I'm glad they took a step up from Happy Wok, Double Happiness, and East Seafood Palace. And it's a favorite for good reason, the two Swiss cheeses used in this recipe combine to create the perfect flavor and texture for fondue.Cheese Fondue RecipeIngredients- 1/2 pound of finely grated Gruyere cheese- 1/2 pound of finely grated Emmentaler cheese- 1 clove of garlic- 1 cup dry white wine (preferably high quality)- 1 tbsp lemon juice- 3 teaspoons cornstarch- 1 tablespoon kirsch cherry brandy- pepper and nutmegDirections1. Cut the garlic clove in half and use it to rub the inside of a medium saucepan. Add the wine and lemon juice then bring to a simmer over medium heat.2. Mix the finely grated Gruyere and Emmentaler cheese with the cornstarch in a large bowl. Toss it all together. Stir the cheese mixture into the wine one small handful at a time until creamy. Don't stir in a circle, use a zig-zag motion instead. If the fondue is too thick, add more wine. If it's too thin, add more cornstarch. Keep the heat just high enough to melt the cheese or it might start to get a bit stringy. When it reaches the desired texture (creamy) add the kirsch and a bit of pepper and nutmeg.3. So what could be better than hot and spicy curry served with parathas or rice?! That was precisely the thought in my mind when I decided to pick up these baby potatoes over at the vegetable market. They were so cute and so inviting I had to buy them and put them to good use. And there is no other way to enjoy these than to make Dum Aloo - a vegetable curry packed with spices and flavor. "Dum" means strength, and that is precisely what's packed in these tiny potatoes that are flavored with spices to the core and are simmered in a rich curry. | Coconut Laddoos (or Burfi) - A quick and tasty treat! | | 2007-10-04 19:39:46 | | The season of festivals is in all its glory for Indians, with one celebration after another all lined up till November! So its traditional to make sweets at home, but what about people who just have a sudden urge to cater to their sweet tooth, celebration or not??!! Well, I have a perfect solution! I have enjoyed eating Koprapaak (Coconut Burfi) since I was a child, and now I've found a really simple recipe that works great when you need to make this treat in a jiffy. So here's something to satiate your craving for a dessert, or a perfect "prasad" for all those festival times....Ingredients1 can condensed milk2 cups dessicated coconut2 tsp cardamom powder2 tbsp sugar1/4 cup nuts - chopped (pistachios, almonds, cashews)A few strands of saffron - to decorateMethodKeep a little coconut and a few pistachios aside for garnishing. Mix the condensed milk and the remaining coconut in a bowl. Add the sugar and elaichi powder and stir on a low flame for about 4-5 mins. The milk is already thick, so don't over-heat else it may get burnt. Remove from flame, then add the chopped nuts and set aside till the mixture has cooled down enough to handle with your hands.Shape into small laddoos(round balls). Roll each laddoo in a little dessicated coconut. Garnish each with a slit of pistachio and saffron. Alternately, you can spread the mixture after removing from flame into a slightly greased plate or thali which has edges. Then use a knife to cut into squares or diamonds if you want to make Burfis instead of laddoos.Serve as a delicious treat or Store in airtight jars. This was quick, right? and without compromising your urge for a sweet dessert!!Tip: You can dissolve saffron (kesar) in 1 tsp warm water and add it to the mixture while heating to make yellow-colored Saffron Coconut burfi or laddoos.
