Hoosierteacher stood before the crowded lecture hall at MHR University. Styg, Guru, Zappa, mdierk( the A students) were all in the front row, eager to learn. Firstfan was in the back with his dunce cap on. All of the students were there. Super7 and Jon Tollerud were hoping for an in-depth discussion of the now famous 3-3-5 defense. But instead Hoosierteacher had some unusual items in front of him.
When the class began, he wordlessly picked up a very large, empty mayonnaise jar and proceeded to fill it with golf balls. He then asked the students if the jar was full. They agreed that it was. Hoosierteacher then picked up a box of pebbles and poured them into the jar He shook the jar lightly. The pebbles rolled into the open areas between the golf balls. He then asked the students again if the jar was full . They agreed it was.

| Make Your Own Homemade Mayonnaise | | 2008-03-09 04:22:00 | | Ingredients:- 2 Eggs- 1/3 cup Sugar (80mL)- 3 tbsp Flour (45mL)- 1 ¼ tsp Dry mustard (6mL)- dash Black pepper- 1 cup 1% milk (250mL)- ½ cup Vinegar (125mL)- 2 tbsp Margarine (30mL)Method:Beat eggs. Add sugar, flour, mustard and pepper. Gradually blend in other ingredients. Scrape the mixture in a saucepan and set the pan in a larger pan of boiling water. Cook, stirring often until it thickens. Refrigerate. Keeps for several months.Enjoy your own homemade mayonnaise. :)

The formation of mayonnaise is really interesting to watch and ever since I had so much fun making it the first batch, I couldn't wait for a good enough excuse to do it again. And what better excuse than a BLT for lunch?I wanted to use our very special olive oil called Adamo which we discovered at the market and can now source from a website. I wanted to see how the oil effects the flavour of the mayonnaise. For the basis of the recipe, I started from Heston Bluementhal's basic mayonnaise recipe found in his Family Food cookbook. The choice of mixing bowl, as Heston describes, is critical. I made the mistake of starting in my glass bowl but had to start over when after 50 millilitres of oil, I realised that it wasn't thickening. A round bottom bowl should be used, but it is important to be more convex than not. I had a plastic IKEA one on hand that was perfect last time round and worked just as well this time. A number of different types of 'loosener liquids' can be used; water, vinegar of any sort, lime or lemon juice. To match the almond and pepper of tones of the extra virgin olive oil, I used a lime, although lemon would be fine. I would use vinegar if I wasn't looking for a flavourful outcome.As an extra note, for any of our bacon dishes we always use Duchy Original Back Bacon.
