    Tomorrow, I'm riding in the NYC Bike Tour with a group of friends. So tonight, I had them over for a preparatory pasta dinner. The idea is to have pasta so I decided on a three course pasta tasting. The first course would be a salad, yet still a pasta, but proportionately heavier on the vegetables because two more pasta courses would follow.Wilted Spinach and Tomato Orzo Salad4 oz dry Whole Wheat Orzo1 teaspoon olive oil10 ounce package of pre-washed spinach3 cloves garlic, thinly sliced2 generous pinches of salt6 Campari Tomatoes, cut into 6-8 wedges each2 teaspoon good Olive Oil1 tablespoons Aged Cherry Flavored Balsamic (from O & Co.)3 tablespoons garlic cream (from the potato post)Salt and Pepper to taste1.     Beef Pot Roast With Tomato and Pearl Onions (pressure cooker)

    Serves 2-32 tablespoons (30 ml) olive oil1.5 lb (700 g) pot roast such as chuck1 medium onion, chopped3 tablespoons (45 ml) vinegar1 can tomato paste1 1/2 cups (375 ml) water 16-24 very small pearl onions, peeled1 clove garlic, unpeeledA potpourri bag of 2 bay leaves, 8 allspice and1 teaspoon (5 ml) cumin seed1/4 teaspoon (1 ml) sugarSalt and pepper, to taste Directions:Heat the oil in the pressure cooker until very hot. Add the pot roast and brown well on all sides. Transfer to the steamer basket. Add the onion to the pressure cooker and sauté until wilted. Stir in the vinegar, tomato paste, water, salt and pepper. Lower the steamer basket into the pressure cooker.Suggested time for 15 psi pressure cookers (What is a 15 psi pressure cooker?): Cook for 15 minutes on high pressure.Add the pearl onions, garlic, potpourri bag, sugar and more vinegar, if necessary. Adjust seasoning. Lock the lid in place and bring to pressure again, then lower heat and cook for the suggested time.

Just thought I'd pop in and share this lovely recipe for roasted tomato soup! I made this last Saturday when my friend Sandie and her hubby came for dinner. We all agreed it was tasty and rich, but personally I would prefer a cream based (go figure) tomato soup! Like the previously reviewed Dr Noodle shiitake spinach, I have to admit that these beef tomato noodles aren’t bad. Again, this is more of a flat Chinese-style instant noodle than Japanese ramen, but they have a nice, chewy texture. You would think that “steam” noodles would be relatively bland compared to the usually-fried instant ramen, but they actual have a decent flavor and soak up the soup nicely.     Italian Tomato-Herb Bread with Parmesan Cheese - And An Award!

    We usually try eating the whole-wheat bread everyday at breakfast, but from the time we've tried the Orowheat Buttermilk bread, it has really left an indelible impression on our taste buds!! The soft and creamy texture combined with the subtle buttermilk flavor has found a place in our eharts. So it was a matter of days before I started scouting the web for a similar recipe. Also, I'm a big fan of italian herbs like rosemary and thyme, and they taste great in a loaf of bread. So I couldn't have been luckier to have found a perfect recipe for Buttermilk-Herb bread (original recipe here). I modified it to add some whole-wheat flour, parmesan cheese and sun-dried tomatoes! Yup, and I'm glad I used these additons for they added a beautiful flavor to the bread. It tasted so good you could eat it just like that!!Ingredients2 envelopes active dry yeast1/2 cup warm water1 1/2 cups warm buttermilk1 egg (optional)2 tablespoons vegetable oil1/2 cup parmesan cheese1/2 cup rosemary leaves/flakes2 tbsp red pepper flakes5 tbsp sun-dried tomatoes (optional)3 cups all-purpose flour2 cups whole-wheat flour1 teaspoon saltMethodIn a large bowl, sprinkle the yeast over the warm water. Let stand for about 10 minutes, until foamy. Stir the buttermilk, parmesan cheese, egg, oil, rosemary, red pepper, tomatoes and salt into the yeast mixture. Stir in 2 cups of the flour using a wooden spoon. Add remaining flour 1/2 cup at a time until the dough can be picked up out of the bowl.Knead on a floured surface for 6 to 8 minutes, until smooth and elastic. Try not to add much more flour. Place in a greased bowl, and turn to coat. Cover with a cloth, and let it rise in a warm place until doubled in size. Now divide the dough into two pieces. Form into tight loaves, and place each one into a greased 8x4 inch loaf pan or a deep dish pan. Let it rise until a finger leaves a mark when lightly pressed into the dough. Remember, this is the part which is inducing softness to the bread, so don't try to rush itPreheat the oven to 350 degrees F (175 degrees C). Bake loaves for about 20 minutes in the preheated oven, until golden brown. When finished, the loaves should sound hollow when tapped on the bottom. The dough will easily leave the sides of the pan and form a hard crust on the top and bottom of the loaf. Also pass a knife through the loaf to ensure it's been cooked through and through.Cut into thin slices and store in air-tight container. This tastes like heaven when you warm the bread for 6-8 seconds in the microwave and put a dollop of butter or cheese on it!! of course, it serves as excellent bread for your sandwiches too!This bread is on its way to Kochtop to make its mark in the World Bread Day Event!Tip: You can add your choice of herbs to make this bread.     Grape and Green Tomato Chutney (Sauce)

    Its amazing how most of the times, it is the sidekick which brings more flavor to the main course, right? The dips, sauces, pickles and salads make all the difference between good food and great food on a table, so it's important to give due respect to these side dishes and accompaniments which add more value to what you cook. One such experiment I tried last week was with green tomatoes and grapes. The markets are flooded with ripe tomatoes, yet there are so many green ones too that I was tempted to try making a dip using these. Grapes are found in abundance in CA, and when I came across this grape chutney recipe over at Food Network, I couldn't resist the temptation to combine tomatoes with grapes and add some green apple to it to form a nice savoury sauce. With the seasoning and green chillies, it turned out to be a wonderfully successful experiment!Ingredients5-6 large green tomatoes - sliced1 semi-ripe green apple3 cups green seedless grapes1 tbsp salt1/3 cup chopped onions1 1/2 cup powdered sugar1/2 cup cider vinegar1/4 cup raisins3-4 green chillies - chopped1 tsp mustard seed1 tsp fresh ginger -chopped finelyMethodPut the tomato slices in a medium saucepan. Peel and dice the apples and add them to the tomatoes. Add the onions, sugar, vinegar, raisins and salt. Mix well. Add a little water if necessary. Cover partially and cook over medium heat for about 30 minutes.Now add the green chillies, mustard seeds, ginger and grapes to the hot mixture. Cook for about 30 minutes longer, or until mixture is thick and all fruits are almost mashed. Remove from flame and alow to cool completely.Now blend the entire mixture in a blender to form a coarse sauce. Do not add water. Adjust salt and sugar to your taste, then pack the chutney into hot sterilized jars. You can seal the jars for a longer use.Enjoy this tangy and savoury sauce as a dip with chips and finger food. It can also be used to add more flavor to rice and other curries. We had it with pakodas and the combination just clicked!     Roasted Tomato and Peanut Chutney

    Tomatoes, the beautiful and highly nutritious red delights add flavor to so many of our foods. I posted about the Green Tomato chutney recently, and so the circle wouldn't have been complete without using the ripe red tomatoes too to make one! So this time, I combined tomatoes with peanuts, onions and spices to make this Roasted Tomato Chutney. We savored this with Rava Dhokla, but you can use this as a dip or sauce with any finger food, even french fries. It might look similar to Marinara sauce, but believe me, the similarity ends at the looks. The spices bring an indian touch, yet peanuts add a crunch that reminds you of the asian cuisine. So hope you enjoy this spicy fusion chutney just as much as we did!!Ingredients3-4 fresh firm tomatoes - chopped finely1/2 cup peanuts - roasted and ground2 tbsp (split pea) chana dal1/2 cup onion - chopped1 tbsp ginger-garlic paste2 tbsp oil1 tbsp red chilli powder2 tsp cumin2 tsp mustard seeds1 tsp turmeric powdersalt - to taste1 tbsp sugarMethodHeat oil in a pan, then add cumin and mustard seeds. Then add the chana dal, and when it starts spluttering, add the chopped onions. Saute for a minute, then add the roasted and ground peanuts. Add the ginger-garlic paste, red chilli powder, turmeric powder, salt and sugar and mix well. Finally add the chopped tomatoes and 1/2 cup water. Allow to cook till the tomatoes are almost soft and mashed. Remove from heat and allow to cool for some time. Now add this mixture to a blender, add 2 tbsp oil and blend it to form a smooth paste. The chutney will still have some chunky pieces because of the chana dal and peanuts, but that adds crunch.Store in an air-tight jar and refrigerate.     Serves 43 cloves garlic, minced (Jar garlic is fine.)1/4 tsp crushed red pepper flakes (or to taste, more or less)3 Tbl olive oil (extra virgin if you have it)1 28-oz can chopped tomatoes (You can use the ones with Italian spices added if you'd like. And if your garden tomatoes are looking good, you can chop those instead.)1/4 cup vodka (Any brand will work. Do not use flavored vodka, e.g. citrus.)1/4 cup heavy creamSalt and pepper to taste1 pint cherry tomatoes1/2 cup Parmesan cheese, grated (Bagged, already grated in advance will do fine.)2 Tbl fresh basil cut into teeny strips16 oz Italian, precooked meatballs (Frozen is fine. No need to thaw.)1 pound pasta (Penne and rigatoni work best.)Put your pasta pot (large) on to boil.     Preparation: 30 minutesCooking time: 90 minutes4 peopleLevel: easyIngredients:400g pappardelle pastapepper and saltFor the sauce:1 kg tomatoes cut in blocks2 red paprikas (sweet peppers) cut in stripes1 onion, chopped1 bouquet of fresh basil1 teaspoon of acacia honey (or any liquid honey) - you can skip this if you don't have honey2 tablespoons of olive oilground paprika powder (example)For the meatballs:250g minced/ground meat - veal or lamb for example or chicken or turkey for lighter version150g ricotta cheese1 egg100g fresh spinach leaves50g ground parsemanTake a large cooking pan and pour in the chopped tomatoes, onion and paprikas. Add the basil, the honey, half a teaspoon of groun paprika powder, pepper and salt. Pour 1 dl water on it and add the olive oil. Bring to boiling and let then simmer (on low heat) for about 1 hour. Stir from time to time.Mix the minced meat zith the ricotta, the egg, the chopped spinach and the parmesan. Season to taste. Roll balls of medium size (see picture).Blend the paprika/tomato sauce. Bring back to boiling point and add the meatballs. Let cook for another 10-15 linutes on medium to low heat (it should not sputter).Cook the pappardelle pasta al dente in salt water with a bit of olive oil. Drain.Either mix pasta with all of the sauce or drape pasta on plates and cover with sauce/meatballs.MY COMMENTS:This was a very yummie pasta dish - mainly because of the freshly made sauce and the unusual meatballs. I found I had too much pasta and was glad I had first draped the pasta on the plate and poured the sauce over it instead of mixing the two entirely.You can of course make smaller meatballs which prevents you from having to cut them into edible pieces.

    Tomato lasagna with pesto and Serrano ham

    Preparation: 30 minutesCooking time: 45 minutesRecipe for 4 people if part of meal - but suffcient for 2 as only dishIngredients:100g Serrano or Ganda ham (slices)400g mozzarella60g ground parseman6 fleshy tomatoes3 spring onions3 garlic cloves30g pine nuts1 bouquet of fresh parsley1 bouquet of fresh basil1 dl of tomato juice100g tomato puree/paste9-10 lasagna leaves8 tablespoons of olive oilpepper and saltChop the garlic. Peel the tomatoes (put them shortly into boiling water and youc an peel them easily), take out the seeds and cut in cubes. This is a bit time-consuming and messy, but nothing beats fresh tomatoes.Take a cooking pot and start frying the garlic golden in 4 tablespoons of olive oil. Add the tomatoes, the tomato puree and the tomato juice. Cook for 15 minutes on medium heat and let cool off.To make the pesto: put the parmesan, the parsley, the basil, the pine nuts and the rest of the olive oil (4 table spoons) in the blender and season with salt and pepper. If the mix is too dry, add a bit of olive oil.Cut the spring onions in rings and the mozzarella in cubes or slices. Mix in the pan with the cooled down tomato sauce. Check seasoning and add pepper/salt.Take one rectangular baking pan - size approx. 20x25cm (or 4 individual small pans) and start layering* the tomato sauce and the lasagna leaves (starting with a layer of tomatoes). End with a layer of lasagna leaves. Spread the pesto on top (over entire surface) and ad the ham slices.Put the dish 30 minutes in a pre-heated oven on 180°C (350°Fahrenheit/gas mark 4).MY COMMENTS:Quite an easy and yummie lasagna recipe which you can make vegetarian buy taking out the ham (and adding any other vegetable instead).*You can also make this lasagna more meaty by already adding a few slices of ham inbetween the layers. NB: Adding more Italian ham, makes the whole dish more salty, so go easy on the seasoning of the tomato sauce.You can of course buy the pesto instead of making it yourself.

    Ingredients (Translation)1 cup basmati rice1 tomato (grinded to paste)10 cashews1/2 cup peas1 tsp Mustard seeds1/2 tsp Bengalgram dal1/2 tsp Blackgram dalSalt to taste1 tbsp Vangibath powder2 tsp of oil2 cups of waterClean and soak the rice in 2 cups of water for 30 minutes.     Ingredients : 200g/7oz Shortcrust Pastry 1 Onion 1 tbsp Olive Oil 25g/1oz Butter 2-3 small Courgettes ( zucchini) Salt & Pepper 3 Eggs 120ml/4 fl.oz. Merge water. Skin was very easy) and cut it quite small squares. Clean the garlic and finely cut it. 50 ml. heat olive oil in the pot. Walking out with the garlic, roast him a bit.     Baked Sweet Potato & Roasted Cherry Tomato Soup

    One of the easiest recipes I’ve done lately was from Tamasin Day-Lewis’s Good Tempered Food. Roast some onion, sweet potato and cherry tomatoes with olive oil, sprigs of rosemary and thyme and when all weepy and carmelly good, you peel the sweet potatoes and bung the lot into a food processor with some hot chicken stock (that has been mixed with some brown sugar). Throw it back on the stove and boil, then taste and season. Really delicious. Very simple, but bold, flavours all coming together. I served it with a slice of roasted garlic-scraped sour dough toast.Now a word about the cookbook. I haven’t tried many things out of Day-Lewis’s book (Good Tempered Food) but I agree with Renz over at Little Bouffe that it’s a good book but there are problems with her recipes. There has to be a certain amount of Caveat emptor in creating a Day-Lewis dish as it rarely turns out as good as claimed or expected. But this gives you room to move about and swing your elbows a bit. Luckily for me, I’m useless at reading recipes anyway and tend to work on the Nigel Slater theory that a recipe is a guideline (unless baking or candy making, of course) and that you should personalize it a bit. But beware of her cooking times, best to keep your eyes open. If my incorrigible little Magic Chef ® gas range (with its upside-down clock) has taught me anything it’s that sometimes it’s best not to force a recipe and sometimes you gotta step up and hammer it until it fits. But the decision is yours.
