    After roasting that duck the other night, we were left with excess duck fat, which we of course saved. I decided to make turkey meatballs, fried in the duck fat, for a nice twist. You won't really taste definable duck fat, but I do think it adds to the flavor of this dish. On a separate note, I usually brunois carrots for my red sauces, because carrots add a natural sweetness. I was feeling lazy today so I decided to try shredding the carrots on a box grater and the result was great. That's partially how hand-held pies came to be (you did see Alton's "A Pie in Every Pocket" episode, right?). The other day, Jessica used some leftover ground meat from the Goan Chilly Fries to make some Indian-style Beef Patties. This resulted in extra patty dough, that has been sitting in our fridge for a week. Sitting five inches to the right is a box of ground turkey meat leftover from the delicious rosemary meatloaf from Monday night. Being that tomorrow is Sal & Rochelle's son Nick's baptism, and that Rochelle is Jamaican, I guess I was inspired by all these variables.So I started sauteing one medium onion, finely-diced with kosher salt and ground black pepper in one tablespoon of olive oil and one tablespoon of unsalted butter.     With India's emergence in recent years as a booming automotive market, the country needs a booming supply of oil to power all the new vehicles. Unfortunately for Indians, they don't have nearly enough domestically-produced oil, so they are forced to import their supplies from other countries. In an effort to reduce dependency on the Middle Eastern oil-producing nations, Indians are looking to get oil from countries in Central Asia and Africa. Purchasing the oil is all well and good, but how then does India get the oil from the ground in some other country to the tanks of cars in its own?     "Cycling" Tour of Turkey?? If not for the UCI badge, one would take this to be an event designed for the recreational cyclist. At any rate, it's actually a prestigious stage race and word on the street is that it's going to be televised on TRT in 2008. Yours truly is working hard in the coming weeks to establish communications with the Turkish Federation and with the race organizers so that I can compete. I either need to put my own team together or be invited as a guest on another team.

Today we got a letter from the head of the number one turkish atheist site which has been stripped from the eyes of Turks twice. Once under the original domain and then again under another domain. Unfortunately, the owner is unable to fight this in court because to do so he would have to identify himself which if you're familiar will end up resulting in his head being chopped off by the peaceful and loving muslims who work for Allah.     We've been trying to eat less pork because of Lon's cholesterol. He doesn't like tofu that much and I don't want to eat chicken every day. As you may have read before, I'm not a fan of breast meat so I bought turkey legs. I decided to de-bone them (leave skin on) because I wanted to use the grill. This marinade is enough for 2-3 turkey legs. Grill time will vary because turkey legs vary greatly in size.Marinade:1 cup ketchup1/2 cup soy sauce2 tablespoons mirin1 tablespoon chili garlic sauce1 tablespoon granulated garlic1 tablespoon granulated onion powder1/2 teaspoon ginger powderJust mix ingredients together and marinate meat for at least 4 hours.The turkey tasted a bit like BBQ Pork and we both loved it!! I'm sure the marinade would be great for chicken or pork as well.

    It's been an insane two weeks here at PsPrint... so much so that I haven't blogged at all!I know you're shocked. As was I when I realized how long it's been.We went and exhibited at the National Association of Realtors® Conference & Expo in Las Vegas the week of November 13th through 16th. The show went well, we got a great turnout of people stopping by our booth, and the few sessions I was able to attend were pretty informative. A great asset of the show is that audio recordings of the sessions are available online, so I've ordered recordings of the sessions I didn't make it to.For me, still a relative newb in the trade show scene, it was exciting to be at such a huge venue but I was a bit disappointed that I didn't give myself a bit more time to walk around the show floor. I did buy new shoes that are super comfy before the show and didn't repeat my former mistakes of my feet killing me. Not to say that my feet didn't hurt by the end of the day, but nowhere near li

Green Bay PackersFor once it seems as if the 6-4 Lions are going to play a relevant game on Thanksgiving. A Packer victory would likely clinch a division title as the Cheesheads would then increase their division lead to four games ahead of the Lions.     photo by scruff35 Thanksgiving is easily my least favorite holiday for obvious reasons. It’s the one day of the year where the entire point is to eat as much food as you can in front of everyone you know. It’s a nightmare in real life. Last year I tried to do 2 different dinners, only to wind up having a panic attack at my sister’s house and having to bail out before the food was even done being cooked. I remember feeling so embarrassed and upset that day because I couldn’t understand what was wrong with me. This was when I was just learning about anxiety and panic attacks and hadn’t quite nailed it all down yet. Then to make matters worse, the next morning all the girls on my in-law side of the family had to do the early morning shopping. When they were starting to slow down and talk about going out to breakfast, suddenly I started to feel nauseous. Still not sure why I had the reaction I did but knowing it had to do with eating around others, I had to make them take me home before they went out to eat because I was going to throw up. So I managed to thoroughly embarrass myself on both sides of my family last year. This year, I have already been invited to the morning shopping with a “Don’t worry, we won’t go out for breakfast so you won’t get sick” reassurance that only reminded me of the embarrassing memory and let me know that others hadn’t forgotten it either. I decided that although I have a much better understanding now how to properly plan and prepare for the holiday, I am not going to throw myself into situations that are too much. Thanksgiving dinner is going to be hard enough without throwing in more dangerous triggers. I don’t feel bad about it because I am not avoiding it because I am afraid, but rather I want to have a good memorable Thanksgiving that I can use to draw strength from next year. So I will stick to the basics and work my way up. Positive Affirmation Alert: There’s no need to push myself.

If you're ordering a fresh turkey, do it now; if you're buying a frozen turkey, you still have time, but don't wait until the last minute. Remember: It's best to allow four to five days for it to thaw. (For advice on buying, defrosting, and cooking your turkey, see How Big a Bird, and Other Turkey Tips.) Floral centerpieces finish off a well-set table. Florists are busy this time of year, so order flowers now. Four Days Before Thanksgiving Start defrosting the frozen turkey in the back of the refrigerator, where it is coldest. Compose a shopping list, and purchase all non-perishables. Wait until the day before Thanksgiving to buy salad greens, fresh bread, or seafood. If you're baking pies for dessert, make the dough for the crust, roll it out, lay it into pie plates, and freeze. Two Days Before Thanksgiving Prepare the serving pieces, plates, flatware, glasses, etc. If you're using cloth napkins or tablecloths, iron them now. Make the cranberry sauce (try our Cranberry Orange Relish); a couple of days in the refrigerator will give the flavors time to develop. Homemade stuffing often calls for stale bread; cut and cube the bread now, and set the cubes out in a single layer on a baking sheet. One Day Before Thanksgiving Pick up the fresh turkey from the market. Prepare the stuffing (try our Classic Stuffing), but leave out any raw eggs until you stuff the bird. Make the Giblet Stock for the gravy. Defrost pie dough; assemble and bake pies. Peel the potatoes, then refrigerate them in a pot of cold water. Make the vegetables and other side dishes that require baking, such as casseroles, and reheat them tomorrow; or assemble them today, and cook them right before dinner. Set the table tonight or first thing in the morning. Thanksgiving Day: Dinner At 5 P.M.     How to Carve a Turkey

    To someone who is just learning to cook, this topic may seem like one of the hardest meals you will ever have to prepare. Needless to say, if you’re having a turkey there’s usually company involved which means a number of hungry people are relying on you to prepare a great meal. This can be very intimidating. Luckily we have all the information you need, in order to ensure a great meal for you, your friends and your family.In order to successfully carve a turkey, you will need to have the following pieces of equipment:• One warm serving platter• A pair of kitchen scissors• An electric knife or a large slicing knife (you may want to choose a manual knife since they provide more control than electric ones)• A small carving knife or fork for arranging and serving the meatNow that you have the equipment you need to carve the turkey, follow these steps in order to become a turkey carving expert:1. Leave the turkey to sit 20-30 minutes after roasting and before carving. This will make the meat moister and easier to cut.2. After the turkey has sat for the time indicated above, transfer the turkey onto a cutting board; this is where you will begin carving the turkey.3. Remove the Leg: To do this, hold the drumstick firmly with your fingers and gently pull the meat away from the body of the turkey. While doing this, cut through the skin between the leg and the body. Next, cut through the joint joining the leg to the backbone. Then separate the drumstick and thigh by cutting downwards through the joint, until the knife hits the cutting board.4. Slicing the Drumstick (Leg) Meat: Once you have detached the leg from the rest of the body, you will want to slice the meat. Hold the drumstick in an upright position and turn the drumstick in a circular motion while cutting downwards. This will produce tasty slices of meat which are approximately equal size.5. Slicing the Thigh Meat: When slicing thigh meat, you want to hold it close to the plate and secure it so it does not move. For best results when cutting thigh meat, make sure your knife is parallel to the bone and cut downwards towards the plate in slow, steady motions.6. Slicing the Breast Meat: Make a deep cut into the breast of the turkey towards the body frame, as close to the wing as you can. Starting at the front of the turkey (about halfway up the breast) start cutting downwards, parallel to the cut you made to the wing. Only cut enough meat as you think necessary for the amount of people. Uncut meat will stay fresher longer.7. Serve the Turkey: place all the slices of meat in an attractive manner on a large platter and serve to your guests.* Note: Remove stuffing from the turkey either by taking it out of the hole made where the leg was removed or by making a new hole in the neck and taking it out from there.
