    Eeerulli Bonda (onion bonda)
    2008-08-20 20:05:00
This is a deep fried savory fritter made of chickpea flour and onions. I should actually confess that i often get confused between bonda, bajji and pakoda! I don't know the difference between all these. Actually i end up using these as synonyms for all savory deep fried goodies!!!So this might be bajji/bonda or pakoda. I do not know...This again brings me back fond memories... One of my favorite street foods, i have had the previlage to eat it in expensive hotels and on the dirtiest of road sid

    Kelsae Onion
    2008-08-02 12:22:00
I stumbled across Kelsae Onions at the Farmer's Market today. They are huge! I put it next to a large regular onion so you can see how big it is. The sign said something like, sweet and great for salads, so I was hoping it would be like the onions in Greece, edible in large pieces raw! Alas, the Kelsae onions still have a bite, giving a bit too much sting for thick salad rings. They are very sweet though and could be eaten raw if thinly sliced, and are fabulous sauteed.

Deep River Snacks - Sweet Maui Onion Potato Chips
    2008-05-26 15:14:00
I picked up a bag of Sweet Maui Onion Potato Chips (made by Deep River Snacks) with lunch and we really liked them. They were reminiscent of Funyuns, which we both apparently ate as kids, but better, since we like the texture of kettle cooked potato chips more. The fancy name really just means sugar, salt, and onion powder, but in the right balance, it's quite addictive.

    Gluten-Free Spinach-Onion Dosa (Pancake)
    2008-04-30 17:14:17
Wheat flour is a major ingredient in indian cooking, and as I enjoy baking, I am constanly making cookies, muffins and cakes with all-purpose flour too. So this weekend, I had an urge to make something gluten-free, more as a challenge and a change than anything else, so I decided to make some savoury gluten-free pancakes with gram flour; we actually call them "dosa" or "puda" in local dialect. Its a great way to toss up your favourite veggies into the flour mixture and cook up something special... Please Click the Title for the Full Post

    2008-01-28 08:59:00
2 servingsBacon and blue cheese transform spinach into a stellar side. Popeye would be jealous.Ingredients :2 teaspoons extra-virgin olive oil1/2 cup thinly sliced red onion2 cloves garlic, minced1 10-ounce bag fresh spinach (see Tip), tough stems removed2 strips center-cut bacon, cooked and crumbled1 tablespoon crumbled blue cheeseHeat oil in a large nonstick skillet or Dutch oven over medium-high heat. Add onion and cook, stirring, until beginning to soften, about 1 minute. Add garlic and cook, stirring, until fragrant, about 30 seconds more. Add spinach and cook, stirring, until just wilted, about 2 minutes. Remove from heat; stir in bacon and sprinkle cheese on top. Serve immediately.Tip : The sturdier texture of mature spinach stands up better to sauteing than baby spinach and it's a more economical choice. We prefer to serve baby spinach raw.

    Spinach Onion and Cheese Souffle
    2008-01-01 14:21:28
Cooking is all about flavors, aroma, tastes, and a whole lot of imagination! It's great to experiment with different ingredients and imagine how they would pair with each other, whether they compliment one another, or result in a stark contrasting taste. Sometimes these culinary concoctions can go awry, but most of the times it's fun, and results into something that leaves a tasty impression. Luckily for us, there are some things that just "click together", like chocolate and cookies, pasta and bread, my husband and me:), or in this case, spinach and cheese!! You can hardly go wrong with Spinach and Cheese, so for my first souffle recipe, I decided to go for a safer bet. I added two of my favorite ingredients, garlic and onions, threw in a pinch of nutmeg, and we had a luscious, good-looking and healthy Spinach Onion and Cheese Souffle for our dinner. People do get intimidated sometimes at the thought of making a souffle or casserole, including me, but it's not that tough, and actually tastes great!Ingredients1 bag (16 oz) frozen chopped spinach1/4 cup butter or margarine1/4 cup all-purpose flour1 cup milk4 cloves of garlic - minced4 tbsp onion - finely choppedsalt and black pepper - to taste1/4 tspn ground nutmeg (optional)3 eggs - white and yolk separated1/2 cup parmesan cheeseMethodThaw and cook spinach in boiling water for at least 8-10 mins. Remove from water and let it drip off the water spinach in a colander; squeeze well to remove water content. Preheat oven to 350°. Grease a casserole dish (or individual ramekins)with cooking spray and keep ready. Also separate the egg whites and egg yolks.Heat butter and garlic in a saucepan over medium low heat. When butter has melted, add flour and stir until smooth and bubbling, and it turns just a little brown. Add salt and black pepper according to your taste. Gradually add the milk, stirring constantly. When the mixture is thick and boiling, remove from heat.Turn off heat and stir in egg yolks, onion, spinach, ch

    Pan-Fried Onion Dip recipe
    2007-11-30 19:51:00
Makes two cups. This dip is like the California dip that we remember from our childhood, except it’s the real thing, with slowly caramelized onions, and it’s ten times more tasty. For a real treat, I love to serve this appetizer with Eli Zabar’s potato chips plus fresh vegetables and crackers for dipping.2 large yellow onions4 tablespoons unsalted butter1/4 cup vegetable oil1/4 teaspoon ground cayenne pepper1 teaspoon kosher salt1/2 teaspoon freshly ground black pepper4 ounces cream cheese, room temperature1/2 cup sour cream1/2 cup good mayonnaiseCut the onions in half, and then slice them into 1/8-inch thick half-rounds. (You will have about 3 cups of onions.)Heat the butter and oil in a large sauté pan on medium heat. Add the onions, cayenne, salt and pepper and sauté for 10 minutes.Reduce heat to medium-low and cook, stirring occasionally, for 20 more minutes, until the onions are browned and caramelized. Allow the onions to cool.Place the cream cheese, sour cream, and mayonnaise in the bowl of an electric mixer fitted with a paddle attachment and beat until smooth. Add the onions and mix well.Taste for seasonings. Serve at room temperature.Source: The Barefoot Contessa Cookbook by Ina Garten Crown

Roasted Pumpkin and Onion Bisque (Soup) - Thanksgiving Appetizer!
    2007-11-22 13:43:43
As we drift into longer and more chillier nights, and await the first snow, our tongues and minds crave for something hot, comforting and tantalizing. And with Thanksgiving round the corner, we are also looking for recipes that would fit the occasion. And this is one time of the year when you cannot ignore pumpkins, which are mainly cultivated in western hemisphere, and are commonly found in North America, Europe, Australia, New Zealand and India. Honestly, I haven't been a great fan of using this in my recipes, maybe because I haven't developed the taste for it. But 3 days ago I tried the pumpkin soup at my cafe and the flavor struck a chord. It was creamy, rich, a bit of sweet with a touch of onions and savored with italian herbs. And the mere look of the bisque was inviting and soothing at the same time. So I thought I have to share this with my other readers who might have shied away from pumpkin recipes just like me and would never realize how wonderful this recipe could be! The

A View of Michigan's Economy Courtesy of The Onion
    2007-09-21 07:00:00
As the State of Michigan once again ponders raising taxes, it is nice to see how the rest of the country views Michigan. In particular, here are a few takes from the satirical newspaper The Onion taking shots at the state's economic woes. And everyone knows the best government policy during economic woes -- raise taxes of course.Thousands Lose Jobs As Michigan Unemployment Offices CloseLANSING, MI—In another devastating blow to the state's already fragile economy, the Unemployment Insurance Agency of the state of Michigan permanently shuttered its nine branch offices Monday, leaving more than 8,500 unemployment employees unemployed. Announcing the closings at a press conference, Michigan Gov. Jennifer Granholm called them "a tragic coda" to a once-vibrant industry that until this week defined the Michigan economy and served almost one-fifth of the state's employable population.Detroit Sold For ScrapDetroit, a former industrial metropolis in southeastern Michigan with a

ONION as anti-aging remedyANY fruit or vegetable you eat is bound to make known and unknown chemical contributions to your quest for youth. But here are ten with so much known potential you shouldn’t ignore them.Onions: A close kin of garlic, the onion too, has diverse anti-aging activity. Full of anti-oxidants, onions help prevent cancer, especially stomach cancer, ‘thin the blood,” discouraging clots, and raise good-type HDL cholesterol. Red and yellow onions (not white onions) are the richest foods in quercetin, a celebrated anti-oxidant that inactivates cancer-causing agents, inhibits enzymes that spur cancer growth, has anti-inflammatory, anti-bacterial, anti-fungal and anti-viral activity. French Market Onion Soup.
    2007-03-18 01:56:48
You might not imagine a tough World War II flying ace would open a restaurant called"Mimi's," but that's exactly what happened in the 70's. Arthur J. Simms flew spy missions over France during the war and helped liberate a small French town near Versailles. After the war Arthur ran the commissary at MGM studios in Hollywood, stuffing the bellies of big-time celebs like Judy Garland, Clark Gable and Mickey Rooney. He later joined his son Tom in several restaurant ventures including one called "French Quarter" in West Hollywood. This was the prototype for the French-themed Mimi's Cafe. In 1978, the first Mimi's opened in Anaheim, California. Today there's over 40 Mimi's in the chain with a new one opening every other week; all of them serving this amazing onion soup that can now be part of your culinary repertoire. 2006-12-25 12:32:00
Don't even try to find this one on the menu at Applebee's, because it isn't there; though it's themost popular soup served each day at this huge restaurant chain. This is the first of several bigtime soup clones we'll unveil here in the next few weeks to help get you through the cold winter months. And they're all a cinch to make. Just be sure you have some oven-safe soup bowls for this one, since we'll have to broil it a bit before serving. Under the gooey melted provolone of the original version you get from Applebee's is a unique round crouton that's made from bread similar to a hamburger bun. So that's exactly what we'll use in our clone.3 tablespoons vegetable oil6 medium white onions, sliced8 cups beef broth (Swanson is best)1 cup water2 1/2 teaspoons salt1/2 teaspoon garlic powder1/4 teaspoon ground black pepper5 plain hamburger buns10 slices provolone cheese10 teaspoons shredded parmesan cheese1.Add 3 tablespoons oil to a large soup pot or saucepan over medium/high h
