    Once upon a time I tried to unravel the truth about risotto. The story was specifically about Risotto à la Milanaise, which is the sort of risotto you have when you want risotto in French. I came across an English interpretation of Milanaise risotto recently, and I present it here for the amusement or horror of my lovely friend Marisa, who lives all the way away in Melbourne. I can just see her now, in my kitchen, showing me how real Italians cook risotto, and waving the wooden spoon around to demonstrate that it must be all onde – like waves (did I spell that right, Marisa?). For years, in my head, that word was alonda. I just googled ‘all waves’ to find out the real word. In a pre-Google life there was a lovely woman called Lady Clark of Tillypronie. She was a prolific collector of recipes, and after her death they were published, finally in 1909. Liz had flyered at the noontime meal so folks knew we were coming, and that we were encouraging anyone who wanted to speak out about why the soup kitchen (and the food pantry) are so important to them to do so.Some time this week-- maybe even tomorrow-- the Massachusetts Legislature will vote on an amendment to provide funding for the parent organization, Open Pantry Community Services. The amendment will be bundled in with dozens of others, and what will actually happen feels more like a crap shoot.     Soup: 6 medium sized potatoes, 7 large carrots, 1/4 big celery root, 2 large parsley roots, 1 small parsnip root, 1 whole garlic, 2 small onions 1 large chicken, 5-6 black pepper seeds, 1 bay leaf, 2,5 l water.Slightly roast onions, on a foil.Put all the ingredients in a large pot and cook.The vegetables will be cooked before the meat (check it with your fork, if it comes in easily then it's done), so after it's cooked remove it from the pot and continue to cook meat some more. When the meat is done too, sift soup in another pot and boil. In the meantime prepare the dumplings.For the dumplings: Beat 1 egg white, then stir in 1 egg yolk, some parsley leaves and gradually stir in 70-100 g semolina.     Indonesian Shrimp Soup (Sop Udang) Ingredients1/4 cup rice sticks, broken up 2 Tablespoons peanut oil 6 shallots (or an onion) thinly sliced 3 cloves garlic, crushed 2-inch piece of fresh ginger, grated 1 teaspoon ground coriander 1 teaspoon tumeric 2 cups fish stock 1 cup coconut milk 1 cup shrimp, cleaned, peeled, and split 1/2 cup bean sprouts salt and pepper to taste Garnish: 4 scallions, chopped DirectionsBreak the rice sticks into a pan and cover with boiling water for 5 minutes--then strain. Reserve. Fry the shallots and garlic for a few minutes in the oil, then add the ginger, coriander, and tumeric. Pour in the stock, bring to a boil, then reduce heat and simmer for 30 minutes.     I can't believe it's 2008! Where are the robots and hover-crafts we were promised back in the nineties? I always get a little down in the New Year. Not sure why, but it seems it's yet another time to reflect that I am not where I want to be, physically, geographically or emotionally! This year I am trying to focus on the good things ahead. My sweet Ella will start school in September and that is going to be a huge adjustment here, so one of big goals is to appreciate all the time I have with her until then. This includes lots of cooking - she's my biggest helper! The girls are really on a big soup kick right now and love to help make and eat it. I love making vegetable soups and find it's a great way to highlight the natural sweetness of root vegetables and fill the kids up with nothing but goodness! Here are two simple recipes that I have been making a lot of lately.The Thai inspired soup is super easy and full of goodies. You can adjust the amount of curry paste to your desired level of heat. I keep it light for the girls and then add a bit extra to my bowl. Also - how have I lived this long without mange tout (snow peas)? Seriously - is there anything bad about them? You can eat them raw, blanch them, even cruelly overcook them and they are still delicious! Something tells me 2008 will see a lot of mange tout in this house!The butternut squash recipe is a really easy frugal recipe.     I had loads of mint leaves at home after I used barely some from the large bunch I bought at the Farmer's market, and as they don't stay fresh for a long time, I knew I had to put them to good use. I searched around for some simple recipes, and finally decided to try it for a delicious soup, combined with peas, just perfect for detoxifying the system and enjoying the warmth of the soup in this winter chill. I have to admit I was a bit hesitant in trying the soup, but what is a chef who doesn't experiment, so I took the leap of faith and jumped right in!     Veg Tom-Kha Gai (Thai Soup)

    We generally think of soups when we want to eat something healthy, or just need a tasty appetizer. And though Tomato soup has always been my favourite, another one that comes really close is the Tom-Kha Gai - a vegetarian Thai soup based in coconut milk that has Asian herbs and spices to impart a delicate tangy and spicy flavor. I'm sure people who've been to Thai restaurants must have tried this one; we always order a large family-size bowl of Tom-Kha Gai which forms a major part of my Thai meal:) This soup is easy to make, but it does use specific herbs so I'd advise you to plan for it and visit asian grocery stores (or even the asian foods section in supermarkets) to get all the ingredients in advance. But believe me, your efforts will surely pay off when you taste this delicious soup!Ingredients1 cup coconut milk2 stalks of lemon grass (fresh or frozen)1 cup vegetable stock (or water)2 tbsp lime juice4-5 Lime leaves (available in grocery stores, asian food section)2-3 serrano chillies (or regular green chillies)1 tsp sugar3-4 slices of Galangal (you can use ginger as an alternative, but Galangal gives the best flavor, so try to buy it if you can )1/4 cup cilantro- chopped1/4 cup soft fresh tofu - cubed7-8 pieces baby corn - cut in half2-3 pieces broccoli (optional)1/4 cup carrot - diced or shredded3-4 button mushrooms (or any variety you like) - diced in small piecesMethodUse only the bottom white part (about 6 inches of the stalk part) of Lemongrass and discard the woody grass part of it. With the flat side of a ladle or a butcher's knife, pound and mash the lemongrass so it releases the flavor. Cut into 2 inch segments.Put the vegetable stock in a pot and bring to a boil. Toss the galangal, lemongrass, sugar, and lime leaves into it. Simmer for 5-7 mins till it gives out an aroma. Add the coconut milk and chillies, and simmer for another 5 minutes. Finally, add all the veggies, baby corn and mushrooms and cook till they are boiled and soft.Turn off the heat, add lime juice and garnish with coriander leaves. Adjust salt and lemon to your taste. It should be flavorful and tasty, with lemongrass and coconut milk imparting the maximum flavor, followed by galangal, chillies, lime juice, sugar and coriander.     Easy & Quick To Make Mushroom Soup

    INGREDIENTS:serves 3 - 4* ab. 3 dl dried Cantharellus tubaeformis, chopped* butter* 3 - 4 tablespoons plain flour* 1 liter vegetable stock cubes mixed with mushroom liquid* ½ - 1 tablespoon tomato puree* salt and pepper to taste* 1 - 1 ½ dl cream* 1 teaspoon lemon juice* chopped parsley (optional)METHOD:1. Soak mushroom in lukewarm water for 60 minutes or more.2. Drain and save the liquid3. Melt butter in a large saucepan over medium-high heat.4, Saute for about 5 minutes, or until soft and released juices have evaporated.5. Mix in the flour until smooth.6. There are many rules and tests for distinguishing between edible and poisonous kinds, and recipes for removing the poisons. None is reliable.Two of my favorite mushrooms are 4 white mushroom (boletus edilus) and 4 false saffron milkcap (lactarius deterrimus).     8 C. chicken stock 1/2 - 1 bunch cilantro1 can straw mushroom16 large shrimps, peeled, deveined1 C. snow peas1/3 C. shredded carrots (just for color)juice of 1 lime1/2 - 1 tsp. crushed red pepper1 chili pepper, cut into rings4 Tbsp. nam plah or fish source (you can find at Oriental food stores)a few stalks of lemongrass (I would use about 6)  MethodBring the broth to a simmer.     This is a variant of kaeng som, which is a popular fish soup that is quite common in Thailand. Keang som is quite sour, and this dish has been given a degree of sweetness in keeping with making it from chicken.If you can't find krachai (lesser ginger) then use ordinary ginger.ingredients about one and a half pounds of chicken, skinned, filleted, and cut into bite sized pieces.Ingredient4 cups of chicken stock3 tablespoons of sesame oil1 tablespoon ginger, freshly ground3 tablespoons of chopped garlic3 tablespoons of chopped shallots3 tablespoons krachai (lesser ginger), thinly sliced3 tablespoons of mixed red and green prik chi fa (jalapenos), thinly sliced or julienned.1 teaspoon kapi (shrimp paste)a quarter of a cup of fish saucea quarter of a cup of tamarind juice1-2 tablespoons of palm sugar (to taste)2 cups of very coarsely chopped green vegetables1 cup of pineapple chunks (preferably fresh, not tinned)methodprepare the chicken and then add three tabelspoons of sesame oil and one tablespoon of freshly ground ginger, mix, and leave to marinade for one hour.     Grapaow pla, กระเพาะปลา, is the air bladder of a fish. It is fried to preserve it, and it is soaked in water to reconstitute it.I ordered this soup from one of the food vendors at Wat Thai Los Angeles where I study Thai language every Saturday and Sunday. The food vendor's sign (see below) indicated it was "Chicken Soup".
