| | Nutella & Plazma Truffles | | 2008-02-08 04:14:22 | | 500 g Nutella150 g ground walnuts200 g ground Plazma biscuits+ 100 g for rolling ina few Tbsp rumStir Nutella until it's very soft. Add walnuts, stir again. Start adding Plazma slowly, stirring continuously. At the end add rum to taste. Start with 1 Tbsp, taste and continue adding it until you're satisfied with the amount of rum inside. Shape the truffles and roll them in the remaining biscuits. | Moroccan truffles - a rare delight | | 2007-05-24 09:49:00 | | Shopping in the central market yesterday, we discovered the small plastic container on the bottom left of the picture above. Truffles! The discovery was even more exciting because rather than pay the very expensive prices of 80 to 100 Euro per kilo as you might in Europe, the truffles were only 80 dirhams per kilo.These particular truffles came from Bouarfa, which is between Oujda and Figuig near the Algerian border, but they are often available by the roadside in various parts of Morocco. Truffles are best used a few days after they are harvested, but for those who want the flavour all year round there are ways of preserving them or making truffle oil. I certainly LOVE trying new things and Johanna over at The Passionate Cook certainly came up trumps with this month's edition of Jennifer's Sugar High Friday. I pretty much decided to wing it this time and only do a bit of research and make up the rest. A very informative Wiki entry led me to this Cooking for Engineers entry. It came up with the ratio of 2 parts of chocolate to 1 part cream for a truffle-friendly ganache mixture.To make these slightly different from from your standard chocolately truffles, I put a honey-roasted, chocolate-coated almond within each ganache. They were especially decadent with the use of the 75% Valrhona chocolate, recently picked up a my new favourite farm shop, Burwash Manor Farm Larder.
