    A Perfect Springtime Dessert with StrawberriesMeringue4 egg whites, room temperature3/4 cup sugar1 tsp cornstarch1/2 tsp lemon juice or white vinegarCream1 cup whipping cream3 tbsp creme fraiche or sour cream2 tbsp sugar5 tbsp raspberry juice, from fresh or frozen berriesFruitAssorted fresh berriesIcing sugar, for garnish For meringue, preheat oven to 225 F. Trace 8 4-inchcircles onto 2 sheets of parchment paper (4 persheet). Turn paper over (so ink doesn't transfer tomeringues) and line baking sheets. In a mixer fittedwith the whisk attachment or with electric beaters,whip egg whites until frothy. While whipping graduallyadd in sugar and beat until stiff peaks. By hand, foldin gently cornstarch and lemon juice or vinegar untilincorporated. Spread onto traced circles.     Greg Olson Emerging as Coordinator Candidate in Buffalo

    Time to put the roster breakdowns on hold, folks. It seems to be speculation at this point, but it's smart speculation - Mark Gaughan of The Buffalo News reports this morning that former Rams offensive coordinator Greg Olson is a rumored candidate to replace Steve Fairchild-Mularkey as Buffalo's offensive coordinator. "Former Rams coordinator"... sounds familiar, right? Olson was a candidate for Buffalo's offensive coordinator position back in 2006, after Dick Jauron had just been hired, and as he was assembling his first staff. Current Rams head coach Scott Linehan was a new coach at that point as well, and Olson - formerly the quarterbacks coach for Jauron in both Detroit and Chicago - took up the same post with St. Louis. Don't Panic While Olson's rumored candidacy doesn't provide us with the most thrilling name out there (he's no Cameron or Martz), he's qualified for the position.     After Saturday's performance against Washington, Patrick Cowan appears to be the fan-favorite at quarterback for UCLA. He played so well against the Huskies that many believe that he, not Olson, should be the start in Westwood. But for now, there will be no quarterback controversy, as Cowan has been ruled out of the Oregon State game due to an injured right knee.Cowan's injury should allow Ben Olson to reclaim the starting quarterback position at UCLA. While most Bruin fans have sided with Cowan, Olson's potential and strong arm are too much to ignore. Cowan will never be more than an average Pac Ten quarterback while Olson could be a conference all-American.

    Day two at the combine was pretty much the Greg Olson show, it wasn’t quite the performance that Vernon Davis displayed last year, but it was close. The Miami junior tight end ran his forty yard dash in 4.45 seconds, while measuring in at 6’ 5” 254 pounds. Olson has cemented himself in the first round of the 2007 NFL Draft and might even land in the top 15 slots. Many scouts felt Zach Miller from Arizona State was the number two tight end, but he ran a slow 4.89 second forty yard dash and refused to lift (bench press) due to a wrist injury. The next best tight end behind Olsen might be Iowa’s Scott Chandler, who while measuring in at a massive 6’ 7” and 270 pounds, ran a 4.87 second 40 yard dash. The other impressive tight end was Michael Allan from Whitworth, nice size at 6’ 6” 255 lbs. He ran an excellent 4.69 (40 yard dash) and did 19 bench press reps using 225 lbs.
