    The First Time I Made Meringue

    When I was young, I want to bake cakes, pastries until now, but I never get chances because of busy schedules. Awhile ago, I made meringue sandwich. It's a simple food for merienda time. It was my first time to make one, but it taste good, in fairness.I want it to look like this , but it never happened. I don't have to show in picture, but it taste a real meringue. I'll try to make one again next week. I am sure, it will be a successful one.

    Dessert Recipes : Lemon Meringue Pie

    Ingredients :One half cup sugar3 eggs, separatedOne quarter tsp. vanilla1 cup milk2 Tbsp. butterOne quarter cup lemon juice1 pie crust, bakedOne quarter tsp. cream of tartar3 tsp. sugarCombine one half cup sugar, egg yolks, vanilla, milk, butter and lemon juice in a saucepan. Cook over medium heat, stirring constantly, until mixture thickens. Pour into baked pastry shell. Place egg white, cream of tartar and 3 tsp. sugar in a small bowl and beat until stiff peaks form.     Lemon Meringue Tart in Honour of my Mom!

    My Mom is a great cook, but she never really did the whole baking thing. Perhaps my trepidation towards baking stems from hers, but I've always preferred actual cooking to baking any day. My brother and I used to give Mom such a hard time that all the other kids came home to home made cookies and brownies - we were joking of course - but I hope she didn't ever feel guilty! She was one of the few working Moms in our ex-pat community and was often abroad on business.About thirteen years ago Mom got it into her head that she was going to make a lemon meringue pie. I can't remember what the event was, but I know I was having some friends over. Being the smug teenager I was, I laughed at her, thinking it would never happen and was almost embarrassed that she was even going to try it! Well try it she did and succeed did she ever! I offer, in way of an excuse, the incompetancies of British Telecom, who went out of their way to cancel our broadband connection and not show up on no less than 2 occasions. I know I should have found another way to be with you, my dear one, but to be honest the offerings I had for posts would have paled in comparison and would not have been worthy.Please accept this strawberry meringue cake laced with vodka (I know how you like vodka) as a gesture of good will. I made one for you, dear Daydream delicious..., and the other as a house warming gift to my new kitchen. I can't wait for you to meet! So much so, I think we should all meet up at least once a week from here on in!Looking forward to hearing from you,Much love, BonnieStrawberry Vodka Meringue Cake1 punnet of strawberries125mL vodka (to taste)3 tablespoons demarerra sugar3 egg whites1 cup of castor sugar1 teaspoon vanilla1 teaspoon cornflour1 teaspoon white vinegar50g ground almondsWhipped creamHull the strawberries and slice in half. In a bowl mix the strawberries with the demarerra sugar and vodka. Cover and leave in the fridge.Preheat oven to 160° Celsius. Prepare two 23cm cake tins by lining the base with grease proof paper and oiling the sides with sunflower or rapeseed oil. Whisk the egg whites until they begin to froth. Start to add the castor sugar, 1 tablespoon at a time. The egg whites should be forming stiff peaks by this time. With the last tablespoon of sugar add the cornflour. Fold in the vanilla and vinegar until combined. Finally, fold in the ground almonds.Divide the meringue between both cake tins and bake for 45 minutes. Leave to cool for 10 minutes then remove onto a wire rack to cool completely. Assemble the cake by placing half of the strawberries on the bottom layer, cover with cream and place the remaini

    I do not know why this meringue cake is named Brita Cake. I can only guess.In 1960, a magazine arranged a Swedish Cake Championship. The winning recipe was a Pinnocchio Cake with an airy layer of meringue, chopped walnuts and whipped cream; baked in a round spring-form cake tin with separate bottom.Through the years, I have seen many varieties of this cake; often with fillings of whipped cream mixed with berries or fruit.
