    McDonald's Breakfast Bagel Sandwiches.

    Steak & Egg BagelSauce2 tablespoons mayonnaise1 teaspoon creamy dill mustard1 teaspoon vegetable oil1 slice of white onion, quartered1 14-ounce pkg. Steak-Umm chopped steak (7 steaks)4 eggs1 teaspoon butter salt ground black pepper4 plain bagels8 slices Kraft Singles American cheese1. First prepare the sauce by combining the mayonnaise with the dill mustard in a small bowl. Set this aside until you are ready to use it.2. Heat 1 teaspoon of vegetable oil in a medium skillet over medium heat. Separate the onion slices and sauté in the oil until light brown.3. Heat a large skillet over medium/high heat. Break up the sandwich steak into the hot pan and cook until brown. Drain off fat. Add the grilled onions to the meat and stir.4. To make the eggs it's best to make one at a time in a small 6-inch skillet. If you have more than one of these small pans, you can save a little time.5. Beat an egg in a small bowl with a whisk until it is smooth, but not foamy. Add a pinch of salt and pepper to the egg. Heat a small 6-inch skillet over low heat. Add 1/4 teaspoon of butter to the pan. When the butter has melted add the egg to the pan. Swirl the pan so that the egg spreads evenly. As the egg begins to cook, use a spatula to pull in a couple of the edges so that raw egg flows from the top onto the hot pan. Cook for 2 to 3 minutes, then fold over one of the edges of the egg using a spoon or fork. Fold it down about an inch. Fold the opposite end over as well. Then fold the remaining two edges over, creating a small rectangular or square mini-omelet. Flip the little omelet over and turn off the heat.6. Slice a bagel in half and place it with the faces up on a baking sheet. Grill the faces of the bagel halves in your oven, set on broil, until golden brown. You may also use a toaster oven for this step, but be sure to place the sliced bagel halves onto a small baking sheet or on aluminum foil.7.     When talking about health and fitness we also need to talk about diets. When talking about diets we also need to talk about sandwiches. This is because they are by far the most loved meal of dieters as it can seem perfect when compared to a steak or hamburger. The question we need to ask ourselves is whether a sandwich is actually helping us in losing calories or it is not doing much to help. You need to realize that the sandwich might not be as healthy as you think and might not aid in your bodybuilding or fitness diet.First of all, white bread is not a good option. Meats added to your sandwich can match up with hamburgers and fries and we also have a lot of cheese added to the mix in most cases. In fact, people usually put so much cheese that just this ingredient makes up for around half of the amount of calories needed daily. A sandwich is usually just a complete meal put between bread slices and you need to know that in most cases we are dealing with twice the serving size that is recommended by nutritionists. For instance, one tablespoon of mayonnaise has around 12 g. Most nutritionists consider that 65 grams of fat are enough in one day. If we put in three sandwiches a total of 36 g. of mayonnaise it is not that good. Also, we do know that a tuna salad sandwich combined with a quarter cup of mayonnaise has around 20 times more fat when compared with a Chicken breast sandwich.Let us think about what we can do when talking about sandwiches. First off, let us eliminate mayonnaise and mustard might be a good substitute for most individuals. Use lean meats like chicken breast, roast beef or turkey. DO not eat tuna salad sandwiches anymore and do not add multiple layers of fats. This means that if, for instance, you use ham in your sandwich, do not add cheese. White bread should be substituted with whole grain breads, of course, and add vegetables to the mix instead of fats.

    Crock Pot French Dip Sandwiches

    Yes, you read that right. I finally sucked it up and bought a crock pot. Barbara and her wonderful crock pot recipes finally sold me. I was obviously missing out. Paul was not so convinced, that is, until he had his dinner last night! Wow! I was able to get some rib-eye steaks on sale for next to nothing the other day, but didn't quite know what to do with them. Rib-eye is divine when roasted and sliced, but the steaks can be tough as they can't be cooked long enough to melt all the fat... or can they? Enter crock pot. I love a French Dip sandwich with that little pot of jus (hehe... I always love how they say French Dip Sandwich with au jus on menus, slight bit redundant maybe???) with the caramelized onions draped over succulent tender steak adorning a crusty buttery roll. So I thought I could try a crock pot version. Paul was even dubious when he saw it on his plate, but he tried it and didn't speak an entire word until his plate was clear. He's a potato man and nearly always eats his potatoes before anything else on the plate, but here the potatoes were forgotten. That in itself is a testament to this recipe! This was amazingly good and I am really pleased with my first effort without a recipe! Definitely try this, it's really something, if I do say so myself! Crock Pot* French Dip Sandwiches (serves 2) Ingredients: 1/2 lb rib-eye beef 2 white onions, sliced 1/4 cup melted butter 4 cups good beef stock** 1 tsp sugar dash Worcestershire sauce dash hot sauce salt and pepper to season 2 french rolls, toasted and buttered. Slice onions and add into pot with butter. Place steaks on top. Add hot beef stock, sugar and seasonings. Cook on high for 5 hours. Serve on the hot buttered rolls with jus on the side. Your column set me thinking about cucumber sandwiches. When I was growing up in England we didn’t have them often. They were too much of a fiddle to make on a regular basis. They were a treat for a formal tea, really the British meal as you well know, for entertaining unless you were very wealthy. They were served only on warm summer days and there were precious few of those in England. And finally, they were really upgraded bread and butter in the sense that the quality of the bread and butter was all-important and the filling was just a delightful extra to offset the taste and texture of bread and butter.     Baked Eggplant Sandwiches

    About a week ago I went to another local farmstand and in their surplus bin they had 6 sweet green peppers (made wonderful pepper and cheese sandwiches for 2 nights of dinners) and one good size eggplant for only $2. I decided to bread eggplant slices and bake them until crispy and serve them in a sandwich with slices of crusty italian bread, ranch dressing, tomato slices and lettuce. I actually ran out of room on my baking sheets so I had to freeze the remainder of the eggplant and hopefully one night soon I will be able to roast it with some other veggies and add it to couscous for a quick side dish. Here's my recipe for the baked eggplant:Ingredients1 egg1 egg white1 3/4-1 lb eggplant, cut into slices1/2 cup finely crushed italian & whole wheat breadcrumbs1/2 cup grated pecorino romano cheeseCooking SprayPreheat oven to 425 degreesStep 1 - Spray baking sheet(s) with cooking sprayStep 2 - Whisk together egg and egg whiteStep 3 - Combine breadcrumbs with grated cheeseStep 4 - Dip each eggplant slice in egg and then breading mixture, place in single layer on baking sheetsStep 5 - Spray the tops of each eggplant with cooking sprayStep 6 - Bake eggplant for 15 minutes and then turn each slice over and bake an additional 5 minutes or until crispy and golden brown
