    Pan rustico integral

    Ingredientes : Masa madre : 100 gr de harina de fuerza, 20 gr de levadura de panadero, 200 gr de agua, 1 cucharadita de azúcar. Masa pan: 400 gr de harina integral, 100 gr de harina de fuerza, 20 gr de levadura fresca, una cucharadita de sal, 400 gr de líquidos (20 agua y 20 leche).Preparación : Preparar la masa madre juntando todos los ingredientes, y dejar reposar toda la noche tapado con papel de film. Al día siguiente, mezclar los líquidos con la levadura fresca y la sal y diluir bien. Reservar. En un bol mezclar la harina integral y la harina de fuerza. Hacer un hueco en el centro y añadir la mezcla de líquidos. Remover y añadir la masa madre preparada el día anterior. Amasar, añadir más harina si la masa lo pide. Amasar durante 10 minutos y dejar reposar más o menos 1 hora hasta que doble su volumen.Volver a amasar y dar la forma deseada al pan. Colocar en la bandeja del horno untada previamente en aceite y dejar reposar una media hora. Entonces espolvorear el pan con

    Day 1 At Rustico

    The alarm clock awoke me at the ungodly hour of 6:15, and I struck out the door with hopes that I had left myself enough time to get to work for my first day on time. My commute is now 25 minutes each way, and thankfully I seem to be missing rush hour by just a little bit on both ends. Ahhh.. to not have to listen to the traffic report is still pure heaven to me. I arrived at work ten minutes early, and was greeted soon thereafter by Chris who walked up and let me in. We were the first ones there. This is to be my job. To set up the restaurant before anyone else shows up and make sure we are ready to go as far as prep, inventory and overall cleanliness are concerned. The job seems to have a lot of the elements of a senior position - there is the responsibility of getting the place in shape for lunch, there is the all-important mid-day inventory and food ordering.
