (or light cream cheese)sugar - to taste if needed1 cup mango puree2 fresh mangoes - cut into thin slices or pieces (canned mango slices will work too)1 tsp cardamom powder (optional)5-6 saffron strandsMethodYou can buy the ready-made pie crust from the market, or even use the small mini-tart foil containers to make your work easier. Below you'll find a recipe that I used for my crust.In a medium bowl, combine flour and salt. In another bowl, blend butter and sugar until creamy. Add egg and vanilla essence and beat well. Add flour mixture slowly and blend just until mixed. Do not beat too much; this has to be thicker than a cake mix. Roll the dough into a disk using a rolling pin and some oil and flour, into a small disk the size of a cake. Now cover and refrigerate for a little over an hour.Preheat oven to 350° F. remove the dough from the fridge and place on a lightly-dusted pizza pan. Pizza pan has no edges, hence it is easier to remove the crust after it is baked. You can use a regular tart or pie shell if you are comfortable with those. Bake for 15-20 minutes until golden. Allow the crust to cool down to room temperature. (Crust can be made a day in advance also and kept.)Combine the mango puree and the mascarpone cheese and whisk until smooth. Add the sugar, cardamom powder and saffron, then mix well and spread the mixture on the cooled crust. Arrange the mango slices on the top. Freeze it again, and transfer from the freezer to the refrigerator an hour before serving.Cut the tart into small triangular pieces. You can garnish each serving with whip cream and raspberries or cherries if you want. This will be a wonderful dessert for your friends and family! My crust came out a little thinner than I'd expected, but it gave more flavor to the Mango, and that made my day!Tip: The saffron and cardamon added a subtle flavor that went well with the mango.     I was eating my late afternoon quickie meal in the middle of Wenceslas square. In front of a tiny red car that was reflecting in the water. But I hadn't finished it and the old lady came and drove away. So I took a picture of this Mango ad that is on one of the old buildings at Wenceslas square.Actually Prague's city hall decided to dramatically lower the number of those kind of ads. They don't want them to cover Prague houses. Usually they are used when the house is being reconstructed. To cover the scaffolding.I read an interview with the head of Prague's institution that takes care - among others - of the renovation of Prague's statues and sculptures. He said his idea was to offer the place on the scaffolding to advertisers in exchange for financing the renovation. Unfortunately, he wasn't successful at his superiors. I think this is a smart idea as there is only a very limited budget for renovations.
