Spaghetti alla "Matriciana"The "Spaghetti alla Matriciana-- as they say in Rome-- is loved in the Roman Cuisine. It is a universal favorite and comes in first of the Roman gastronomic specialities. For one kilogram of spaghetti, you'd dice up one onion and let sautè. You would then add in diced up pork or bacon and let both brown lightly. To this half a kilogram (around one pound) of skinless tomatoes cut up, and turning up the flame for a few minutes. Salt and pepper are then added. Boil your spaghetti al dente When the pasta is done mix with your salsa and sprinkle with grated pecorino.
